HERBED ASPARAGUS
This recipe is a wonderful way to prepare asparagus ahead of time. The asparagus is marinated for several hours in Italian Dressing making it a great cold side for a dinner party. Recipe is compliments of "Mr. Food Every Day's a Holiday Diabetic Cookbook".

Steps:
- Wash the asparagus under running water and snap off tough ends; place 1 inch of water in a large skillet and bring to a boil over high heat.
- When water boils, add the asparagus, cover, and steam for 4 to 6 minutes,.
- or until fork-tender; immediately remove the asparagus from the boiling water and plunge it into a ice water bath to stop the cooking process.
- In a 9" x 13" baking dish, combine the Italian dressing, red pepper, parsley, and chives; mix well.
- Remove the asparagus from the water, drain well, and add to the.

- Cover and chill for at least 2 hours before serving; before serving, sprinkle with the chopped egg, if desired.

- Melt butter in nonstick skillet over medium-high heat just until sizzling. Add garlic; sauté 1 minute. Add asparagus; cook 5-7 minutes, stirring often, until crisply tender. Remove from heat; toss with lemon juice. Serve immediately.

- Lemon Herbed Dipping Sauce: Stir together all ingredients and transfer to a small bowl. Chill, covered, until ready to serve.
- Beer Battered Asparagus: Heat oil in a heavy saucepan until it reaches 375 degrees F.
- Whisk together flour, salt, pepper lemon and zest in a bowl until combined. Add beer and whisk ingredients until smooth.Dip asparagus in batter to coat. Remove excess batter before frying. Gently transfer battered asparagus to oil and fry until golden. Stir gently to prevent asparagus from sticking together.
- Transfer to a baking sheet that has been lined with paper towels and keep warm in a preheated 200 degree F oven.

ASPARAGUS SOUP WITH HERBED GOAT CHEESE

- Goat cheese: Line a small baking sheet with parchment paper. Set aside.
- Using a fork, in a small bowl, combine the goat cheese and basil until smooth. Season with salt and pepper, to taste. Using a 1/2-ounce cookie scoop or a round tablespoon measure sprayed with vegetable oil cooking spray, scoop the goat cheese into balls and arrange on the prepared baking sheet. Refrigerate for 30 minutes.
- Soup: In a Dutch oven or large saucepan, heat the butter over medium heat. Add the leeks and cook, stirring constantly until softened, about 3 to 4 minutes. Add the broth, asparagus and basil. Season with salt and pepper, to taste. Increase the heat to high and bring the mixture to a boil. Reduce to a simmer and cook until the asparagus is tender, about 15 minutes. Using an immersion blender, blend the soup until smooth. Season with salt and pepper, to taste. Keep the soup warm over low heat.
- To serve: Ladle the soup into shallow bowls and garnish with the herbed goat cheese.
- Cook's Note: The soup can also be pureed by ladling, in batches, into a food processor or blender and blended until smooth.
ASPARAGUS, HERB AND GOAT CHEESE PUFF PASTRY

- Preheat the oven to 400 degrees F and line a rimmed baking sheet with parchment paper.
- Add the goat cheese, ricotta and 2 eggs to the bowl of a food processor fitted with the blade attachment. Pulse until the mixture is evenly combined. Next, add the Parmesan, parsley, chives, dill, lemon zest, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper. Pulse once again to combine all the ingredients. The mixture may look slightly liquidy, but once it bakes the egg will help stabilize the cheese mixture. Set aside.
- On a separate rimmed baking sheet, toss the asparagus with the olive oil, 1/4 teaspoon salt and 1/4 teaspoon pepper. Set aside.
- Unroll the puff pastry on a lightly floured work space and dust a rolling pin lightly with flour. Roll the puff pastry out to a 13-by-11-inch rectangle. Add the goat cheese-herb mixture to the puff pastry and spread it out into an even layer, leaving a 1-inch border all the way around the puff pastry. Nestle in the asparagus into the cheese mixture, alternating directions.
- To make the egg wash, whisk the remaining egg with a splash of water. Use a pastry brush to brush the exposed crust all the way around the edges.
- Transfer the tart to the oven and bake until the crust is golden and the cheese mixture is set, 25 to 30 minutes

- Snap off tough ends of asparagus; remove scales with a knife or vegetable peeler, if desired.
- Peel onion, leaving root intact; cut onion into 6 wedges.
- Drop asparagus and onion wedges into a large saucepan of boiling water; cook 3 minutes.
- Drain and plunge into ice water; drain well.
- Pat dry with a paper towel; set aside.
- Combine ricotta cheese, fresh thyme, chives, and chervil in a bowl; stir well, and set aside.
- Cut bread crosswise into 6 (1-inch-thick) slices; reserve remaining bread for another use.
- Spread butter evenly over 1 side of each bread slice.
- Coat a large nonstick skillet with cooking spray, and place over medium heat until hot.
- Arrange half of bread slices, buttered sides down, in skillet, and cook 2 minutes or until browned.
- Remove bread slices from skillet, and set aside.
- Repeat procedure with remaining bread slices.
- Cut each toasted bread slice into 6 triangles.
- Spread cheese mixture evenly over toasted side of triangles, and set aside.
- Recoat skillet with cooking spray; add olive oil, and place over medium heat until hot.
- Add asparagus, onion, salt, and pepper; sauté for 4 minutes or until lightly browned.
- Serve with toast triangles.
- Garnish with parsley sprigs.

- Meanwhile, make sauce. Combine basil, mint, lemon juice, chives, parsley, salt and pepper in blender or food processor. Add two tablespoons olive oil. Blend until smooth, adding more oil if necessary. You will probably need 3 to 4 tablespoons.
