Herb blend gives plain old bacon a flavor boost without any added salt.

2 tablespoons salt-free herb blend
1/2 lb bacon (8 slices)

Steps:

  • Heat oven to 350°F. Line cookie sheet with foil. Place wire rack on foil.
  • In large resealable food-storage plastic bag, place salt-free herb blend.
  • Separate bacon slices, and place in bag; shake to coat. Arrange bacon in single layer on rack. Bake 20 minutes.
  • Turn bacon over; sprinkle with herb blend. Bake 10 to 15 minutes longer or until golden brown. Remove from rack. Cool completely, about 15 minutes.

Steps:

  • Arrange 6 slices thick-cut bacon on a rack set on a foil-lined rimmed baking sheet. Bake at 375 degrees F until they just start to crisp, 12 to 14 minutes.
  • Microwave 2 tablespoons sugar with 1 teaspoon water until dissolved, about 45 seconds. Flip the bacon and brush the tops with the sugar mixture.
  • Sprinkle with seasonings (such as chili powder, pie spice or Cajun seasoning). Continue baking until browned, 12 to 16 more minutes. Drain on paper towels.

This roast is seasoned with a bacon and herb topping with roasted vegetables for a complete meal. The topping would also work wonderfully with a roast chicken. This recipe is adapted from "Better Homes and Gardens."

4 slices bacon
1 tablespoon fresh thyme
1 1/2 teaspoons fresh rosemary
4 -5 lbs prime rib roast (chin bone removed)
1 teaspoon cracked black pepper
1/2 teaspoon kosher salt
1 lb baby carrots, with tops (trimmed)
1 lb small red potato
3 -4 cups Baby Spinach
1 (15 ounce) can butter beans, drained and rinsed

Steps:

  • Cook the bacon until crisp; drain on paper toweling.
  • Chop half the bacon, thyme, and rosemary and combine; break the second half of the bacon into pieces and set aside.
  • Preheat oven to 350 degrees F.
  • Season roast with crack black pepper, salt, and half the bacon herb topping; refrigerate remaining topping and the reserved bacon pieces until needed.
  • Place roast, bone side down, in a shallow baking dish; roast 45 minutes.
  • Arrange carrots and potatoes around roast and gently toss to coat with juices and seasonings; roast an additional 1 to 1 1/4 hours until meat is medium rare (internal temp 135 degrees F).
  • Season meat with remainder of the herb topping, tent with foil, and let stand 15 minutes.
  • Push meat and vegetables to one side of pan; stir spinach and beans into the drippings on the other side of pan and sprinkle with bacon pieces.

  • To make the cure, combine 1 quart of water, Kosher salt, maple syrup, brown sugar, pink salt, bay leaves, garlic, and peppercorns in a medium saucepan. Bring to a boil over high heat, stirring to dissolve salts and sugar. Boil for 1 minute, then remove from heat. Transfer to a large container and stir in remaining 3 quarts of water. Place in refrigerator until completely chilled. Fully submerge pork loin in cure and let sit in refrigerator for 3 to 5 days.
  • Remove pork from cure and place in large container. Add enough fresh water to fully submerge loin. Let sit for 30 minutes, then remove pork from water and pat dry with paper towels.
  • Fire up the smoker or grill to 225 degrees, adding chunks of smoking wood chunks when at temperature. When wood is ignited and producing smoke, place pork in and cook until an instant read thermometer registers 140 degrees when inserted into thickest part of the pork loin, about 2 to 3 hours.

  • Place peppercorn, juniper berries,, coriander, and bay leaves in a mortar and pestle and crush until all spices are coarsely ground. Transfer spice mixture to a small bowl, add in kosher salt, sugar, paprika, and pink curing salt; mix to combine. Coat pork belly all over with the cure and place in a large resealable plastic bag. Place in the coldest part of the refrigerator and cure for 5 to 7 days, flipping bag about every 12 hours.
  • Fire up smoker or grill to between 200-225°F, adding 1-2 fist-size chunks of smoking wood on top of the coals when at temperature. When wood is ignited and producing smoke, place pork belly in smoker, fat side up, and smoke until an instant read thermometer registers 150°F when inserted into thickest part of the meat. Remove pork belly from smoker and let cool. Wrap in plastic wrap and place in refrigerator until completely chilled.
  • Cut bacon into slices at desired width and cook using your favorite method. Store leftover bacon in Ziploc or vacuum sealed bags in the refrigerator for up to a week, or in the freezer for up to 4 months.
