MEATLOAF FOIL PACKETS
I was tasked with making foil packet meals for a camping trip with friends. I decided to try it with meatloaf, because I could make it in advance and keep it in plastic baggies in the cooler until I was ready to make the packets at the campsite. You could also throw these packets on the grill! See the important tips below before you shop.

- Tip 1: Meatloaf is dry and crumbly if you don't have enough of the right kind of fat in it, and by itself, beef doesn't have the right kind of fat. That's the reason why beef, pork AND veal are used. Each of these meats have properties which will help with the flavor and texture of the meatloaf. You can buy the meats separately, but many stores carry "meatloaf mix" which combines all three meats for your convenience.
- Tip 2: Because you'll be cooking the meat and veggies in one packet, it's important to buy beef with the lowest fat possible, since you'll get plenty of fat from the pork. I use 4% fat, and I wouldn't recommend anything over 7%. After it cooks, you'll be left with a thin, flavorful gravy in the bottom of the packet that will not taste too greasy.
- Tip 3: Some stores do not carry Lipton Onion and Mushroom soup mix, so if you can only find Onion soup mix, that will be fine, but you'll need to add about a cup of finely chopped mushrooms to your meatloaf mix. Even if you don't like mushrooms, they are necessary to hold in moisture and flavor. You won't taste them in the soup mix or finely chopped.
- Tip 4: It's very important not to overmix your meatloaf, as it can become tough. It's best to combine all the ingredients (except the meat and breadcrumbs) in a bowl first, then add the meat and squish it all together until you have a very wet mix, then add as much breadcrumbs as needed to create a sticky loaf that will keep it's shape.
- Tip 5: I actually use throw-away pie tins covered in heavy duty foil for when we go camping, because I like the stability of the pie tin. But if you're using only foil, be sure to use two layers of heavy duty foil.
- Let's get started! In your largest mixing bowl combine all the wet ingredients including eggs, stir thoroughly.
- Add to the mixture, all the remaining ingredients except the meats and the breadcrumbs. Stir thoroughly.
- Add all the meats and using your hands (I wear plastic gloves) mash all the ingredients together, making sure to incorporate all the meats together and spices throughout the mixture. At this point it should be very wet.
- Finally, add the breadcrumbs to stiffen the mixture. Start with one cup of breadcrumbs and add more as needed to create a sticky loaf that will hold its shape. DO NOT OVERMIX or it will become tough.
- At this point, you can cook the meatloaf in a pan as you would any typical meatloaf recipe. If making foil packets, you have two options; either make them ahead for later, or make them now to go straight on the fire. If making ahead, you should separate out the portion size you prefer (I made big, hearty 1/2 lb portions). Place the portions in separate plastic baggies until ready to use. It's important NOT to include your side veggies in the baggie. When you're ready to cook them, shape the portions into mini-meatloaves and place them on top of your choice of veggies and herbs (I like baby red potatoes, onions and carrots with olive oil, seasoning salt, pepper and fresh herbs like rosemary, thyme or sage.) Then wrap it all up in heavy duty foil and cook it on the campfire for 45-60 minutes, depending on portion size. When the veggies are done, the meat will be done, so check the carrots and potatoes for doneness. When it's done, you can add shredded cheese on the top and close the packet for a few minutes to let it melt. We also like ketchup drizzled on the top.

GRILLED ONION BLOSSOMS (FOIL WRAPPED)
Sweet onions such as Vidalia and Walla Walla are mellow enough to eat raw, but they are excellent "baked" on the grill and served with grilled steaks or burgers. Try them in the oven too.

Steps:
- Peel onions.
- Cut almost through each onion forming 8 wedges.
- Place each onion in a 24x18 inch piece of foil.
- Stir together the melted butter, mustard and hot sauce.
- Drizzle over onions.
- Sprinkle with brown sugar.
- Seal each onion in the foil packet using a double fold leaving head space for steam to build.
- Grill on a covered grill for about 25 minutes or until onions are nearly tender.
- Make a 2 inch opening in the top of each packet.
- Cover and grill for 10 minutes more or until onions are slightly browned.
- Remove onion blossoms from foil packets and sprinkle with pepper.
HERB-BUTTERED GRILLED ONION BLOOM (FOIL PACKET)

- Cut 1/2 inch off the top of an onion; peel the outer layer off and discard. Cut onion into 12 to 16 vertical wedges, leaving root base intact. Set onion on a 12x10-inch foil sheet.

- Spray each sheet of foil with cooking spray. Top each piece with equal portions of potatoes, bacon, onion soup mix, onion, and cheese and mix. Add salt and pepper to taste. Add 1 tablespoon of butter to each serving. Wrap securely.

GRILLED SALMON IN FOIL WITH HERBY GARLIC BUTTER

- Prepare a grill for medium heat. Whisk 1 Tbsp. honey, 1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt, and 1 tsp. finely grated lemon zest in a small bowl to combine. Add 6 garlic cloves, finely chopped, 4 Tbsp. unsalted butter, room temperature, and 2 Tbsp. finely chopped dill and whisk again to combine (some lemon zest may remain separate and that's okay).
- Tear off a large piece of foil according to the length and thickness of salmon (15x15" or larger) and place on a rimmed baking sheet. Place one 1 lb. boneless salmon fillet, preferably skin-on, arranging skin side down if skin is on, in center of foil (the skin will stick slightly to foil and brown while the fish cooks; you want this as it will add to the sauce). Spread garlic butter over fish, then drizzle 3 Tbsp. fresh lemon juice on top. Carefully fold one side of foil up and over fish so lemon juice stays contained, then bring other sides up to meet it and fold together to seal, leaving about a 4" opening on top for steam to escape (this will help sauce reduce a bit).
- Place foil packet on grate and grill fish until opaque throughout and firm, 16-20 minutes. Transfer packet to a cutting board and let fish rest 5 minutes.
- Carefully open foil packet and cut fish in half. Transfer to plates; pour juices from packet over. Drizzle fish with remaining 1 Tbsp. fresh lemon juice, dividing evenly, and top with more finely chopped dill.
JAMBALAY FOIL PACKET DINNER
Foil Packet dinners seem to be fairly popular right now, adding this spicy Cajun dish to the list. Diffidently not up to the standards of a regular full recipe, but when you want something fast and filling, this just might sound just about right. Found this on Wine and Glue site.

- Preheat your oven or grill to 400 degrees.
- Combine all of the ingredients in a large bowl and mix well.
- Place five square pieces of foil on the counter and spray the centers with cooking spray. Divide the mixture among them. Fold up two sides of the foil and fold over. Then curl both ends in to make a seal packet. Place directly on the grill, or on a baking sheet in the oven.
- If grilling, turn over half way through grilling.
- Cook for 20 to 25 minutes or until the rice is soft.

ISLAND CHICKEN PACKET
We often buy Hawaiian chicken grillers at the local grocer store. These are a lot better, and cheaper too. A dash of cinnamon spices it up a bit. You can throw these on the grill also.

- Combine ingredients in a bowl.
- You can marinate the ingredients for an hour, or you can skip that and go right to making the packet.
- Add ingredients to a large sheet of heavy foil.
- Bring the long sides together and fold down, 2-3 times.
- Roll the ends in, at least 2 folds each.
- Place packet seam side up on a baking sheet.
- Bake for 20 minutes in a 425°F oven.
- To serve, unroll one end of the packet and pour out or open the top and spoon out.
- Serve with rice.

- Take two pieces of double layered heavy duty foil (18-inches square) and lay one on top of the other.
