0.25 tsp(s) Minced garlic

3 large Fresh tomatoes heirloom variety, sliced
0.5 small Uncooked red onion(s) very thinly sliced
0.5 cup(s) Fresh basil fresh, torn

Steps:

  • To make dressing, in a small bowl, whisk together oil, vinegar, water, garlic, salt, pepper and oregano.
  • Arrange sliced tomatoes, slightly overlapping, on a platter. Scatter onion and basil over top; drizzle with dressing. Yields half a sliced tomato, a few onion slices and about 2 teaspoons dressing per serving.

For the prettiest presentation, use a variety of colorful tomatoes, whatever looks and smells enticing at the farmers' market or your local grocery store. For a heartier salad, sprinkle with some crumbled feta or ricotta salata, or mix some sliced fresh mozzarella in among the tomato slices and serve it all on a bed of peppery arugula.

4 large ripe yellow tomatoes, thinly sliced
1/4 cup balsamic vinegar
1/4 cup extra virgin olive oil
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
3 tablespoons minced fresh tarragon (or snipped fresh parsley)

Steps:

  • Arrange the tomato slices in an overlapping single layer on an attractive platter.

This simple heirloom tomato gratin makes a lovely dish. Use red tomatoes and yellow tomatoes if you don't have heirloom tomatoes. The recipe comes from the Family Circle Magazine.

4 large tomatoes, cored and cut into 1/4 inch thick slices
3/4 teaspoon salt
1 tablespoon extra virgin olive oil
3 tablespoons plain breadcrumbs
1/2 teaspoon black pepper
2 tablespoons fresh oregano
2 teaspoons thyme
3 garlic cloves, sliced
1/4 cup parmesan cheese

Steps:

  • Heat oven to 450 degrees.
  • Place tomato slices on paper towels; sprinkle with 1/2 teaspoon of the salt and let stand for 15 minutes,pat dry with paper towels.
  • Coat a 2-quart oval baking dish with 1 teaspoon of the olive oil; sprinkle 1 tablespoon of the bread crumbs over the bottom of baking dish.
  • Place 1/2 the tomato slices in prepared baking dish(on top of the bread crumb), overlapping if necessary; season with 1/8 teaspoon of the salt and 1/4 teaspoon of the black pepper.
  • Sprinkle 1 teaspoon of the olive oil, 1 tablespoon of the oregano, and 1 teaspoon of the thyme over the top; TUCK in the garlic and sprinkle the remaining 2 tablespoons bread crumbs over the top.
  • Place the remaining tomato slices in the dish and season with remaining 1/8 teaspoon salt and 1/4 teaspoon pepper; sprinkle remaining olive oil, oregano and thyme over the tomatoes.
  • Bake in 450 degree oven for 30 minutes; scatter Parmesan cheese on top; bake an additional 10 minutes; remove gratin from oven and let stand for 10 minutes before serving, enjoy.

Steak, Wine, and Summer's Best Tomatoes Are a Match Made in Heaven

1/2 cup (1 stick) unsalted butter, softened
1 small shallot
1 garlic clove, peeled
1/2 teaspoon kosher salt, plus more for sprinkling
1/4 teaspoon freshly ground black pepper
1 cup basil leaves, loosely packed
2 1/2 pounds (2-3 steaks, depending on size) rib-eye steak
2 tablespoons olive oil, plus more for drizzling
3 large tomatoes, preferably heirloom
4 slices thick rustic bread

Steps:

  • Pulse butter, shallot, garlic, 1/2 teaspoon salt and pepper in a food processor until smooth. Scrape down the sides of the bowl, add basil, and pulse until well incorporated and smooth.
  • DO AHEAD: Butter mixture can be prepared up to 4 days in advance. Allow to come to room temperature before cooking the steak. NOTE: You will have extra butter...perfect for more steaks, hamburgers, chicken, eggs, and more.
  • Preheat oven to 350°. Preheat a grill pan over medium-high heat. Season steaks with a 5-finger pinch of salt on all sides. Sear until steaks are well browned and beginning to char around edges, about 5 minutes. Flip and repeat on the other side. Transfer to oven and cook until an instant-read thermometer inserted into thickest part of steaks registers 120° for medium-rare. Transfer steaks to a cutting board to rest and tent with foil. Meanwhile, drizzle bread with olive oil on both sides and grill until golden brown on both sides. (The grilled bread also tastes great with basil butter!)
  • Slice tomatoes and arrange on a platter. Sprinkle lightly with salt. Arrange sliced steak on top of tomatoes. Spread steak generously with basil butter and serve with grilled bread.

6 heirloom tomatoes, chopped into different sizes
1/3 cup red wine vinegar
3 tablespoons olive oil
salt & pepper
2 corn cobs, kernels removed
3 zucchini, sliced
1 cup of fresh mint
2 cups ricotta cheese
2/3 cup toasted pecans
radish, sliced (to finish)

Steps:

  • Combine tomatoes, with 1 Tbsp olive oil, red wine vinegar and a pinch of salt and pepper, allow to pickle for 20 minutes.
  • Add 1 Tbsp of olive oil to a frypan on medium heat and caramelize the corn kernels for 2-3 minutes or until golden. Remove corn and in the same pan cook the slices of zucchini for a minute on each side or until golden.
  • In a blender, blitz the ricotta with half the mint for 30 seconds or until light and airy.
  • To serve spread some ricotta down on a board, layer with corn, tomatoes, and zucchini and finish with fresh mint, radish and toasted pecans. Drizzle with olive oil and season with salt and pepper before serving.

1 pint red pear tomatoes or 1 pint cherry tomatoes, halved
1 cucumber, unpeeled, seeded, and sliced 1/2-inch thick
1 red bell pepper, seeded and cut into 1-inch cubes
1 yellow bell pepper, seeded and cut into 1-inch cubes
1/2 red onion, cut in half and thinly sliced
20 basil leaves, coarsely chopped
3 tablespoons capers, drained
1 teaspoon finely minced garlic
1/2 teaspoon Dijon mustard
3 tablespoons champagne vinegar
1/2 cup olive oil
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Heat a stove-top grill. Brush the bread with olive oil, sprinkle with salt, and grill for 10 minutes on each side, until nicely browned. If you don't have a stove-top grill, heat the oil in a large sauté pan, add the bread and salt; cook over low to medium heat, tossing frequently, for 10 minutes, or until nicely browned. Add more oil as needed.
  • For the vinaigrette, whisk together the garlic, mustard, vinegar, olive oil, salt, and pepper.
  • In a large bowl, mix the tomatoes, cucumber, red pepper, yellow pepper, red onion, basil, and capers. Toss with enough vinaigrette to moisten. Season liberally with salt and pepper and arrange the vegetables artfully on a platter. Drizzle the bread with extra vinaigrette or olive oil and add to the platter.
  • Serve immediately, or allow the salad to sit for about half an hour for the flavors to blend.
