I came up with this recipe in an attempt to replicate the rice I ate at a local Mediterranean restaurant. The server told me the secret to the dish was the chicken broth and chickpeas. It is very flavourful and a great accompaniment to skewered Greek chicken and a fresh salad.

1 tablespoon olive oil
2 garlic cloves, minced
1 cup rice (I prefer to use Basmati)
1 1/2 cups good quality chicken broth
1/4 cup chickpeas
1/2 teaspoon dried oregano
1/2 teaspoon all purpose Greek seasoning
1/4 teaspoon cumin

Steps:

Heat the olive oil in a pan and add garlic and rice; cook until rice is a bit brown.
add all other ingredients and bring to the boil.
reduce heat to medium low; cover and let cook for 20 minutes.
Fluff with a fork and serve.

1/2 cup uncooked long grain rice
1 cup plus 2 tablespoons water
1-1/2 teaspoons butter
1 teaspoon chicken bouillon granules
1 teaspoon minced fresh mint or 1/4 teaspoon dried mint
1 teaspoon lemon juice
1/8 teaspoon garlic powder

Steps:

In a small saucepan, combine all of the ingredients. Bring to a boil. Reduce heat; cover and simmer for 12-15 minutes or until rice is tender and liquid is absorbed.

6 crispy rice treats
1 cup semisweet chocolate chips, melted
1 1/4 cups chocolate sprinkles
12 mini semisweet chocolate chips
6 red or orange confetti sprinkles

Steps:

Unwrap ready-made crispy treats and form them into teardrop shapes using your hands. (Moisten your hands with water to prevent the treats from sticking.) Place the treats on a parchment-lined baking sheet.
Hold a crispy rice treat by the pointed end and dip it into the melted chocolate, covering about 2/3 of the treat, leaving a small area for the hedgehog's face. Hold it above the bowl to allow most of the excess chocolate to run back into the bowl. Immediately dip the chocolate-dipped portion into the chocolate sprinkles, covering the melted chocolate with the sprinkles so it resembles the hedgehog's spines. Place the dipped treats onto the parchment-lined baking sheet.
Let stand at room temperature until set, or chill in the refrigerator to speed setting. Press two mini semisweet chips into the marshmallow treat for the eyes. The exposed marshmallow treat portion will be sticky, so they should adhere naturally. Press a single confetti sprinkle onto the pointed end of the treat for a nose.
