NEXT-LEVEL STEAK & ONION SANDWICH

Next-level steak & onion sandwich image

Focusing on awesome, sweet onions seriously takes the joy of a steak sandwich up a notch.

Provided by Jamie Oliver

Categories     Mains     Jamie's Comfort Food     Beef     Father's day     St. George's Day     British     Bread

Time 50m

Yield 4

Number Of Ingredients 10

400 g flank skirt steak or bavette
2 large onions
20 g unsalted butter
olive oil
70 g dark brown sugar
125 ml red wine vinegar
1 ciabatta loaf
extra virgin olive oil
English mustard, optional
1 handful of watercress

Steps:

  • Remove the steak from the fridge and let it come to room temperature, then cover it with greaseproof paper and bash it with the base of a pan to tenderise and make it all roughly the same thickness.
  • Meanwhile, peel the onions, also removing the first layer of flesh (reserve this for a soup or stew), then slice into 2cm-thick rounds.
  • Put the butter, a lug of oil and the sugar into a large non-stick frying pan on a medium heat. Once the butter has melted, place the onions into the pan in a single layer and cook for 5 minutes.
  • Pour in the vinegar, pop the lid on, reduce the heat to low and cook for around 35 minutes, or until beautifully golden and caramelised on the bottom only, adding splashes of water to loosen, if needed.
  • Meanwhile, pop the ciabatta into the oven, turn onto 110°C/225°F/gas ¼ and leave to warm through.
  • Season the steak all over with sea salt and black pepper. Place a large non-stick heavy-bottomed pan on a high heat. Once screaming hot, drizzle the steak with olive oil, then put it into the pan and cook for 3 minutes on each side for medium, or to your liking.
  • Remove to a plate, rest for 1 minute, then slice 1cm thick and toss through its own resting juices with a drizzle of extra virgin olive oil.
  • Cut the warm ciabatta in half and rub the inside of each piece in the steak resting juices. Spread on some mustard, if you like, then layer over the caramelised onions, the steak and pinches of watercress.
  • Pop the other piece of bread on top, press down lightly, carve up into decent chunks and get involved.

STEAK SANDWICHES WITH CRISPY ONIONS

Steak Sandwiches With Crispy Onions image

This is a great way to use up leftover beef. I've never been able to get the onions crispy, they turn out more like caramelized onions. But still very good. From Gourmet magazine.

Time 25m

Yield 4 serving(s)

Number Of Ingredients 12

1 cup onion, thinly sliced
2 tablespoons unsalted butter
1 tablespoon olive oil
3/4 cup mushroom, thinly sliced
1 garlic clove, minced
3/4 cup beef broth
1 1/2 tablespoons heavy cream
3 tablespoons ketchup
1 1/2 tablespoons Worcestershire sauce, to taste
1 teaspoon Dijon mustard
1 lb steak, grilled, cut into 1/8-inch slices
1 loaf Italian bread, halved horizontally and each half buttered lightly, cut into 4 pieces, toasted

Steps:

  • In a skillet cook the onions in the butter and the oil over moderate heat, stirring occasionally, until they are crisp and golden and transfer them with a slotted spoon to paper towels to drain.
  • In the fat remaining in the skillet cook the mushrooms and the garlic over moderately low heat, stirring occasionally, until the mushrooms begin to turn brown and transfer the mixture to a plate.
  • Add the broth to the skillet and deglaze the skillet, scraping up the brown bits.

FILET MIGNON SANDWICHES

Filet Mignon Sandwiches image

Categories     main-dish

Time 30m

Yield 2 sandwiches

Number Of Ingredients 10

Two 6-ounce, 2-inch-thick pieces filet mignon
Salt and freshly ground black pepper
4 tablespoons plus 2 teaspoons unsalted butter
2 tablespoons olive oil
1 clove garlic, smashed
2 leeks, cleaned thoroughly and thinly sliced
2 teaspoons chopped fresh tarragon
1/2 cup red wine
1 teaspoon truffle oil
2 brioche buns, sliced in half

Steps:

  • Begin by tying the filet mignon pieces: Lay the meat on a cutting board and wrap a piece of twine around the outside of each piece. Pull the twine tightly so that the meat is secure and tie a knot. Sprinkle both sides of the meat generously with salt and pepper.
  • In a medium saute pan over high heat, add 2 tablespoons of the butter, the olive oil and garlic. When the butter begins to bubble, add the filet mignon pieces. Tip the pan slightly and baste the tops with the butter and olive oil. Cook until deeply browned, about 3 minutes, and then flip and continue cooking and basting on the other side. Next, turn the pieces on their sides and cook the edges until brown.
  • Add the leeks and 2 tablespoons of the butter and saute until the leeks are soft, about 4 minutes; add the tarragon. Turn the heat to high and add the red wine. Let the sauce reduce by half, lower the heat to simmer and add the truffle oil.
  • Place another saute pan on high heat. Spread the remaining 2 teaspoons butter onto the brioche halves and place in the pan until slightly browned, about 2 minutes.
  • To serve, slice the filet mignon on the bias and place some slices onto one half of each brioche bun. Top with some sauce, leeks and the other half of each bun. Serve immediately.

Friday night delight....I like this with an ice cold, Grey Goose martini. From Firefly, a bistro-type restaurant in Chicago.

Categories     Lunch/Snacks

Time 35m

Yield 2 serving(s)

Number Of Ingredients 11

3 tablespoons unsalted butter
1 tablespoon olive oil, plus
1 teaspoon olive oil
1/2 red onion, thinly sliced
1/2 yellow onion, thinly sliced
salt
fresh ground black pepper
1 tablespoon crumbled blue cheese
1/2 teaspoon Dijon mustard
2 (3 ounce) rib eye steaks
2 ciabatta or 2 other sturdy sandwich buns (don't use hamburger buns, good sturdy bread is best)

Steps:

  • Heat one tablespoon of the butter and one tablespoon of the oil over medium and add both types of onion and a little salt and freshly ground black pepper; cook, stirring, until crispy and brown, about 15 minutes, then set aside.
  • Mash together the remaining 2 tablespoons butter, the cheese and mustard and set aside.
  • Rub the steaks with salt and pepper; heat the remaining 1 teaspoon olive oil in a medium cast-iron skillet over high heat; when very hot, add both the steaks and cook without disturbing for 2 minutes; flip and brown the other side for 2 more minutes- this will give you medium doneness but still pink meat.
  • Place the steaks onto the roll bottoms, top each with half the butter mixture and then smother with onions; top with the roll tops and eat with ice cold, alcoholic beverages on a Friday evening.

Time 45m

Yield 4 serving(s)

Number Of Ingredients 12

2 tablespoons ketchup
1 tablespoon Dijon mustard
1 jarred hot cherry pepper, stemmed seeded and chopped
1 teaspoon red wine vinegar
1 lb beef sirloin, tips cut into 1-inch pieces (flap meat)
kosher salt & freshly ground black pepper
3 tablespoons olive oil
1 small yellow onion, halved and thinly sliced
2 cups sliced white mushrooms (6 ounces)
1 1/2 cups shredded sharp cheddar cheese
4 long rolls, split and lightly toasted
1 1/2 ounces baby arugula (optional)

Steps:

  • Mix the ketchup, mustard, cherry pepper and vinegar in a small bowl and set aside.
  • In a food processor, pulse half of the beef until just coarsely chopped. Don't skip this quick-chop step. Transfer to a bowl. Repeat with the remaining beef. Toss the beef with 1/2 teaspoons salt and 1/2 teaspoons pepper.
  • Heat 1-1/2 Tbs. of the oil in a heavy 12-inch skillet over medium-high heat until shimmering hot. Add the beef and cook, stirring occasionally, until it loses most of its raw color, about 3 minutes. Careful not to overcook. Transfer to a plate. Heat the remaining 1-1/2 Tbs. oil in the pan. Add the onion and 1/4 teaspoons salt; cook, stirring often, until beginning to soften and brown, about 4 minutes. Add the mushrooms and 1/4 teaspoons salt; cook, stirring often, until they soften and begin to release their juice, about 2 minutes. Add the ketchup mixture and beef and any accumulated juices. Cook, stirring often, until heated through, about 2 minutes. Stir in the cheese until melted, about 1 minute more.
  • Split the rolls almost through lengthwise and pile on the steak and arugula. Cut the sandwiches in half and serve.
