Ingredients

3/4 c milk (i use 2%, since that is what i have)
1/3 c butter, melted then cooled

Steps:

1. Mix well; I use a blender. Use in place of 1 cup of heavy cream.
2. For low fat heavy cream: 8 ounces low fat cottage cheese 3 tablespoons non-fat powdered milk Combine in a blender. Puree for 5 minutes.

This came from a "light" cook book and makes a great sustitute for heavy cream in dessert recipes. Do not overmix, it will cause it to become too liquidy. Cooking time reflects set time.

1 1/2 cups ricotta cheese or 1 1/2 cups cottage cheese
1 1/2 cups vanilla yogurt

Steps:

Combine the ingredients and mix until well blended and smooth.
Let stand at room temperature for 1 hour.
For best results, refridgerate at least 10 hours before using.
Use as needed.
