1 ½ cups all-purpose flour
¼ cup white sugar
1 teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
6 tablespoons cold unsalted butter
½ cup vanilla yogurt
½ cup fresh cranberries
1 tablespoon turbinado sugar, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Grease a baking sheet.
  • Sift flour, sugar, baking powder, baking soda, and salt together in a mixing bowl. Cut in cold butter with 2 knives or a pastry blender until the mixture resembles coarse crumbs. Stir in yogurt, then cranberries.
  • Form dough into a ball and place on the prepared baking sheet. Pat down into a 1/4-inch to 1/2-inch thick circle. Sprinkle with sugar and cut into 8 segments.
  • Bake in the preheated oven until edges are slightly crisp and top is browned, about 20 minutes. Remove from the oven and redefine the cut marks.

1 cup all-purpose flour
1/4 cup sugar
1-1/2 teaspoons baking powder
1/8 teaspoon salt
1/4 cup cold butter
3 tablespoons 2% milk
1 egg, beaten
1/4 cup dried cranberries
1/4 teaspoon coarse sugar

Steps:

  • In a small bowl, combine the flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. In a small bowl, combine milk and 2 tablespoons beaten egg; add to crumb mixture just until moistened. Stir in cranberries. , Turn onto a floured surface; knead gently 6-8 times. Pat into a 6-in. circle. Cut into four wedges. Separate wedges and place on a baking sheet coated with cooking spray. Brush with remaining egg; sprinkle with coarse sugar. , Bake at 425° for 12-15 minutes or until golden brown. Serve warm.

There's a magic hour just after they come out of the oven when they are so heavenly I just can't imagine why anyone would prefer store-bought scones. Just remember that the less you touch the dough, the shorter and crumblier your scones will be. Get baking!

150 g dried fruit, such as sour cherries, raisins, sultanas, chopped sour apricots, blueberries, or a mixture
orange juice, for soaking
150 g cold unsalted butter
500 g self-raising flour, plus a little extra for dusting
2 level teaspoons baking powder
2 heaped teaspoons golden caster sugar
2 large eggs
4 tablespoons milk, plus a little extra for brushing
optional:
Jersey clotted cream, good-quality jam or lemon curd, to serve

Steps:

  • First and foremost, brilliant scones are about having the confidence to do as little as possible, so do what I say and they'll be really great; and the second and third time you make them you'll get the dough into a solid mass even quicker, even better.
  • Put the dried fruit into a bowl and pour over just enough orange juice to cover. Ideally, leave it for a couple of hours. Preheat the oven to 200°C/400°F/gas 6.
  • Put your butter, flour, baking powder, sugar and a good pinch of sea salt into a mixing bowl and use your thumbs and forefingers to break up the butter and rub it into the flour so you get little cornflake-sized pieces. Make a well in the middle of the dough, add the eggs and milk, and stir it up with a spatula.
  • Drain your soaked fruit and add that to the mixture. Add a tiny splash of milk if needed, until you have a soft, dry dough. Move it around as little as possible to get it looking like a scruffy mass - at this point, you're done. Sprinkle over some flour, cover the bowl with clingfilm and pop it into the fridge for 15 minutes.
  • Roll the dough out on a lightly floured surface until it's about 2 to 3cm thick. With a 6cm round cutter or the rim of a glass, cut out circles from the dough and place them upside down on a baking sheet - they will rise better that way (so they say). Re-roll any offcuts to use up the dough.
  • Brush the top of each scone with the extra milk or some melted butter and bake in the oven for 12 to 15 minutes, or until risen and golden. At that point, take them out of the oven and leave them to cool down a little.
  • Serve with clotted cream and a little jam or lemon curd.

4 cups plus 1/4 cup all-purpose flour
1/4 cup sugar, plus additional for sprinkling
2 tablespoons baking powder
2 teaspoons kosher salt
1 tablespoon grated orange zest
3/4 pound cold unsalted butter, diced
4 extra-large eggs, lightly beaten
1 cup cold heavy cream
1 cup dried cranberries
1 egg beaten with 2 tablespoons water or milk, for egg wash
1/2 cup confectioners' sugar, plus 2 tablespoons
4 teaspoons freshly squeezed orange juice

Steps:

  • Preheat the oven to 400 degrees F.
  • In the bowl of an electric mixer fitted with a paddle attachment, mix 4 cups of flour, 1/4 cup sugar, the baking powder, salt and orange zest. Add the cold butter and mix at the lowest speed until the butter is the size of peas. Combine the eggs and heavy cream and, with the mixer on low speed, slowly pour into the flour and butter mixture. Mix until just blended. The dough will look lumpy! Combine the dried cranberries and 1/4 cup of flour, add to the dough, and mix on low speed until blended.
  • Dump the dough onto a well-floured surface and knead it into a ball. Flour your hands and a rolling pin and roll the dough 3/4-inch thick. You should see small bits of butter in the dough. Keep moving the dough on the floured board so it doesn't stick. Flour a 3-inch round plain or fluted cutter and cut circles of dough. Place the scones on a baking pan lined with parchment paper. Collect the scraps neatly, roll them out, and cut more circles.
  • Brush the tops of the scones with egg wash, sprinkle with sugar, and bake for 20 to 25 minutes, until the tops are browned and the insides are fully baked. The scones will be firm to the touch. Allow the scones to cool for 15 minutes and then whisk together the confectioners' sugar and orange juice, and drizzle over the scones.

1/2 cup sugar
2 teaspoons baking powder
1/4 teaspoon nutmeg

1 egg, slightly beaten
1 cup powdered sugar
1/4 teaspoon vanilla
1/4 cup orange juice, fresh

Steps:

  • Mix dry ingredients in a large mixing bowl.
  • Cut in softened butter and mix until small crumbles form.
  • Add cranberries and mix well.
  • Add cream and egg and mix until dry ingredients are moistened and soft dough forms.
  • Turn dough onto floured surface and knead gently about 10 times.
  • Split dough into two portions and pat each portion into a round, about 1/2 inch thick.
  • Place both rounds onto a lightly greased cookie sheet and cut each into 8 pie-shaped portions.
  • Bake in 400 degree oven for about 15 - 20 minutes, until light golden brown.
  • Remove from cookie sheet immediately and place on plate.
  • While scones are baking, mix glaze ingredients. Do not make glaze too thin (add juice a little at a time).
  • Allow scones to cool about five minutes, then drizzle with glaze.
  • Serve warm, with butter (if desired).

CRANBERRY AND ORANGE SCONES

  • Heat oven 200C/fan 180C/gas 6. Grease a large baking sheet.
  • Mix the sugar with the flour, then rub in the butter till mix resembles fine breadcrumbs.
  • Toss the cranberries and zest together with a small amount of flour and stir into the mix.
  • Make a well in the centre and tip in the yoghurt. Mix to form a soft dough then knead on floured surface briefly.
  • Press or roll out the dough to a thickness of 2cm then cut into scones using a cutter. Dip the cutter briefly into flour to stop the dough sticking, then place on the baking sheet.
  • Mix one beaten egg with a splash of water to make an egg wash or just use milk alone, then brush the tops of the scones. Be careful not to let run over sides as this affects the scones rising. Sprinkly over the demerara sugar.
  • Bake in the centre of the over for about 15mins until golden brown and well risen. Leave to cool then serve spread with butter.
  • TIP - you can change the flavour to any you prefer, if you want plain for serving with jam and cream, leave out fruit and add 1 tsp vanilla extract. Lemon zest and raisins are also very good.

5 Tablespoons / 65 g granulated sugar
1 Tablespoon baking powder
1/4 teaspoon fine-grain sea salt
6 Tablespoon / 85 g unsalted butter, cold, cut into 1/2-in/12-mm cubes
1 cup / 240 ml heavy (whipping) cream
1 large egg, cold
1/2 teaspoon pure vanilla extract
1 cup / 125g fresh raspberries
1 large egg
1/2 teaspoon granulated sugar
Pinch of fine-grain sea salt
Granulated or demerara sugar, for sprinkling

Steps:

  • In a large bowl, whisk together the flour, sugar, baking powder, and salt. Add the butter and rub it into the flour mixture with your fingertips, two butter knives, or a pastry blender until the mixture resembles coarse meal and no pieces of butter are larger than a pea.
  • In a glass measuring cup, beat together the cream, egg, and vanilla. Pour the cream mixture into the flour and butter mixture, and stir until a dough forms.
  • Lightly flour a clean work surface and turn out the dough. Scatter the raspberries on top of the dough and gently kneading the raspberries into the dough for 10 seconds, until the raspberries are evenly distributed throughout.Do note that because of the raspberries, the dough will be quite moist at this point; so be sure to lightly flour the work surface as needed to prevent sticking.
  • Pat the dough into a square about 3/4 in/2 cm thick and let it rest for 15 minutes. Preheat the oven to 425ºF/220ºC and line a rimmed baking sheet with parchment paper.
  • Once the oven has preheated, use a knife to cut the dough into 9 squares and put them on the prepared baking sheet. Or use a 2-inch /5cm round cutter or the rim of a glass dipped in flour to punch out circles of dough. Be sure to cut them as closely to one another as possible; you should get 6 rounds, and when you pat the dough back together (it doesn't need to be a square this time), you should be able to get 3 more rounds. Avoid re-rolling the dough during this second stage, as this will result in tough scones.
  • In a small bowl, beat together the egg, sugar, and salt. Lightly brush the tops of the dough pieces with the mixture and wait 1 minute until the topping sets. Sprinkle the tops with more sugar (about 1/2 tsp per scone) and bake for 13 to 18 minutes, until the scones are golden brown. Be sure to rotate the pan halfway through baking.
  • Allow the scones to sit on the pan for 2 minutes before transferring them to a cooling rack to cool slightly for 5 to 10 more minutes before serving.
  • Serve the same day with butter, jam, and a delicious warm beverage.

They will give you exactly the same bisconie with cranberry and orange as you got from the supermarket. Bake them, and serve them with tea or milk for a delicious afternoon snack.

½ cup Dried oranges and cranberries
3 cups All-purpose flour
3 tbsp Baking powder
¼ tbsp Fine salt
1 tbsp Grated orange peel
½ cup Butter at room temperature
¾ cup Cold milk

¼ cup Granulated sugar

Steps:

  • Preheat the oven to 375°F, or 190°C.
  • Mix evenly all the sugar, baking powder, salt, and flour. It's even better if you take the time to sift all of them into the bowl. Cut up the butter into smaller cubes. Mix in the orange peels and the butter.
  • With your finger, work thru the butter and mix it with the dry ingredients as best you can.
  • Stir the milk and one egg, plus the yolk of the second egg (keep the whites, you will need them at the final step) until it's evenly whisked, and add the mixture to the bowl of other ingredients.
  • Work them together swiftly, and transfer them to any clean, flat surface in your kitchen.
  • Now it's time to add the dried and candied fruits. Work it together, but try to be fast.
  • To make the bisconies soft, avoid overworking the dough. Flatten the dough with your hands on the flat surface. Skip the rolling pin. You can either cut the rolled-out, flattened dough into squares, triangles, or circles with a cookie cutter.
  • Put the raw bisconies on a baking sheet lined with parchment paper, and brush them with the gently whisked egg white.
  • Bake them for 16-20 minutes in the preheated oven. Take one or two hours and let them cool down completely before serving or eating.

1/2 cup chopped pecans
1/3 cup firmly packed brown sugar
1/3 cup butter
1/4 cup finely chopped pecans

Steps:

  • Heat oven to 350°F
  • Grease and flour 4 mini (5½-by-3-inch)loaf pans.
  • Combine cranberries and 2 Tbs flour in small bowl; toss to coat. Set aside.
  • Combine sugar, sour cream, butter, eggs and vanilla in a large bowl.
  • Beat at medium speed, scraping bowl often, until creamy.
  • Reduce speed to low; add remaining flour, baking powder, baking soda and salt.
  • Beat just until moistened.
  • Stir in cranberry mixture and ½ cup pecans by hand.
  • Spoon batter evenly into loaf pans.
  • Bake 30-35 minutes or until toothpick inserted in center comes out clean.
  • Cool 10 minutes; remove from pans.
  • Meanwhile, combine brown sugar and 1/3 cup butter in one-quart saucepan.
  • Cook over medium heat until mixture comes to a boil (3-4 minutes).
  • Spoon glaze mixture over warm loaves. Immediately sprinkle with ¼ cup pecans.
  • Note:
  • One greased 9-by-5-inch loaf pan can be used instead of the four mini-loaf pans.
  • Bake for 60 to 65 minutes.
