Hearty Tomato-Beef Soup image

This soup tastes even better the next day, adjust the chili flakes to suit heat level or you may omit, for best flavor make certain to lightly brown the ground beef --- this soup freezes excellent without the addition of cooked pasta.

1 lb lean ground beef
1 medium onion, chopped
6 large garlic cloves, peeled and chopped (do not mince)
2 teaspoons dried basil (rubbed between fingers to release the flavor)
2 teaspoons dried oregano (rubbed between fingers to release the flavors)
1/2 teaspoon crushed red pepper flakes (adjust to suit heat level) (optional)
1 tablespoon chili powder
1 (10 3/4 ounce) can tomato soup, undiluted
1 (14 ounce) can whole tomatoes, undrained
4 cups water
1 carrot, peeled and diced
1 (16 ounce) can red kidney beans
1 (10 ounce) can green beans, drained (use whole or cut green beans)
1 1/2 teaspoons seasoning salt (to taste) or 1 1/2 teaspoons white salt (to taste)
fresh ground black pepper (to taste)
cooked pasta (use your choice of pasta and any amount desired)
freshly grated parmesan cheese

Steps:

  • Cook the ground beef in a pot with onion until no longer pink; drain fat.
  • Add in garlic, basil, oregano and chili flakes; cook stirring over medium-high heat until lightly browned (about 8 minutes).
  • Add in chili powder and stir for 1 minute.
  • Stir in tomato soup, whole tomatoes with juice, water, and diced carrot; bring to a boil over medium-high heat breaking up the tomatoes slightly with a fork.
  • Reduce heat to low, partially cover and simmer for about 30 minutes stirring occasionally.
  • After 30 minutes of simmering add in the kidney beans, whole or cut green beans and seasoned salt; simmer for another 15-20 minutes seasoning with black pepper about halfway through cooking.
  • Mix in the cooked pasta until heated through.
  • Ladle into bowls and sprinkle freshly grated Parmesan cheese on top.

4 pounds beef top sirloin steak, cut into 1/2-inch cubes
4 cups chopped onions
1/4 cup butter
4 quarts hot water
4 cups sliced carrots
4 cups cubed peeled potatoes
2 cups chopped cabbage
1 cup chopped celery
1 large green pepper, chopped
8 teaspoons beef bouillon granules
1 tablespoon seasoned salt
1 teaspoon dried basil
1 teaspoon pepper
4 bay leaves
6 cups tomato juice

Steps:

  • In two Dutch ovens, brown beef and onions in butter in batches; drain. Add the water, vegetables and seasonings; bring to a boil. Reduce heat; cover and simmer for 20 minutes. , Add tomato juice; cover and simmer 10 minutes longer or until the beef and vegetables are tender. Discard bay leaves.

4 pounds beef stew meat
8 medium onions (2-1/4 pounds), halved and thinly sliced
12 cups water
1 can (28 ounces) diced tomatoes, undrained
1 can (15 ounces) tomato sauce
1-1/3 cups Worcestershire sauce
1/2 cup beef bouillon granules
12 medium red potatoes (about 3-1/2 pounds), cubed
1/2 large head cabbage, chopped
1 pound carrots, thinly sliced
6 celery ribs, thinly sliced (3 cups)
3 cups (about 15 ounces) frozen corn
3 cups (about 12 ounces) frozen peas
3 cups (about 12 ounces) frozen cut green beans
1-1/2 cups (about 15 ounces) frozen lima beans
1 bay leaf
3 teaspoons dried marjoram
3 teaspoons dried thyme
1 teaspoon salt
1 teaspoon pepper
1-1/2 cups (6 ounces) frozen sliced okra

Steps:

  • In a large stockpot, heat 1 tablespoon oil over medium heat. Brown beef in batches, adding additional oil as necessary. Remove with a slotted spoon. Add onions to drippings; cook and stir until tender. Discard drippings; return beef to pot. Stir in water, tomatoes, tomato sauce, Worcestershire sauce and bouillon. Bring to a boil. Reduce heat; simmer, covered, 45 minutes., Stir in potatoes, cabbage, carrots, celery, corn, peas, green beans, lima beans and seasonings. Return to a boil. Reduce heat; simmer, covered, 35 minutes. Stir in okra; cook 15-20 minutes longer or until beef and vegetables are tender. Discard bay leaf.

1 cup OLIVO by CLASSICO Roasted Garlic Pasta Sauce
1 Tbsp. LEA & PERRINS Worcestershire Sauce
1 cup quick-cooking barley, uncooked

Steps:

  • Cook meat in large saucepan sprayed with cooking spray on medium heat until evenly browned, stirring frequently. (Meat will not be done.) Drain meat in colander; set aside.
  • Add vegetables to pan; cook 5 to 7 min. or until crisp-tender, stirring frequently.
  • Return meat to pan. Add water, beef broth, pasta sauce and Worcestershire sauce; mix well. Bring to boil; cover. Simmer on medium-low heat 40 min., stirring occasionally and adding barley to the soup after 25 min.

1 teaspoon olive oil
1 teaspoon minced garlic
1 onion, diced
2 (26 ounce) containers beef broth
1 pound lean ground beef
1 (14.5 ounce) can diced tomatoes
1 (12 fluid ounce) can tomato juice
1 cup frozen mixed vegetables
½ cup pearl barley
1 teaspoon dried basil
1 teaspoon dried parsley
ground black pepper

Steps:

  • Heat the olive oil in a large pot over medium heat. Stir in the garlic and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the beef broth, then add the ground beef. Cook for 10 minutes, stirring and breaking up the ground beef. Mix in the diced tomatoes and tomato juice.
  • Stir in the mixed vegetables, pearl barley, basil, parsley, and pepper. Simmer until the barley is tender, 40 to 50 minutes.

1 quart water
⅓ cup tomato paste
1 teaspoon minced garlic
2 bay leaves
4 cubes beef bouillon
1 pinch freshly ground black pepper to taste
½ cup uncooked long grain white rice
1 cup shredded Cheddar cheese

Steps:

  • In a pot over medium heat, mix the beef broth, water, tomato paste, garlic, and bay leaves. Stir in the beef bouillon until dissolved. Season with pepper. Bring to a boil, and mix in the rice. Reduce heat to low, cover, and cook 25 minutes, until rice is tender. Remove bay leaves, and serve warm with a sprinkling of Cheddar cheese.

4 boiling potatoes (about 1 1/4 pounds) cut into 1-inch cubes
1 cup chopped celery
1 cup sliced carrots
1 cup pearl barley
1 cup shredded green cabbage
2 bay leaves
1 teaspoon dried basil
5 1/2 cups canned beef broth
1 cup water
2 10-ounce packages frozen mixed vegetables
Chopped fresh parsley

Steps:

  • Heat oil in heavy large Dutch oven over medium-high heat. Add beef and cook until brown, stirring occasionally, about 8 minutes. Add onion and garlic and sauté until onion is tender, about 5 minutes. Stir in tomatoes with juices and all remaining ingredients except frozen vegetables and parsley. Cover and simmer until meat is tender, about 1 hour 10 minutes. (Can be prepared 3 days ahead. Cover and refrigerate. Rewarm over medium heat before continuing.) Stir in frozen vegetables. Cover and simmer until vegetables are tender, about 10 minutes. Sprinkle soup with parsley and serve.

Because this already had 5 ingredients from it! My work was done for entry #1. This became my most popular recipe in the contest. Spot 6 when sorted by rating. Hope you try it and love it too! **Several reviewers have used broth in place of the water which will give you a more intense flavor...The reason I didn't have it in the ingredients is because most onion soup mixes have beef bouillon in them.**
