The subtle spices in this sausage potato casserole give it a distinctive flavor that my family has loved for years. Not only is this hearty casserole a great main dish on your dinner table, it also reheats nicely. -Mrs. Fred Osborn, Thayer, Kansas

1 pound bulk pork sausage
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
3/4 cup 2% milk
1/2 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups sliced peeled potatoes
2 cups shredded cheddar cheese
Minced fresh parsley, optional

Steps:

  • Preheat oven to 350°. In a large skillet, cook sausage over medium heat until no longer pink, breaking it into crumbles; drain and set aside. Combine soup, milk, onion, salt and pepper. , In a greased 2-qt. baking dish, layer half the potatoes, soup mixture and sausage. Repeat layers. , Cover and bake until potatoes are tender, 60-65 minutes. Sprinkle with cheese; bake, uncovered, until cheese is melted, 2-3 minutes. If desired, garnish with parsley.

1/2 lb sausage links, cut into 1/2in pieces (about 4)
1 red peppers or 1 green pepper, chopped
1 garlic clove, minced
1 teaspoon dried oregano, divided
1/2 teaspoon onion flakes, divided
5 medium red potatoes, cut into 3/4in cubes
1/3 cup white wine or 1/3 cup chicken broth
1/4 teaspoon paprika

Steps:

  • Preheat oven to 375°F.
  • Spray a 9in square baking pan with cooking spray.
  • In a med skillet over med heat, cook sausage until no longer pink, about 5 minutes.
  • Place on paper towels to drain.
  • Spoon sausage into prepared pan.
  • Top with pepper and garlic, sprinkle with 1/2 of oregano and onion flakes.
  • Place potatoes in a single layer over pepper.
  • Pour wine or broth over potatoes.
  • Sprinkle with paprika and remaining oregano and onion.
  • Bake until potatoes are tender, about 1 hour.

This is an Italian comfort food classic! The smell of this cooking in my kitchen transports me back to playing on the street in front of my Papa and Gigi's house in Brooklyn. I make 2 trays of this for every family get-together, and it's gone in a flash!

2 teaspoons olive oil
2 pounds Italian sausage links, cut into 2-inch pieces
¼ cup olive oil
4 large potatoes, peeled and thickly sliced
2 large green bell peppers, seeded and cut into wedges
2 large red bell peppers, seeded and cut into wedges
3 large onions, cut into wedges
½ cup white wine
½ cup chicken stock
1 teaspoon Italian seasoning
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.
  • Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil in the skillet.
  • Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish.
  • Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together.
  • Bake in the preheated oven until hot and bubbling, 20 to 25 minutes. Serve hot.

1 1/2 cups thinly sliced onions
3 tablespoons all-purpose flour
3 cups cubed 3/4 inch potatoes
4 cups milk
1 teaspoon salt
1/4 teaspoon pepper
2 cups shredded cheddar cheese or 2 cups American cheese
8 ounces cooked Polish sausage, cut into 1/4 inch slices

Steps:

  • In 3-quart saucepan melt butter.
  • Stir in onion; cook over medium heat until tender, 4 to 5 minutes.
  • Stir in flour until smooth and bubbly, about 1 minute.
  • Stir in potatoes, milk, salt and pepper. Cover; continue cooking, stirring occasionally, until potatoes are fork tender, about 25 to 30 minutes.
  • Stir in cheese and sausage. Continue cooking, stirring occasionally, until cheese is melted and sausage is heated through, 2 to 3 minutes.

1-1/2 lb red potatoes, cut into bite-size chunks
2 onions, sliced
1 lb carrots, cut into 3" chunks, or large coins, as appropriate to being bite-sized
2 Tbsp butter, melted
2 tsp mama's meatball mix (or other favorite italian mix herbs)
1 tsp salt
1 tsp garlic powder
1/2 tsp dried thyme
1/2 tsp black pepper
1 lb favorite brats, polish sausage, or other favorite product
garlic mist nonstick cooking spray

Steps:

  • 1. Preheat oven to 400°F. Spray 9 x 13 baking dish with garlic mist nonstick cooking spray.
  • 2. Combine potatoes, onion, carrots, butter, salt, Mama's Meatball seasoning, salt, garlic powder, thyme, and pepper in prepared baking dish; toss to coat. Bake 30 minutes.
  • 3. While vegetables are baking, prepare the sausage in your preferred manner. Once cooked through, slice into 1/4: slices.
  • 4. Add sausage to the vegetables; mix well. Bake 15 - 20 minutes, or until potatoes are tender and golden brown.

1 lb new potato, washed and cut in half
1 medium sweet onion, sliced into medium thick rings
1 lb smoked sausage, cut into bite sized pieces
1/2 lb baby carrots or 2 large carrots, cut into medium bite size pieces
1 teaspoon salt
1/2-1 teaspoon pepper
3 teaspoons melted margarine
1 teaspoon garlic powder
1 1/2 teaspoons dried thyme

Steps:

  • Preheat oven to 400ºF and spray a 9x13-inch baking pan with cooking spray.
  • Combine all ingredients except smoked sausage in a large zipper type plastic bag,mixing well.
  • Place ingredients from bag into prepared pan,bake uncovered for 30 minutes.
  • Add sausage to vegetables mixing well (if desired at this point feel free to add more seasonings).
  • Bake for 20 minutes or until potatoes are tender and golden browned.

1 lb bulk sausage (Pork)
3 potatoes, sliced thin
1/2 teaspoon salt
4 cups water
1 cup cheddar cheese, shredded
1 (6 ounce) can French-fried onions
1 (10 ounce) can cream of chicken soup
1 cup milk

Steps:

  • Slice potatoes very thin and place in salted water. Boil until tender and drain.
  • While potatoes are boiling, brown sausage and drain.
  • Layer in a baking dish, one-half of potatoes, one-half of sausage, one-half cheese and one-half of french fried onions. Repeat a layer with other one-half of potatoes, sausage and cheese. (hold onions until next step is done).
  • In a small bowl mix cream of chicken soup and milk. Pour over layers in baking dish.
  • Top with remaining one-half of french fried onions.
  • Bake in a 325 degree oven for 30 minutes, watching carefully not to burn onions on top. Remove from oven and serve.
  • Enjoy!
