NICK'S AUTHENTIC ITALIAN SPAGHETTI
Nick's Authentic Italian Spaghetti comes straight from Italy. Tomatoes, basil, onions, and carrots flavor the two kinds of meat to make the perfect sauce!

Steps:
- Heat oil on medium heat in a large, deep skillet. Add onion, carrots, and garlic and saute for 1 minute. Add ground beef and pork and continue to cook.
- When meat is browned and onions are soft, add tomatoes.
- When tomatoes have softened and have started to release their juices (about 4-5 min) add basil, sugar, salt and pepper (if you are whole tomatoes, mash the them with a potato masher or spatula to release all their juices).
- Simmer for at least 3 hours (and up to 6 hours), stirring occasionally. The longer you simmer, the better. Important: tomatoes burn easily so keep an eye on them and add beef broth a little at a time to thin sauce if needed.
- In a large pot, cook spaghetti in salted water to al dente, drain completely and return to pot. Add sauce to the spaghetti noodles and toss until noodles are covered.
- Serve immediately.

EASY HOMEMADE SPAGHETTI SAUCE RECIPE
My family's secret homemade spaghetti sauce is easy to make using a few staple ingredients you may already have on hand! Perfectly thick and packed with flavor, you'll be ditching that store bought pasta sauce!

- In a large pan heat the extra virgin olive oil over medium heat until just shimmering. Add the onions, garlic, and finely grated carrots. Cook for about 5 minutes, stirring regularly until softened.
- Add the crushed tomatoes and about 1/2 cup water. Add a generous pinch of salt and pepper. Stir in oregano, paprika, crushed pepper flakes, if using. Finally, stir in the fresh basil and parsley.
- Bring the sauce to a boil, then turn heat to low. Cover and let simmer for about 15 to 20 minutes. Check partway through, and if you feel the sauce is too thick, you can add a bit more water (preferably some of your pasta cooking water). When sauce is ready, throw in more fresh basil, if you like.
- If serving for dinner, add cooked pasta of your choice to the sauce. Mix to combine and let the pasta cook in the sauce over low heat for about 5 minutes.

- In a large stockpot, cook beef over medium heat until no longer pink; drain. Add broth, tomatoes, spaghetti sauce, onions, celery, carrots, beans, oregano, pepper and pepper sauce., Bring to a boil. Reduce heat; simmer, covered, 30 minutes. Add pasta and parsley; simmer, covered, until pasta is tender, 10-14 minutes.

- In a bowl, combine the first six ingredients. add beef and mix well. Shape into eight meatballs. Brown in a Dutch oven over medium heat; drain and set meatballs aside. , In the same pan, cook sausage, onion and green pepper until vegetables are tender; drain. - In a large stockpot on low-med heat add your olive oil and saute your onions for about 4 minutes,then add your crushed garlic,cook for 2 minutes longer. Then add your water,and tomato products. Be sure to mix everything very well.Add in your spices,and cheese. cook for 2 1/2 hours covered.Then add in your wine, and cook 30 minutes longer. - In a large dutch oven, heat the olive oil.
- Add onions& garlic and cook until just beginning to brown.
- Add Pork and cook until browned on all sides.

- In a large pot (I use cast iron), quickly and thoroughly brown the ground beef.
- Drain and add mushrooms, followed by garlic (I use at least a tablespoon in this step), parsley (a lot), oregano, sage, and basil.
- Add tomatoes, sauce, and paste; stir together.
- Cook on med-high for 5-10 minutes, then reduce heat to med-low.
- Allow to simmer covered about one hour, stirring occasionally.
- Add garlic, pepper, basil, oregano, sage, and parsley to taste (also sugar).
- Cook covered on med-low for 2 hours.
- Add more seasoning to taste.
- Cook covered on med-low for another 30 minutes-1 hour.
- At this point, the sauce should be thick, cooked down about halfway.
- Serve with your favorite pasta or on slices of bread with parmesan or cheddar.

- Grill the sausages on a gas/charcoal grill. When done, slice into 1/4" coins.
- Saute onions until translucent in pot.
- Add garlic, and ground beef, and brown the beef.

- In a large hot sauce pan, add 1 Tbsp of Olive oil, and brown ground beef and turkey, season lightly with salt and pepper.
- Put aside once browned, strain out any fat.

- In large mixing bowl, combine well with hands the 2 meats.
- Add to deep, large non-stick skillet. *If not using non-stick pan, add a little olive oil to pan first so it won't stick.
- Sprinkle EVENLY rest of meat mixture ingredients over meats. Stir meats to mix in herbs and spices.
- Cook over medium heat til meat is no longer pink. Break up meat as you go along, but just don't overdo it. You don't want tiny, overly fine pieces.
- Drain grease.
- Pour into large heavy-bottomed pot.
- Add rest of ingredients EXCEPT mushrooms, and stir/fold to mix well.
- Now add the mushrooms! :).
- Heat over medium heat til simmering.
- Lower heat to just a simmer and cook, stirring every so often, for about 30 minutes.
- Serve over hot, cooked and well drained spaghetti, thin spaghetti, mostaccioli, or rotini noodles.
- Serve with tossed salad, garlic bread and parmesan cheese on the side if desired. ENJOY!
