HONEY HAM SANDWICH

- For the biscuits: Preheat the oven to 475 degrees F.
- Sift together the flour and salt into a large bowl. Add the butter and shortening and cut together with a pastry cutter. Gently stir in the buttermilk using a fork. Knead the mixture a few times with your hands until the dough comes together.
- Tip the dough onto a floured surface and roll out to about 1/2 inch thick. Using a 3-inch round cutter, cut out 12 biscuits and transfer to a baking sheet.
- For the topping: Brush the biscuit tops with 2 tablespoons of the melted butter and bake until golden, 13 to 15 minutes. Allow the biscuits to cool slightly, 4 to 5 minutes.
- Meanwhile, whisk together the honey, Dijon, parsley and remaining 8 tablespoons melted butter in a small saucepan over medium heat. Bring to a simmer and remove from the heat.
- For the sandwiches: Preheat the broiler.
- Split the biscuits in half and return to the baking sheet cut-side up. Brush the cut sides with the honey butter. Place 2 halved ham pieces on the bottom of each biscuit and top each with a slice of cheese. Broil until the cheese is melted, 1 to 2 minutes. Carefully remove from the oven and pour over the remaining honey butter. Place the tops on the biscuits and serve.
HEARTY HAM AND CHEESE SANDWICH(CROQUE MONSIEUR)
This sandwich is so filling and good , even adding a salad is too much...this was fun to make and very easy. My family liked it a lot. and I will be making it again-- will try with other meats too! I think the secret to this sandwich is the Gruyère cheese and nutmeg in the sauce..so good.

- 1. Heat oven to 400^. Heat milk in microwave safe measuring cup. In a small saucepan melt the margarine, then add the flour all at once, stirring with spatula until the mixture is smooth..slowly pour the hot milk into the flour mixture and cook, stirring constantly, until the sauce is thick. Remove from the heat and add the salt and pepper and the nutmeg. Stir in 1 cup of the grated Gruyère and the all the Parmesan cheese until blended together; and set aside.
- 2. Cover a cookie sheet with foil- much easier for clean-up. Place the 6 slices of bread on the foil and bake plain in the hot oven for 5 minutes. Turn bread over and bake 4 more minutes, until toasted. Remove from oven.
- 3. Lightly brush the the bread slices with the mustard and divide the ham equally among 3 slices of the toast, sprinkle 1/2 of the remaining Gruyère over the ham. Top each with the remaining toast. Generously spoon the tops of the toast with the cheese sauce, and sprinkle with the remaining shredded Gruyère, and bake in the hot oven for 5 minutes.
- 4. Turn on the broiler and broil for 3 to 5 minutes, or until bubbly and lightly browned. (Can us a kitchen torch if you have one)..Serve sandwiches hot.

HARVEY HAM SANDWICHES
Slow cooked shredded ham in a brown sugar and mustard sauce. This is the sort of thing you prepare a day or so in advance so that when you serve it you don't really have to do much of anything at all. Great for times when people will be in and out, eating irregularly all day.

- Place the ham in a large pot or slow cooker, and fill with enough water to cover. Bring to a boil, then reduce the heat to low, and simmer for 8 to 10 hours. Remove the meat from the water, and allow to cool. If it has cooked long enough, it will fall into pieces as you pick it up.
- Pull the ham apart into shreds once it is cool enough to handle. It doesn't have to be tiny shreds. Place the shredded ham into a slow cooker. Stir in the mustard and brown sugar, cover, and set to Low. Cook just until heated. Serve on dinner rolls. We don't use any other sandwich toppings with it, but that is a personal choice.
