12 lasagna noodles
1/2 pound ground beef
1/2 pound mild or hot Italian sausage (I use chicken sausage)
1 jar Rao's Marinara -or- about 32 oz your favorite sauce
15 oz 1 3/4 c ricotta, whole milk or part skim
2 1/2 oz grated parmigiano-reggiano cheese (1 1/4 c, 1 cup mixed in ricotta, 1/4 cup for topping)
1/4 c finely chopped basil
1 egg (beaten)
1/2 t salt
16 oz 4 cups mozzarella, shredded

Steps:

  • Heat oven to 375 degrees.
  • Cook pasta according to package directions. Be sure to salt the water. Drain.
  • Meanwhile in a 12" skillet over medium high heat, sauté ground beef and sausage, breaking up meat until it's cooked through.
  • If baking lasagna immediately, add sauce to cooked meat, reduce heat to medium low and let simmer until ready to assemble.
  • Stir together ricotta, 1 ¼ c parm, basil, egg and salt.
  • Grease/butter/spray a 9x13 baking dish. Spread a spoonful of sauce over the bottom of the pan.
  • Assembly:
  • Lay three lasagna noodles down. Spread about half of the ricotta mixture over. Sprinkle with 1/3 of the mozz.
  • Lay three lasagna noodles down. Spread about half of the sauce over.
  • Top with three lasagna noodles. Spread the rest of the ricotta. Sprinkle with 1/3 of the mozz.
  • Top with three lasagna noodles. Pour the rest of the sauce over. Sprinkle with remaining mozz and parm.
  • Bake for 30 minutes until hot and bubbly.

2 tablespoons extra-virgin olive oil
1/4 teaspoon crushed red pepper flakes
1 small onion, chopped
1 carrot, finely chopped
3 cloves garlic, minced
2 tablespoons tomato paste
Two 28-ounce cans whole peeled tomatoes, coarsely crushed
1 1/2 teaspoons sugar
Kosher salt and freshly ground black pepper
8 ounces ground beef
1 teaspoon dried oregano
1 teaspoon dried rosemary
1 teaspoon dried thyme
1/2 cup freshly grated Parmesan, plus more for serving
[For Serving:] Hot cooked pasta

Steps:

  • Heat the oil in a medium Dutch oven or pot over medium heat. Add the red pepper flakes and stir for 15 seconds. Add the onion and carrot and cook, stirring occasionally, until the onion is golden brown, 10 to 15 minutes. Stir in the garlic and cook until soft, about 1 minute. Stir in the tomato paste and cook until brick red, about 1 minute. Add the crushed tomatoes with their juices, the sugar, 1 teaspoon of salt and a few grinds of pepper. Bring to a simmer. Partially cover the pot and continue to simmer the sauce for 15 minutes, adjusting the heat as needed to maintain a simmer.
  • Meanwhile, heat a large nonstick skillet over medium-high heat. Add the beef, oregano, rosemary and thyme. Sprinkle with salt and pepper. Cook the meat, breaking up with a wooden spoon, until it browns, about 5 minutes. Stir the meat into the sauce and continue to simmer, partially covered, stirring occasionally, until thickened and the flavors have blended, about 1 hour. Add a splash of water if the sauce becomes too thick. Stir the Parmesan into the sauce and adjust the seasoning with additional salt and pepper. Serve over hot pasta with extra cheese for topping.

One 16-ounce can tomato sauce
One 6-ounce can tomato paste
2 tablespoons chili powder
2 tablespoons sugar
1 1/2 teaspoons kosher salt

1 teaspoon garlic salt
2 bay leaves
1 medium yellow onion, grated
1 tablespoon white wine vinegar
Nonstick cooking spray, for the pan
1 pound ricotta
1 tablespoon fresh basil, chopped
1 tablespoon fresh parsley, chopped
1 teaspoon garlic salt
Pinch red pepper flakes, optional
1 large egg
One 9-ounce package no-boil lasagna noodles (16 noodles)
12 slices boiled ham (about 1/2 pound)
12 slices provolone (about 3/4 pound)
1 1/2 pounds low-moisture mozzarella, grated (I like Polly-O; 5 to 6 cups)
1/2 cup grated Parmesan

Steps:

  • For the meat sauce: In a stockpot or Dutch oven, combine the beef (do not brown first), tomato sauce, tomato paste, chili powder, sugar, salt, pepper, garlic salt, bay leaves and onion. Add 2 cups water. Mix until combined. Cover and simmer over medium-low heat for 1 1/2 to 2 hours, stirring occasionally. Stir in the vinegar and simmer for another 30 minutes.
  • For the lasagna: Preheat the oven to 375 degrees F. Spray a 9-by-13-inch baking dish with nonstick cooking spray and place the dish on a rimmed baking sheet.
  • In a medium bowl combine the ricotta, basil, parsley, garlic salt, red pepper flakes, if using, and egg and stir until well blended.
  • Spread 2 cups meat sauce across the bottom of the prepared baking dish. Place 4 noodles over the sauce-it is okay if they overlap slightly. Dollop 2/3 cup of the ricotta mixture on the noodles, then spread it in an even layer. Top the ricotta with 4 slices ham, then 4 slices provolone. Sprinkle 1 cup mozzarella over the provolone. Repeat the layering-sauce, noodles, ricotta, ham, provolone, mozzarella-twice more. Top with another layer of noodles, then the Parmesan and the remaining mozzarella.
  • Cover the baking dish tightly with foil. Bake until the dish is bubbling and the noodles are cooked (you can test by poking with a sharp knife to make sure the noodles are soft), about 50 minutes. Remove the foil and return to the oven until the cheese is bubbling and golden brown, another 10 to 15 minutes. Let the lasagna rest for 10 minutes, then serve warm.

Steps:

  • Heat oven to 375°F.

Steps:

  • Preheat oven to 375 degrees.
  • Meat Sauce: Heat oil in a large saucepan over medium-high. Add beef, sausage, onion, carrots, celery, and 1 teaspoon salt. Cook, stirring occasionally and breaking up meat into bite-size pieces, until vegetables soften and meat has browned, about 10 minutes. Add garlic, oregano, and red-pepper flakes; cook until fragrant, 1 minute. Add tomato paste; cook 2 minutes more. Puree tomatoes in a blender or food processor; add to pan. Bring to a boil, then reduce heat to low and simmer, stirring occasionally, until reduced and thickened slightly but still very loose, about 15 minutes. Remove from heat.
  • Cheese Mixture: In a large bowl, whisk together ricotta, milk, eggs, 1 cup Parmigiano-Reggiano, 2 1/2 cups mozzarella, parsley, 1 teaspoon salt, and 1/4 teaspoon pepper.
  • Assembly: Spread 2 cups meat sauce evenly in a 9-by-13-inch baking dish, preferably ceramic or enameled cast iron. Arrange 3 lasagna noodles over sauce (space noodles evenly; they will expand as the lasagna cooks). Spread 2 cups cheese mixture over noodles; top with 3 more noodles. Repeat layering of meat and cheese mixtures between noodles twice more. Spread 2 cups meat sauce evenly over top layer of noodles. Sprinkle evenly with remaining 1 1/2 cups mozzarella and 1/4 cup Parmigiano-Reggiano. Loosely cover with parchment-lined foil and transfer to a rimmed baking sheet.
  • Bake until noodles are tender but still al dente (easily pierced with the tip of a knife), 40 to 45 minutes. Uncover; continue baking until bubbly and puffed slightly along edges and golden brown in places on top, 20 to 25 minutes more. (There may appear to be a lot of liquid in the dish. It will be absorbed as the lasagna cools.) Transfer dish to a wire rack and let cool slightly and set, about 20 minutes; cut into squares to serve.

My family loves this lasagna and it's such an easy recipe but it does take some prep time. It's versatile too and you can add or change things to your liking!

9 lasagna noodles, shells (cooked according to package directions)
1 1/2 lbs ground beef (I use chuck)
salt (season to taste)
pepper
garlic salt
1/2 onion (sauteed, can use other vegs. like mushrooms, peppers, etc)
1 (1 1/3 kg) jar pasta sauce (I use 2lb 13oz jar of Ragu Traditional)
16 ounces cottage cheese (can also use ricotta)
1 egg (slightly beaten with fork)
2 cups cheese (mozzarella or Italian blend works good)
salt (lightly)
pepper
2 cups cheese (mozzarella or Italian blend to top)

Steps:

  • Preheat oven to 350°F
  • Boil and cook shells as directed
  • Brown ground beef, season, and drain grease (reserve 1 tsp).
  • Saute onions (or other vegetables in same pan using approx 1 tsp reserved grease -- add more if needed or use butter or other oil).
  • combine ground beef, onions, and pasta sauce in same pan. cover and simmer on low while you prepare the rest of the meal. Stir occasionally.
  • Mix cottage cheese, egg, then salt and pepper lightly. Mix well and add 2 cups cheese. Mix again.
  • Spray a 13x9 inch baking pan and begin to layer in order -- shells, cottage cheese mix, meat sauce (repeat 3 times) and finish off by topping 1-2 cups mozzarella or Italian blend cheese onto lasagna.
  • Bake for 20-30 minutes uncovered or until cheese is melted to your preference. I like to sprinkle an Italian blend seasoning or crushed red pepper on our individual servings. We serve this with garlic bread and a salad.
  • Let stand approximately 20 minutes before cutting/serving (to set up or else it is too saucy). I use this time to make the salad and toast the garlic bread. This meal tastes even better the next day!

1 (8 ounce) package sliced pepperoni
1 lb hot Italian sausage
1 lb hamburger
16 ounces shredded mozzarella cheese
2 eggs
12 ounces cottage cheese or 12 ounces ricotta cheese
1 (8 ounce) package lasagna noodles
1 (8 ounce) can diced tomatoes (or we use spaghetti sauce)
1 (8 ounce) can mushrooms or 8 ounces sliced fresh mushrooms
1 green pepper, sliced
1 tablespoon garlic
2 tablespoons italian seasoning

Steps:

  • Cook lasagna according to package directions.
  • While pasta is cooking, brown sausage and hamburger.
  • After sausage and hamburger is browned, add pepperoni.
  • Mix in mushrooms, green pepper, and tomatoes (or sauce).
  • Add garlic and italian seasoning.
  • Let simmer until vegetables are thoroughly cooked.
  • Blend cottage cheese, 8 ozs of mozzarella cheese, and 2 eggs until well mixed.
  • Line bottom of deep-dish pan with single layer of lasagna.
  • Pour 1/2 cheese mixture
  • Add another layer of lasagna.
  • Pour 1/2 meat sauce mixture.
  • Add another layer of lasagna.
  • Add remaining cheese mixture.
  • Add another layer of lasagna.
  • Add remaining meat mixture.
  • Top with 8 oz mozzarella cheese.
  • Cover with aluminum foil and bake at 350 for 25 minutes.
  • Remove aluminum foil and bake at 350 for another 25 minutes.
  • Let sit for 10 minutes before serving.

  • For the sauce: Pre-heat the oil in a large saucepan over medium heat. Add onion. Cook until translucent. Add garlic, cook until fragrant, or about 30 seconds.
  • Increase heat to medium high. Add meat, salt and pepper. Cook until meat is no longer a raw color, but not browned.
  • Add the cream and simmer until the liquid is about halved.

  • Sprinkle 1 cup of the mozzarella cheese over the ricotta mixture. Spoon 1 1/2 cups of the meat sauce over the cheese mixture. Top with 3 more noodles. Continue this process 2 more times.
  • Place the remaining 3 noodles on the sauce, spread with remaining sauce, sprinkle remaining cheese, and parmesan.
  • Cover with foil and bake 15 minutes.
  • Remove foil and bake 25 minutes.
  • Remove from oven and let cool 10 minutes.
