HEARTY MACARONI CASSEROLE

- Prepare macaroni and cheese according to package directions. Meanwhile, in a large skillet, cook the beef, green pepper and onion over medium heat until meat is no longer pink; drain. Add to prepared macaroni. Stir in tomatoes., Divide half of mixture between two greased 1-1/2-qt. baking dishes; sprinkle each with 1/2 cup cheese. Top with remaining mixture., Sprinkle remaining cheese over one casserole. Cover and freeze for up to 3 months. Sprinkle the second casserole with French-fried onions. Bake, uncovered, at 350° for 30 minutes or until heated through., To use frozen casserole: Completely thaw in the refrigerator. Remove from the refrigerator 30 minutes before baking. Bake as directed.

- Cook macaroni according to package directions; set cheese packet aside. Meanwhile, in a large skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink and vegetables are tender; drain., Add the soup, water, ketchup, mustard and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 4 minutes., Drain macaroni; add to beef mixture. Add the corn, cheese, contents of reserved cheese packet, butter and milk. SPICY BAKED MACARONI

- Preheat the oven to 350 degrees F.
- Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta.
- In a large skillet, heat the olive oil over medium heat. Add the mushrooms, onion, and garlic. Cook until the mushrooms are tender and the onion is golden, about 7 minutes. Add the tomatoes, spinach, and red pepper flakes. Stir to combine and cook until heated through, about 5 minutes.
- In a small bowl, mix together the bread crumbs, 1/4 cup Parmesan, and 1/4 cup Romano. Spread the softened butter in a 9 by 13-inch glass baking dish and sprinkle half of the bread crumb mixture inside the dish to coat.
- In a large bowl combine the vegetable mixture with the cooked macaroni, cubed mozzarella, the remaining Parmesan and Romano cheeses, and the nutmeg. Spoon into the prepared baking dish, top with the remaining bread crumb mixture, and dot the top with the remaining butter. Bake until the top is golden brown, about 30 to 40 minutes.

- Preheat oven to 350*. Lightly spray a 9 X 9 X 2 casserole with cooking spray.
- In a small bowl, combine tomato puree, water, Italian seasoning, and 1/2 teaspoon of the garlic powder.
- In another bowl, combine cottage cheese, onion powder, and the remaining 1/2 teaspoon of garlic powder.
- Spoon 1/3 of the tomato mixture into prepared casserole dish. Place 1/2 of the macaroni, all of cottage cheese mixture, and 1/3 of tomato mixture on top.
- Add remaining macaroni and cover with remaining tomato mixture.
- Cover and bake for 1 hour. Uncover and top with mozzarella cheese. Bake uncovered for 5 minutes more or intil cheese is melted. Let sand for 10 minutes before serving.

I was looking for another type of macaroni and cheese dish and came across this one from Emeril Lagasse. I haven't made it yet but plan on trying it out on my crew at Thanksgiving. What's not to like about Cream and Cheese - the epitome of comfort food.

- In a heavy medium saucepan melt 4 tablespoons butter over low heat.
- Add the flour and stir to combine.
- Cook, stirring constantly for 3 minutes.
- Increase the heat to medium and whisk in the half& half a little at a time.
- Cook until thickened, about 4 or 5 minutes, stirring often.
- Remove from heat, season with salt, pepper, hot sauce and 4 ounces of the grated parmesean cheese.
- Stir until the cheese melts and is smooth.
- Cover and set aside.
- Preheat the oven to 350 degrees.
- Fill a large pot with water, cover and bring to a boil over high heat.
- Add salt to taste and add the macaroni, stirring.
- Return to a boil and cook for about 5 minutes or until very al dente (slightly undercooked).
- Drain in a colander and return the macaroni to the pot.
- Add 2 tablespoons butter and the garlic and stir to combine.
- Add the white sauce and stir until well mixed then set aside.
- Using the remaining tablespoon of butter, grease a 3 quart casserole or baking dish and set aside.
- In a large bowl combine 4 ounces of the remaining parmesean cheese, cheddar, fontina and gruyere cheeses, tossing to combine.
- Place 1/3 of the macaroni in the bottom of the prepared casserole dish.
- Top with 1/3 of the mixed cheeses.
- Top with another 1/3 of the macaroni and another 1/3 of the cheese mixture.
- Repeat with the remaining macaroni and cheese mixture.
- In a small bowl combine the bread crumbs, the remaining 1/2 ounce of grated parmesean cheese and the Essence.
- Sprinkle this over the top of the macaroni and cheese.
- Bake 40 to 45 minutes or until the macaroni and cheese is bubbly and hot and the top is golden brown.
- Remove from oven and let sit for 5 minutes before serving.
BAKED MACARONI
I suggested using a glass dish because you can see how brown the casserole is getting (and brown is a good thing). My family loves the crispy sides and topping.

- Mix together the flour, 1/4 cup butter and the milk.
- Add cheese chunks and allow to melt (continually stirring and watching so cheese does not burn).
- Add the salt and pepper.
- Combine the ziti and cheese sauce.
- Put into casserole dish (I use glass) which has been well buttered with the remaining 1/4 stick of butter (use it all).
- Mix Ritz with enough butter to moisten the crackers (amount is entirely up to you, but make enough to cover the casserole completely) The more the better.
- Bake@ 350 degrees for approximately1 hour.
- Serve immediately.
