This salad is very easy to make and always requested by my family. People think they are eating something special because it is made with hearts of palm. Best if chilled overnight.

3 (14.25 ounce) cans hearts of palm, drained and sliced
2 (.7 ounce) packages dry Italian-style salad dressing mix
½ cup white wine or champagne vinegar
6 tablespoons water
1 cup olive oil
1 (8 ounce) jar green olives, sliced
1 (6 ounce) can sliced black olives
2 tablespoons bacon bits

Steps:

  • In a medium bowl, whisk together the dressing mix, vinegar, and water until well blended. Whisk in olive oil. Add hearts of palm to the bowl, and stir to coat. Cover and refrigerate for at least one hour or overnight.
  • Before serving, sprinkle the green and black olives, and bacon bits over the salad.

2 medium tomatoes, seeded & chopped
3 garlic cloves, finely chopped
2 green onions, chopped (use white & green parts)
2 tablespoons extra virgin olive oil
salt and pepper (Use fresh cracked pepper)
2 ounces parmesan cheese, freshly shaved
2 tablespoons fresh basil, chopped

Steps:

  • Cut the hearts of palm into 1/2" wide pieces Combine all but the parmesan ingredients in a large bowl.
  • toss and allow to sit at room temperature for 30 minutes allowing the flavors to blend Serve with shavings of Parmesan on top of the salad.

1 small garlic clove, minced

3 tablespoons extra virgin olive oil
2 tablespoons white wine vinegar
1/4 teaspoon Dijon mustard
1/4 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 (14 ounce) can hearts of palm, drained and sliced
1/3 cup red bell pepper, diced
1/2 cup artichoke heart, drained and quartered
1/3 cup kalamata olive, pitted and halved
1 (6 ounce) package mixed salad greens
2 hard-boiled eggs, sliced
8 -10 cherry tomatoes, halved

Steps:

  • Combine the dressing ingredients in a covered jar and shake vigorously to mix.
  • For the salad, combine the hearts of palm, peppers, artichoke hearts, and olives in a bowl.
  • Pour the dressing over and mix well; refrigerate for at least 1 hour.
  • When ready to serve, place the mixed greens on chilled salad plates, divide the heart of palm mixture evenly over the plates and arrange the hard-boiled egg slices and tomatoes over the top.

1 papaya ripe, seeded, pared and sliced
1 1/2 cups avocados ripe, peeled and sliced
1/4 cup pimientos, coarsely chopped

Steps:

  • 1. Chill watercress and Bibb lettuce while preparing salad ingredients. 2. Blend mayonnaise, lemon or lime juice, chili sauce, hot pepper sauce, coriander and allspice together. Gently fold 2 or 3 tablespoons dressing into hearts of palm slices to moisten set aside. Place lettuce on individual plates. Arrange papaya and avocado slices in an attractive pattern surround with watercress. Spoon hearts of palm onto fruit and top with chopped pimiento. Pass remaining dressing or pour over just before serving.

A salad from Costa Rica, I found this recipe while search for recipes that use some of the odd ingredients that have collected in my pantry. The result is a light crisp salad which is refreshing and not at all heavy. Hearts of palm taste a bit like artichoke hearts but have a touch more crunch like a water chestnut.

2 (16 ounce) cans hearts of palm
1/2 cup chopped red bell pepper
1/2 cup chopped yellow bell pepper
1 tablespoon chopped parsley
1 tablespoon fresh lemon juice
1 tablespoon Dijon mustard
2 tablespoons low sodium chicken broth (remove fat) or 2 tablespoons vegetable broth
1 tablespoon olive oil
ground pepper
salt, very small amount (optional)
lettuce leaf

Steps:

  • Drain the hearts of palm, cut them into half inch pieces, and put them into a large bowl. Stir in the chopped red and yellow pepper along with the chopped parsley.
  • To prepare the dressing, whisk together the lemon juice, mustard, chicken or vegetable broth, and olive oil in a small bowl.
  • Drizzle the dressing over the hearts of palm mixture and toss gently.
  • Season to taste with salt (optional) and pepper.
  • For best results, let the ingredients sit on the counter for 15-30 minutes before serving. Line a serving bowl with lettuce leaves, spoon the salad on top and serve.

3 tablespoons dry white wine
1 tablespoon thinly sliced scallion greens

Steps:

  • Shred the hearts of palm by cutting them lengthwise in very thin strips. Toss with the white wine and scallion greens. Marinate 30 minutes before serving.
  • Final presentation: On a large, colorful, round platter, arrange the papaya salad on one side in a semicircle. Arrange the hearts-of-palm salad on the other side. Mound the okra salad in the center. Serve with grilled fish or seafood, or alone, as a first course.
