THE BEST TIRAMISU
Making this classic Italian dessert is surprisingly easy. We start the custard with a traditional Marsala-flavored zabaglione -- a cooked mixture of egg yolks and sugar. Then we lighten it with tangy mascarpone cheese, which provides just the right creamy, mousse-like texture. Once assembled, the ladyfingers soften sufficiently after 4 hours in the refrigerator, but if you can wait longer, the flavors will meld even more.

- For the mascarpone custard: Add the egg yolks, sugar and Marsala to a medium heatproof bowl and whisk to combine. Set the bowl over a medium saucepan of gently simmering water (do not allow the bowl to touch the water). Whisk constantly until the mixture is pale, hot to the touch and has doubled in volume, 4 to 6 minutes, scraping down the sides of the bowl occasionally with a rubber spatula. (This can be done with an electric mixer to speed up the process.) Remove from the heat and continue whisking until slightly cooled, about 1 minute. Whisk in the mascarpone cheese until combined. Refrigerate until ready to assemble.
- To assemble: Stir together 1 1/4 cups hot water, espresso powder and 3 to 4 tablespoons Marsala in a liquid measuring cup. Evenly divide the mixture between two medium bowls. Dust the bottom of an 8-by-8-inch baking dish with 1 teaspoon cocoa powder.
- Working one at a time, dip half of the ladyfingers into one bowl of the espresso mixture for 2 seconds per side, until soaked but not soggy. Arrange them over the cocoa powder in one layer, breaking up as needed to fill in any gaps. Pour any remaining liquid from the first bowl over the layer of ladyfingers. Spread half the mascarpone custard over the ladyfingers. Repeat the process with another layer of ladyfingers and the remaining bowl of espresso mixture, then spread with the remaining mascarpone custard.
- Cover with plastic wrap and refrigerate for at least 4 hours or up to overnight. Sift the remaining 1 tablespoon cocoa powder over the top just before serving.

- Combine almond flour and salt in a medium mixing bowl.
- Whisk together remaining "wet" ingredients in a small mixing bowl.
- Pour wet over dry and mix well.
- Loosely press half of the mixture into a 2-cup glass bowl. (try not to compact it too hard)
- Set aside while you prepare the "custard"
- Mix together all ingredients in a small mixing bowl.
- Spread half the custard evenly over the first layer.
- Press the other half of "ladyfingers" into a disc identical to the first layer. Lay it on top of the "custard."
- Spread the remaining "custard" on top.
- Sift on cocoa and garnish with chocolate shavings.
- Cover and refrigerate for about 30-45 minutes to set.

HEALTHY TIRAMISU (NO, REALLY!)
Low fat tiramisu that will impress your guests all the same. Serve in individual wine glasses with long teaspoons. If desired, the ingredients can be tweaked to suit individual tastes e.g. add nuts, increase sugar etc. Don't be intimidated by the long list off instructions, they are mostly to detail how to put the tiramisu together. Can be made a day ahead. Enjoy!

- Combine quark and sugar in a bowl. Set aside.
- Combine coffee and kahlua in a separate bowl.
- Prepare 6 large,clean wine glasses. In the bottom, place one large tablespoon of the quark mix. On top of this place a medium sized amount of berries, just enough to cover.
- Break the sponge finger in half. Dip 4 halves into the bowl of coffee mix until soaked through. Remove and place on top of berries. Add a pinch off chocolate. Repeat until the glass is filled, at least twice.
- Top off with an extra layer of quark, a few berries and a generous grating of chocolate.
- Repeat with the rest of the glasses and chill until serving.

HEALTHIER TIRAMISU
This doesn't require even a minute of cooking - just assembling ahead of time. Be sure to use mascarpone cheese, a naturally sweet Italian cream cheese for whih there truly is no substitute. You can find it in Italian delis and large supermarkets. (But, of course- be sure to use the "lighter" ingredients as listed to ensure that this truly is a healthier recipe). HINT: To make Chocolate Tiramisu, use a fat-free marble sponge cake instead of the regular sponge cake.

- In a large bowl, using an electric mixer on low speed, beat the mascarpone and cream cheese. Beat in the confectioners' sugar until blended. Fold in the whipped topping.
- In a measuring cup, stir together the espresso or coffee and coffee liqueur.
- Using a bread knife or long serrated knife, cut the cake horizontally into 8 slices. (Don't worry if the slices break. You will be able to use them.) Arrange half of the cake slices evenly on the bottom of a 10"x10" pan. Using a spoon, drizzle half of the coffee mixture evenly over the cake. Gently spoon half of the cheese mixture evenly over the cake layer. Repeat layering with the remaining cake slices, coffee mixture, and cheese mixture. Sift the cocoa over the top of cheese. Cover and chill for at least 8 hours, or overnight.
