Earthy shiitakes, fresh herbs, crunchy walnuts, and chewy dried cranberries all sing together in perfect harmony to bring together this lighter answer to everyone's favorite holiday side.

Number Of Ingredients 14

1 pound whole-wheat Italian bread, cut into 1-inch pieces
3/4 cup walnuts, coarsely chopped
2/3 cup dried cranberries
1 tablespoon olive oil
1 small onion, finely chopped
1 medium celery stalk with leaves, chopped fine (about 1/2 cup)
8 ounces shiitake mushrooms, cleaned, stems removed, and caps chopped
1 Granny Smith apple, cored and diced
1/3 cup fresh parsley leaves, minced
1 tablespoon fresh sage leaves, minced
1 tablespoon fresh thyme leaves, minced
Coarse salt and ground pepper
3 cups reduced-sodium chicken broth (you may not need to use it all)
Olive-oil spray (optional)

Steps:

  • Preheat oven to 400 degrees with oven rack in middle position. Place bread on a rimmed baking sheet and bake, tossing occasionally, until crisp, about 10 minutes. Transfer to a large bowl along with walnuts and dried cranberries; set aside.
  • In a large nonstick skillet, heat oil over medium. Add onion, celery, and shiitakes and cook, stirring occasionally, until vegetables have softened, about 5 minutes. Add apple and continue to cook until almost tender, about 5 minutes. Add parsley, sage, and thyme and cook, stirring, until fragrant, about 30 seconds. Remove from heat; season with salt and pepper.
  • Add onion mixture to bowl with bread mixture; stir to combine. Add enough of the broth to thoroughly moisten the bread mixture without soaking it (there shouldn't be any excess broth in the bottom of the bowl). Spoon stuffing into a 2-quart casserole dish, cover with foil, and bake 20 minutes. Uncover, mist the top of the stuffing with olive-oil spray, if desired, and bake until golden brown, about 15 minutes more
  • To cook in turkey: Moisten the bread mixture with only 1 1/2 cups of the chicken broth and spoon half of the mixture into the turkey; cook turkey as preferred. For the rest of the bread mixture, add more of the broth to moisten, being careful not to soak (see above). Transfer the remaining stuffing to a 1-quart baking dish or 8-by-8-inch baking pan. Cover with foil and proceed as above.

Get set for a Thanksgiving feast and bake this special stuffing for the celebrations. You can make it with any stale bread, but sourdough works well

250g butter, plus extra for the dish
500g stale bread, cut into 4cm cubes (we used sourdough)
2 onions, finely chopped
4 celery sticks, finely chopped
handful of sage leaves, finely chopped
4 rosemary sprigs, needles picked and finely chopped
400ml chicken stock
2 eggs

Steps:

  • Heat the oven to 140C/120C fan/gas 1 and lightly butter a deep 20 x 30cm baking dish. Tip the bread out onto a baking sheet and bake for 40 minutes until crisp and dry.
  • Meanwhile, melt three-quarters of the butter in a large pan over a medium heat and cook the onion and celery with a pinch of salt for 10 minutes until softened. Stir in the herbs, then season with plenty of black pepper. Tip in the bread, toss to combine, then pour in half the chicken stock and toss again. Tip the stuffing mixture into the prepared dish and leave to cool slightly.
  • Turn the oven up to 180C/160C fan/gas 4. Whisk together the remaining stock and the eggs, then pour this evenly over the stuffing in the dish. Dot the remaining butter over the top, then cover with foil and bake for 30 mins before removing the foil and baking for another 30 mins until golden.

Everyone loves this even die-hard carnivores and people who dislike healthy food. You can play around with quantities or substitute as you see fit. I've never made the same batch twice. You can use any bread you like: wheat, corn, spelt, rye, pumpernickel, potato etc. Day old (leave out on the counter for a day) or toasted bread works best. If you use fresh herbs just increase the amount you use. This may seem like a labor intensive recipe it's just really a lot of ingredients. Plus, since I don't cook a turkey, this is my main to-do on Thanksgiving. I look forward to making this every year. I start it in the morning while the parade is on TV and the house fills with the wonderful smell of all the fresh, seasonal ingredients. Very healthy too!

1/2 cup butter (1/2 stick) or 1/2 cup oil
10 cups bread, diced (12 slices of bread)
1 1/2-2 cups celery, sliced
1 cup wild rice
1 lb chestnuts
8 ounces mixed mushrooms (oyster, cremini, button, portobella)
1 large onion
1 apple, peeled and diced
1 cup prune, diced
1 1/2 cups broth
1 fennel bulb, sliced (optional)
1/2 cup salsify, peeled and sliced (optional)
1 -2 egg (optional)
1/4 cup fresh sage, minced
2 tablespoons fresh marjoram or 2 teaspoons dried marjoram
3 -4 garlic cloves, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon herbamare seasoning salt (or to taste)
1 teaspoon black pepper

Steps:

  • Prepare all of your veggies and herbs so there ready, reserving scraps. Put scraps (onion and celery ends, apple peels and core, herbs stems etc.) into a pot and cover with 1 quart of water to make stock. Simmer while you are preparing the rest of the stuffing.
  • Preheat the oven to 400.
  • Make an X in each chestnut with a sharp knife (if you are using fresh), sprinkle with oil and salt and mix. Place in an oven safe dish and roast at 400 for 20 minutes. Let cool.
  • Melt butter or oil in a large dutch oven or pot over med-high heat. Add onions and garlic and cook for 5 minutes.
  • Add celery, fennel, apple, prunes and salsify. Add dried herbs if you are using them. If fresh don't and them yet. Salt and pepper lightly, mix well and cook for another 5 minutes.
  • Strain broth.
  • Add wild rice to veggie mixture and 1 1/2 Celsius broth. Lightly salt and pepper again. Stir and cover, cooking over low heat for about 30 minutes, mixing occasionally. Add mushrooms, fresh herbs and a last salt and peppering, mix and cook another 10-15 minutes (or until wild rice is cooked). During this process you may add more broth if needed to cook the rice.
  • Remove from heat and let sit 10 minutes uncovered.
  • Separately, beat egg(s) if using and mix into the bread cubes. Add veggie/wild rice mixture and chestnuts to the bread/egg mixture and combine thoroughly. At this point you may pour into a casserole dish, cover and chill until using.
  • Before serving, bake uncovered in a 350°F oven for about 20 minutes or until slightly golden and crispy on top. Serve.
