I can't remember why I call this my New Orleans coleslaw now (I've been making it, or a version of it, for so long), but I think it has something to do with all the wonderful pecan trees I saw when I was there. For US cup measures, use the toggle at the top of the ingredients list.

Number Of Ingredients 11

1 Savoy or white cabbage (about 1kg / 2lbs before trimming)
2 carrots
2 sticks celery
4 spring onions
200 grams mayonnaise (preferably organic)
4 tablespoons buttermilk
2 tablespoons maple syrup
2 teaspoons cider vinegar
100 grams pecan nuts (fairly finely chopped)
salt (to taste)
pepper (to taste)

Steps:

  • Trim and shred the cabbage, either by hand or with a food processor. Peel and grate the carrots, and finely slice the celery and spring onions. Whisk together the mayonnaise, buttermilk, maple syrup and vinegar and coat the shredded vegetables with this dressing. Season, and toss through the chopped nuts.

1 head white cabbage or 1 head savoy cabbage, weighing about 2 lbs before trimming
2 carrots
4 scallions
2 stalks celery
1 cup mayonnaise (best-quality, preferably organic, store-bought)
1/4 cup buttermilk
2 tablespoons maple syrup
2 teaspoons apple cider vinegar
salt and pepper
2/3 cup pecans, fairly finely chopped

Steps:

  • Trim and shred the cabbage; you can do this either by hand or with a food processor.
  • Peel and grate the carrots, and finely slice the scallions and celery. Toss all the vegetables together in a bowl.
  • Whisk together the mayonnaise, buttermilk, maple syrup, and vinegar and coat the shredded vegetables with this dressing.
  • Season to taste with salt and pepper and toss in the chopped nuts.

An easy, packed with nutrition and delicious lectin-free side dish.

Number Of Ingredients 10

1/2 medium white/green cabbage, finely sliced
1/4 small red cabbage, finely sliced
2 small to medium carrots, grated
4-5 spring onions, sliced at an angle
2 celery stalks, finely sliced at an angle
one generous handful of slightly roasted pecans
4-5 tbsps avocado mayonnaise
1 tbsp extra virgin olive oil
1 tbsp apple cider vinegar
salt and pepper to taste

Steps:

  • Roast the pecans for about 8 minutes at 350F.
  • Prepare all the veggies and mix them with the rest of the ingredients. Taste and add more mayo, apple cider vinegar if needed and adjust for salt and pepper.
  • Ideally, store in the fridge for a couple of hours before eating.

On a trip to New Orleans, we had lunch at a delightful little restaurant named the Ugly Dog Saloon and BarBQ. Those at our table loved their Cole Slaw and it's delicious dressing. The waitress graciously copied the recipe for us from the kitchen wall. Her version started with one gallon of mayonnaise, but I have scaled it down! Cooking time is for chilling, if desired.

1/4 cup mayonnaise (the real stuff, not low-fat)
1 tablespoon garlic pepper seasoning (Lawry's is one)
3/4 teaspoon garlic powder
1 teaspoon black pepper
2 tablespoons soy sauce
1 tablespoon molasses, plus
1 teaspoon molasses
3 cups red cabbage, very coarsely chopped (or both) or 3 cups green cabbage (or both)

Steps:

  • In small bowl, blend all ingredients, except the cabbage; whisk to combine thoroughly.
  • Chop cabbage into 3/4 to 1 inch chunks (authentic Ugly Dog Style!).
  • Combine with dressing.
  • Serve immediately or chill for an hour.
