This Healthy Homemade Sugar-Free Vanilla Bean Syrup has all the flavor of real vanilla beans but without the nasty ingredients... just pure vanilla goodness!

- Add all of the ingredients to a blender and puree until smooth and even. Give it a taste and add more stevia if you like.

- Combine the sugar and 1/2 cup water in a small saucepan. Bring to a boil over high heat and cook until sugar has melted, about 3 minutes. Add the vanilla bean and seeds. Let cool to room temperature, then remove the vanilla bean. Transfer the syrup to a bowl, cover and chill until cold.

- Place all the ingredients in a food processor and puree until smooth (you can chop up the vanilla beans if you want to save some time).
- Press on the vanilla bean "pulp" to get as much liquid out. Pour the strained vanilla paste liquid into a jar and seal tightly (discard the pulp, or you can reuse it to steep in homemade vanilla extract). Store the vanilla paste in the fridge.
