Yield Makes about 48 cookies

Number Of Ingredients 8

1 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
8 tablespoons (1 stick) unsalted butter, room temperature
1 cup packed light-brown sugar
1 large egg
1/2 teaspoon pure vanilla extract
1 cup hulled sesame seeds, toasted

Steps:

  • Heat oven to 350 degrees. Line four baking sheets with parchment paper, and set aside. Sift together flour, salt, and baking soda, and set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar on medium speed until light and fluffy. Add egg and vanilla, and beat until combined. Add reserved flour mixture, and beat until combined. Add toasted sesame seeds, and beat until incorporated.
  • Using a spoon, drop cookie batter, about 1 tablespoon at a time, onto prepared baking sheets, allowing at least 2 inches between cookies for spreading.
  • Bake until golden, 6 to 8 minutes. Remove from oven, and cool on a wire rack.

1 pound (4 sticks) unsalted butter, room temperature
1 1/2 cups sugar
3 cups all-purpose flour
2 cups shredded sweetened coconut
1 cup sesame seeds
1/2 cup finely chopped pecans

Steps:

  • Preheat oven to 300 degrees. Line baking sheets with Silpats (French nonstick baking mats).
  • In the bowl of an electric mixer fitted with the paddle attachment, beat butter and sugar on medium speed until light and fluffy, about 2 minutes. Add flour a half cup at a time, mixing on low speed until well combined.
  • Remove bowl from mixer; with a wooden spoon or your hands, stir in coconut, sesame seeds, and pecans. Divide dough into thirds. Roll into logs about 1 1/2 inches in diameter. Wrap each log in plastic, and refrigerate until very firm, about 2 hours.
  • Using a sharp knife, cut logs into 1/4-inch-thick slices. Transfer to prepared baking sheets, about 1 1/2 inches apart. Bake until edges are golden, 20 to 30 minutes. Transfer sheets to a wire rack to cool. Cool for 5 minutes on baking sheets before transferring cookies to wire racks to cool completely.

2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon fine salt
1 1/2 sticks (6 ounces) unsalted butter, at room temperature
1 cup granulated sugar
1/3 cup light brown sugar
1/4 cup tahini (ground sesame paste)
1/2 teaspoon pure vanilla extract
1 large egg
1/2 cup sesame seeds, white, black or a combination of both

Steps:

  • Whisk the flour, baking powder and salt together in a medium bowl. Set aside.
  • Beat the butter and sugars in a large bowl using an electric mixer until well combined, about 3 minutes. Add the tahini, vanilla and egg and beat until light, about 3 minutes. Stir in the flour. Form the dough into two 12-inch logs that are 1 1/2 to 2 inches in diameter, wrap in plastic wrap and refrigerate until very firm, 4 hours and up to overnight.
  • Preheat the oven to 325 degrees F. Line two or three baking sheets with parchment paper.
  • Remove one log of dough from the refrigerator and slice into 1/4- inch-thick slices. Place the sesame seeds on a plate. Coat the cookies in sesame seeds by pressing them lightly into the seeds, and place them on the prepared baking sheets. Bake until lightly golden around the edges, about 12 minutes, rotating the baking sheets top to bottom and front to back halfway through cooking. Cool the cookies on the baking sheet for 10 minutes, and then transfer to a rack to cool completely. Repeat with the remaining log.

½ cup unsalted tahini
½ cup natural, unsalted creamy almond butter
1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons warm water, whisked together, set for 15 minutes)
¼ cup + 3 tablespoons coconut sugar
2 tablespoons coconut flour
¾ teaspoon baking soda
½ teaspoon pure vanilla extract (optional)
¼ teaspoon salt (optional)
¼ cup sesame seeds

Steps:

  • Preheat oven to 350°F. Line a baking sheet with parchment paper or greased foil. Set aside.
  • In a medium bowl, add all ingredients except sesame seeds. Using a rubber spatula, stir and fold until thoroughly mixed.
  • Pour sesame seeds into a shallow bowl. Using a medium cookie scoop, scoop and roll cookie dough into balls. Drop each ball into the bowl of sesame seeds. Roll and press until all dough balls are fully coated in seeds.
  • Place cookie dough balls onto the baking sheet, spaced evenly apart, with enough room to spread quite a bit-these cookies will bake up big. Using the palm of your hand or a spoon, gently flatten cookies to desired thickness. If desired, press together any large cracks that form around the edges of cookies-some cracks are natural & pretty!
  • Bake for 10-14 minutes. Mine took 12 minutes. Place cookie sheet on a cooling rack, and allow cookies to cool directly on the sheet for 15-20 minutes-do not remove from sheet for at least 15 minutes, as cookies are fragile. Then, using a spatula, gently transfer cookies directly onto the cooling rack to cool for about 30 minutes, or until completely cooled. Enjoy! Storing notes below.

1/2 cup sunflower seeds, raw and ground
1/4 cup tahini
1/4 cup sesame seeds, toasted
1/4 cup honey
1/2 cup rolled oats
1/4 cup whole wheat flour
1 egg

Steps:

  • Mix together coconut, sunflower seeds, sesame seeds, oats and salt.
  • Add tahini, honey and egg.
  • Mix in flour to form a firm dough, adding more flour if needed.
  • Roll into a sausage shape, about 1 1/2 inches in diameter.
  • Place in fridge for 30 minutes, or place in freezer for 10 minutes.
  • Cut in thin slices (just less than a half inch) and place on baking tray.

Butter mochi is a Hawaiian cake that is sweet and gooey, not unlike like Japanese mochi. Rice flour is a core pantry ingredient in most Japanese households, including mine, so I almost always have the ingredients on hand to whip up this cake when the mood (or need) strikes. Just like this recipe, I'm a little bit Japanese and a little bit American. The combination of American ingredients like butter and evaporated milk with Japanese ingredients like rice flour and sesame seeds feels familiar and comforting to me. Butter mochi can be baked plain or topped with coconut and black and white sesame seeds or slices of fruit like strawberries, mango or peaches. You can serve butter mochi with ice cream if you like as well.

4 tablespoons unsalted butter, plus more softened butter for the pan and for slicing
6.5 ounces canned full-fat unsweetened coconut milk
8 ounces mochiko (glutinous/sweet rice flour) (65 grams)
1 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon sea salt
2 large eggs
1 cup evaporated milk
1 teaspoon pure vanilla extract
1 cup unsweetened coconut chips or flakes
1 teaspoon black sesame seeds
1 teaspoon white sesame seeds
1 teaspoon fleur de sel

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch-square cake pan or 10-1/2-by-7-inch cake pan with butter.
  • Put the 4 tablespoons butter in a medium saucepan and cook over medium heat until melted. Meanwhile, whisk the coconut milk to remove any lumps. Add the coconut milk to the melted butter and reduce the heat to low. Gently warm the mixture, stirring often, until just above room temperature and no lumps remain.
  • Whisk together the mochiko, sugar, baking powder and sea salt in a large bowl.
  • Whisk together the eggs, evaporated milk and vanilla in a medium bowl. Pour this mixture into the dry ingredients and stir until just combined. Add the melted butter-coconut milk mixture, whisking continuously, until fully incorporated and smooth with no lumps.
  • Pour the batter into the prepared pan and tap the pan on the counter a few times to remove any air bubbles. Evenly sprinkle the top with the coconut chips or flakes. Sprinkle with the black and white sesame seeds and finish with the fleur de sel.
  • Bake the mochi until it is set and golden brown on top, 1 hour 5 minutes to 1 hour 15 minutes. You can bake the mochi longer for a firmer texture, or for less time for a gooier texture. If using a glass or dark metal pan, subtract a few minutes from your baking time.
  • Transfer the pan to a wire rack to cool completely. Coat a knife with butter and cut around the edges to help the cake separate from the pan and prevent the cake from sticking to the knife. Serve the cake directly from the pan.

  • Line a baking sheet with parchment paper. Divide the cookie batter into 8 parts. Wet your hands and roll each portion into a ball. Place cookies on the parchment paper and gently flatten with the palm of your hand.
  • Bake until cookies are just starting to turn golden brown, approximately 12 minutes. Enjoy warm or room temperature.
