These peanut butter energy bars are made with natural ingredients, and there's no baking required! You can substitute sunflower seeds for the walnuts. Want more fiber? Add a little wheat germ. —Amy Crane, Richland, Michigan

1 cup creamy peanut butter
1 cup honey
4 cups quick-cooking oats
1 cup chopped walnuts
1/2 cup raisins
1/4 teaspoon salt

Steps:

  • In a large microwave-safe bowl, combine peanut butter and honey. Heat, uncovered, until warmed, 20-30 seconds. Stir until smooth; add remaining ingredients and stir until combined. Transfer to a lightly greased 13x9-inch pan; gently press mixture into pan. Cover and refrigerate until set, 1 hour or overnight. Cut into bars.

This is a bar recipe I found on a health and fitness site. The original recipe made it a protein bar, but when I made it (ages ago) I didn't have any so I left it out. If you want to make it a protein bar simply add 2 cups of protein powder and add an extra 1/2 cup of honey. This is a good bar for straight after an intense workout, but it tastes like a dessert so even if you're not active you can make it just as a snack bar or treat.

1 cup natural-style peanut butter
1 cup honey
3 cups dry uncooked old-fashioned oatmeal

Steps:

  • Combine peanut butter and honey in a large nonstick pot and warm up over a low heat until runny and mixed.
  • Mix in the oatmeal (and protein powder if using).
  • You don't want to cook it, just heat it up enough to stir everything together nicely.
  • Press into a 9x9-inch pan.
  • Let cool, then cut into 16 equal bars.
  • Wrap each bar in foil and store in plastic bags. - No need to refrigerate as the ingredients are natural.

1/2 cup dry roasted salted peanut
1/2 cup roasted sunflower seeds (or more peanuts or other nuts)
1/2 cup raisins (or other dried fruit)
2 cups uncooked oatmeal, old-fashioned or 2 cups uncooked instant oatmeal
2 cups toasted rice cereal (Rice Krispies)
1/4 cup toasted wheat germ (optional)
1/2 cup peanut butter (creamy or crunchy)
1/2 cup packed brown sugar
1/2 cup light corn syrup
1 teaspoon vanilla

Steps:

  • In a large bowl, mix together the first five ingredients, plus the wheat germ if desired, and set aside.
  • In a medium microwaveable bowl, combine the peanut butter, brown sugar and corn syrup; microwave on high for two minutes. Add vanilla and stir until blended.
  • Pour the peanut butter mixture over the dry ingredients and stir until coated.
  • For squares, pour the mixture into an 8 x 8-inch pan coated with cooking spray; for bars, spoon it into a 9 x 13-inch oblong pan. Press down firmly. (It helps to coat your fingers with margarine, oil or cooking spray.).
  • Let stand for about an hour to harden, then cut into squares or bars.

Cooking spray
1/2 cup honey
1/2 cup natural creamy peanut butter
2 tablespoons maple syrup
1 tablespoon canola oil
1/4 cup light brown sugar
1/4 teaspoon ground cinnamon
1 teaspoon vanilla extract
2 cups rolled oats
2 cups crisp brown rice cereal
1/4 cup toasted wheat germ
1/2 cup chopped roasted peanuts
1/2 cup chopped dried apricots
1/2 cup chopped dried figs
1/2 teaspoon kosher salt

Steps:

  • Spray a 9 by 13-inch baking dish with cooking spray and set aside.
  • In a small saucepan over medium heat, combine honey, peanut butter, maple syrup, canola oil, brown sugar, cinnamon. Stir and cook until mixture just begins to bubble, about 3 to 5 minutes. Remove from heat and stir in vanilla extract.
  • In a large bowl, combine oats, rice cereal, wheat germ, peanuts, apricots, figs and salt.
  • Pour peanut butter mixture over oatmeal mixture and stir gently with a spatula until well combined. Transfer to baking dish, cover with parchment paper and press firmly into dish. Allow to cool completely (will cool faster in the refrigerator). Cut into squares or bars.

1/2 cup peanut butter
1/2 cup oatmeal
1/2 cup sunflower seeds
1 cup raisins
1 tablespoon honey
1 tablespoon flax seed (optional)
1 tablespoon wheat germ (optional)

Steps:

  • Mix peanut butter, oatmeal, sunflower seeds, raisins, and honey.
  • Roll mixture into balls.
  • Mix equal amounts of flax seeds and wheat germ in a bowl and roll the balls in this mixture (optional).
  • Let balls sit in the refrigerator for at least 30 minutes.
  • Additional Notes:
  • You can make some substitutions with the ingredients. For example, substitute the raisins for chocolate chips or chopped nuts instead of sunflower seeds. There are many possibilities, just be careful and keep the ratios consistent.
  • Also, I used natural peanut butter which caused my mixture to be more dry. If this is the case add a little milk; about 1/2 tablespoon at a time.

  • Pour the peanut butter mixture over dry ingredients and stir until coated>.
  • Transfer mixture to prepared pan. Press down firmly. (helps to coat your fingers with cooking spray).
  • Let stand about 1 hour to harden or refrigerate.
