Crispy, rich red potatoes roasted with onion and bacon. These are really yummy, and great with steak...don't skimp on the butter.

- Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 inch casserole dish.
- Place potatoes in an even layer in greased dish. Sprinkle onion and bacon over potatoes, then dot with butter. Cover dish with foil.
- Bake in preheated oven for 45 minutes. Remove foil and stir potatoes. Turn oven to broiler setting and allow potatoes to brown for approximately 5 minutes, until crispy. You may need to stir every minute or so to achieve even browning. Serve immediately.

- Preheat a rimmed baking sheet in a 450 degrees F oven. Cut 3 large russet potatoes into wedges and toss with salt and 2 tablespoons vegetable oil; arrange cut-side down on the hot baking sheet. Roast until golden brown on the bottom, 30 minutes, then flip and sprinkle with 1 sliced garlic clove and 1 teaspoon each ancho chile powder and dried oregano. Roast 15 more minutes. TASTY OVEN FRIED POTATOES
I'm not sure where this easy and quick to fix recipe came from, but it rapidly became a family favorite. These go well with fish, chicken, steak or burgers. To aid in cleanup, I usually line the baking sheet/pan with foil before coating with oil.

Steps:
- Peel potatoes and cut into 1 inch cubes (can be cut smaller if you have little ones).
- Place potatoes in a large resealable plastic bag.
- Combine Parmesan cheese, salt, garlic powder, paprika and pepper; add to potatoes.
- Seal the plastic bag and carefully shake to coat the potatoes with the spice mixture.
- Coat a 15 x 10 inch pan with a thin coating of vegetable oil (do not use a vegetable oil spray).
- Spread potatoes evenly in a single layer in the pan.
- Bake uncovered at 375 degrees for 40 - 50 minutes until potatoes are tender.

- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and spray with vegetable cooking spray.
- In a shallow bowl combine oil and lemon juice. Dip potatoes in oil/lemon mixture and season with salt and pepper, to taste. Place on baking sheet.
- Bake in preheated oven for 20 minutes. Remove from oven and turn wedges over. Return to oven and continue cooking until crisp and brown on both sides, about 10 minutes more.
