Delicious open rye bread sandwiches, quick and easy to whip up for a healthy lunch at home!

Number Of Ingredients 12

3 slices of rye bread
1/2 avocado
lime juice
chilli flakes
radish
green pesto
boiled egg
chilli sauce
cherry tomatoes
olive oil
crushed garlic
fresh basil

Steps:

  • Avocado, Lime & Radish
  • Mash the avocado and spread it onto one slice of rye bread. Squeeze some lime juice on top and then add a few thin slices of radish.
  • Pesto & Boiled Egg with Chilli Sauce
  • Spread a teaspoon of pesto onto one slice of rye bread. Add a sliced boiled egg and then drizzle on some chilli sauce.
  • Tomato, Garlic & Basil
  • Chop in cherry tomatoes in half and add them to a bowl. Stir in crushed garlic, some torn basil leaves and a little olive oil and stir then add to the rye bread.
  • Season all three with salt and pepper.

Yield Makes 20-24 small sandwiches

Number Of Ingredients 10

12 small slices rye bread or 6 slices thin, firm bread
softened butter , for spreading
6 tbsp mayonnaise
2 tsp cucumber relish or piccalilli
2 slices ham , shredded
2 tbsp cream cheese
¼ cucumber , halved, peeled and thinly sliced
2 boiled eggs , halved and sliced
100g frozen north Atlantic prawns , defrosted
sliced radishes , dill sprigs and cress, to garnish

Steps:

  • Trim the crusts from the bread if you like and cut each slice into smaller pieces. Spread each slice with butter and lay out on a board.
  • Mix 2 tbsp mayonnaise with the cucumber relish and spread over a quarter of the buttered bread slices. Arrange the ham and the radishes over the top. Spread the cream cheese over another quarter and arrange the cucumber and dill on top. Mash the egg with 2 tbsp mayonnaise and spread over another quarter, then top with the cress. Mix the prawns with the remaining mayonnaise and spoon over the remaining bread slices, then grind over a little black pepper. Add a garnish of dill, if you like.

½ avocado
chilli paste
squeeze lime or lemon juice
rye bread
few slices smoked salmon (slices of roast chicken or turkey also work well)
lime wedges

Steps:

  • Mash the avocado with a little chilli paste and a squeeze of lime or lemon juice. Spoon over a slice of rye bread and top with the sliced smoked salmon and lime wedges.
  • This is also good with sliced roast chicken or turkey.

2 tablespoons chopped fresh chives
1/4 cup fresh dill, chopped
3 1/2 tablespoons creme fraiche
2 ounces cream cheese, softened to room temperature
Kosher salt and freshly ground black pepper
2 radishes (2 different colors if available)
2 slices rye bread
4 to 6 slices smoked salmon
2 sprigs fresh dill, for garnish

Steps:

  • Stir to combine the chives, dill, creme fraiche, cream cheese, salt and pepper in a medium bowl.
  • Wash the radishes in cold water, and then thinly slice them on a mandoline into a medium bowl of ice water. Let them sit for 5 minutes, and then drain and place on a towel to dry.
  • To assemble the sandwiches, spread 1 to 2 tablespoons of the herb cream cheese over the slices of bread. Top with the smoked salmon, another tablespoon of herb cream cheese, sliced radishes and a sprig of dill.

1 lb hot Italian sausage
1 lb ground beef
1 -2 drop Tabasco sauce (more if you prefer)
1 lb Velveeta cheese
1 package miniature party rye rounds

Steps:

  • Brown sausage and ground beef.
  • Chop in skillet till in fine pieces.
  • Drain.
  • Add tabasco and Velveeta cheese and mix until melted.
  • Spread on the small party rye bread.
  • Bake at 300 degrees until hot, usually 10-15 minutes.
  • These are easy to prepare in advance.
  • freeze then, when needed pop them into the oven for impromptu parties.
