Classic comfort diner food, just got a make-over with this Open-Faced Tuna Melt Sandwich!

Steps:
- Combine tuna, celery, carrots, onion, mayonnaise, vinegar, salt and pepper.
- Heat a large skillet over low heat.
- Spray skillet with oil, and place two slices of bread on top.
- Top bread with cheese, then tuna salad and tomato. Cook on low heat until cheese melts and bread gets toasty.
- Serve immediately.

- Put the eggs in a saucepan and cover with cold water by 2 inches. Bring to a simmer over medium-high heat and cook 8 minutes. Remove with a slotted spoon to a bowl of ice water to cool, then peel and slice.
- Meanwhile, put the green beans in a microwave-safe bowl with 1/2 cup water and a pinch of salt. Cover loosely with plastic wrap and microwave until tender, 2 to 3 minutes. Drain and rinse under cold water. Cut the green beans in half.
- Drain the tuna and toss with the green beans, scallions, bell pepper, parsley, olives, lemon juice, 3 tablespoons olive oil, 1/4 teaspoon salt, and pepper to taste.
- Lightly toast the bagels. Layer the tomato slices, tuna salad and hard-boiled eggs on the bagel bottoms. Drizzle with olive oil and close with the bagel tops.

This is a favourite with my sister-in-law, although the tomato was my addition. I actually prefer cold tuna salad sandwiches, but this makes a nice change from that.

- Preheat oven to 350F; have ready an ungreased baking sheet.
- In a mixing bowl, combine tuna, onion, pepper, mayo and worcestershire; taste and add salt and/or pepper if you wish.
- In the toaster, toast bagel halves; place all 4 on baking sheet.
- On a bagel half, place one slice tomato, then one-quarter of tuna mixture, then 1 slice cheese; repeat with other bagel halves.
- Bake for 5 minutes, or until cheese melts.
- If you wish, quickly broil to brown melted cheese.
- Note: if you like tuna melts real cheesy, use one slice of swiss AND one slice of mozzarella!

- In a bowl, combine your tuna, mayo, mustard, onion, parsley, garlic powder, cayenne pepper (optional) and a squeeze of lemon juice. Check for seasoning and adjust accordingly, then place to one side.
- Assemble by placing a a slice of avocado on the bagel, then a tomato slice and repeat in a circular pattern. 4 slices of each should cover the surface (see video for reference).
- Season with a sprinkle a little salt & pepper and drizzle a bit of extra virgin olive oil. Top with tuna mixture then finish with a sprinkle of cheese.
