Wanting to improve on yet another childhood memory that's still vivid in my mind, I came up with these cookies. I've recreated many of my unhealthy childhood favorites in this book, only as healthy versions. What strikes me is how easy it is to make healthy desserts your kids will love without sacrificing taste. Instead of the hydrogenated fats and untold amounts of sugar that compromised the thumbprint cookies I ate as a kid every Sunday after church, I added naturally sweet honey, fiber-packed oats, and protein-rich peanut butter, then topped them off with fresh preserves for a tasty real fruit touch. My kids were excited when I put these fresh baked cookies in front of them, but the best part was watching Kenya react just as his mommy used to: by digging out the preserves first.

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup old-fashioned oats (not instant and not steel-cut)
1 stick (1/2 cup) unsalted butter, softened
1/2 cup honey or agave nectar
1 large egg
1 teaspoon pure vanilla extract
1 cup smooth peanut butter
About 2/3 cup jam, jelly, or preserves of your choice

Steps:

  • Preheat the oven to 350° F.
  • In a large bowl, combine the flour, baking soda, salt, and oats.
  • In a large bowl or stand mixer fitted with the paddle attachment, beat the butter and honey for 1 minute on medium speed.
  • Add the egg, vanilla, and peanut butter and beat 1 minute more, or until smooth.
  • Slowly add the dry ingredients to the wet, mixing to incorporate as you go.
  • Drop the cookie dough 1 tablespoon at a time onto baking sheets lined with parchment or a silicone baking mat and use your thumb or index finger to make an indentation in the center of each cookie.
  • Fill each indentation with about 1/2 teaspoon of jam, jelly, or preserves. Bake for 10 to 12 minutes, until firm. Cool on wire racks and serve. The cookies will keep in a covered container on the counter for up to 2 days or in the fridge for up to 1 week.

1 1/2 cups almond flour or almond meal
1/2 cup oat flour OR whole wheat flour (or additional almond flour)
¼ cup butter, room temperature
¼ cup maple syrup
1 tsp vanilla extract
½ tsp almond extract
¼ tsp salt
¼ cup jam of choice

Steps:

  • Preheat the oven to 350F.
  • In the bowl of a stand mixer, use the paddle blade attachment to combine all of the ingredients except the jam until it becomes a cohesive dough, about 1-3 minutes.
  • Using a small cookie scoop OR a tablespoon measuring spoon, scoop the dough onto a baking sheet lined with a silpat mat.
  • Wet your hands just a little bit and roll the dough into balls. Using a 1/2 teaspoon measuring spoon (tip: re-use the one you used to measure the almond extract!), make a small well in the middle of each cookie.
  • Fill the wells with about 3/4 teaspoon of jam.
  • Bake for 8-10 minutes, or until the edges are JUST slightly brown.
  • Let the cookies cool on the baking sheet for about 10 minutes before removing to a cooling sheet to cool completely.
  • Store the cookies at room temperature for one day, or covered in the refrigerator for up to 5 days.

1 1/2 Cups Quick Cooking Oatmeal

2/3 Cup Seedless Raspberry Jam

Steps:

  • Preheat the oven 350.
  • Line you baking sheets with parchment paper or spray with non-stick cooking spray.
  • In a mixing bowl, cream the butter, brown sugar, egg and vanilla.
  • Stir in the oatmeal and flour.
  • Place the chopped nuts in a shallow dish.
  • Put the chopped nut in a shallow dish like a pie plate.
  • Scoop out dough with a #40 scoop and roll the balls of dough through the nuts until the cookie dough is completely coated in nuts.
  • Place the balls on the prepared baking sheets.
  • Using your thumb or the back of a 1 tsp measuring spoon, make an indent in each cookie.
  • Fill each indent with jam.
  • Bake at 350 degrees for 12-15 minutes.
  • Cool and enjoy!

6 Ingredient Healthy Oatmeal Thumbprint Cookies are peanut butter and jelly flavored! These cookies are also vegan, gluten free and so yummy!

1 cup almond flour
½ cup gluten free old fashioned rolled oats
½ teaspoon baking soda
½ cup creamy natural peanut butter (Make sure it's nice and drippy. If it's thick and lumpy, it will not mix well.)
⅓ cup pure maple syrup
¼ cup your favorite jam

Steps:

  • In a mixing bowl, combine the almond flour, oats, baking soda, peanut butter and maple syrup with a rubber spatula.
  • Use a small cookie scoop. Roll and flatten the dough (see photo above) onto a cookie sheet.
  • Create a small well in the middle of each with a ½ tsp measuring spoon or your thumb. (Again, see photo above.)
  • Place ½ tsp of jam into each well.
  • Bake at 350 degrees F for about 8-10 minutes. Mine were perfect at 9 minutes.
  • Let the cookies cool completely on a cooling rack. Be gentle when transferring the cookies to the rack. They will harden as they cool.

My mother, Pauline, made really nice thumbprint cookies, but I never wrote down her recipe. I knew the ingredients, but unless you have the right proportions, you won't get that perfect melt-in-your-mouth texture. So, I did an image search and found a recipe that looked very similar, credited to a great-grandma named Mitzi. Since my last name is Mitzewich, that pretty much sealed the deal. In case you can't decide between a shortbread-focused cookie and a more jammy one, here's how to make both.

1 stick unsalted butter, at room temperature
⅓ cup unsifted powdered sugar
1 teaspoon vanilla extract
⅛ teaspoon almond extract
¼ teaspoon fine salt
1 large egg yolk
1 ¼ cups all-purpose flour
⅓ cup white sugar, or as needed
½ cup fruit jam, divided
1 cup powdered sugar, or as needed
1 tablespoon milk, or as needed

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Mix butter and powdered sugar together with a rubber spatula until creamy. Add vanilla extract, almond extract, salt, and egg yolk. Mix with the spatula. Add flour and blend until just combined.
  • Use a sorbet scoop to portion dough into 1/2-ounce (1-tablespoon) balls. Roll balls in a plate of white sugar to coat; roll again between your palms. Place several inches apart on a silicone-lined baking sheet. Flatten balls lightly with your fingers.
  • To make shortbread cookies with a little jam, poke a well into each cookie using the end of a thick wooden spoon dusted with powdered sugar or using one of your fingers. Fill cookies with fruit jam. Tap baking sheet against the counter to let jam settle.
  • Bake in the preheated oven until tops are barely blonde and bottoms are slightly golden, about 15 minutes. Let cool on a wire rack before icing.
  • Meanwhile, mix powdered sugar with a little milk until you have a consistency that will hold its shape when piped. Pipe icing on top of cookies in a zigzag pattern. Let sit for 15 minutes before serving.
  • For a more jam-forward cookie, press your thumb into the cookies to make large, shallow indentations. Spoon in jam. Tap baking sheet against the counter.
  • Bake until not quite golden brown, about 15 minutes. Let rest on pan for 5 minutes before transferring a wire rack. Dust with powdered sugar.

1/3 cup brown sugar, packed
1 egg
1/2 cup corn syrup (light or dark)
2 cups all-purpose flour

1 1/2 cups Robin Hood oats
1/3 cup sunflower seeds
1 cup chocolate chips (optional)
3/4 cup strawberry jam (I prefer Smuckers Squeeze No Sugar Added Strawberry Spread)

Steps:

  • Preheat oven to 350°F Line w baking sheets with parchment paper.
  • Beat first 4 ingredients together in mixing bowl. Add remaining ingredients and mix to combine.
  • Drop by tablespoonful onto prepared baking sheets. Using the tip of a wooden spoon or a small thumb, gently make an indentation in the cookie, making sure that the sides and bottom remain intact. Squeeze about 1/2 teaspoons of the spread into each cookie.
  • Bake in preheated oven 11-13 minutes, or until cookie is brown and jam is set.
  • Cool 10 minutes, then transfer to racks.

⅔ cup any flavor fruit jam

Steps:

  • Preheat oven to 300 degrees F. Grease cookie sheets.
  • Separate egg, reserving egg white. Cream butter or margarine, sugar, and egg yolk.
  • Add vanilla, flour and salt, mixing well.
  • Shape dough into balls. Roll in egg white, then walnuts. Place on cookie sheets about 2 inches apart. Bake for 5 minutes.
  • Remove cookies from oven. With thumb, dent each cookie. Put jelly or preserves in each thumbprint. Bake for another 8 minutes.
