THE BEST OATMEAL COOKIE BARS
These are the BEST Oatmeal Cookie Bars you'll ever bake! Soft, chewy, and loaded with rolled oats and chocolate, this is a great recipe the whole family will love! Super easy and no mixer required!

- Preheat oven to 350 degrees (F). Line an 9x13-inch baking pan with parchment paper or aluminum foil. Spray lightly with non-stick spray and set aside.
- In a saucepan over medium heat, melt the butter, then continue to cook it, stirring occasionally, until golden brown. Keep an eye here, you don't want burnt butter! Remove from heat and scrape the butter into a large heat proof mixing bowl.
- Whisk in both sugars and mix until well combined. Stir in the vanilla. Then add in the eggs and egg yolk, beating until combined. Stir in the milk.
- Using a rubber spatula, add in the flour, baking soda, salt, cinnamon, and rolled oats, mixing until just combined. Finally, fold in the chocolate chunks. Scrape the batter into the prepared pan.
- Bake for 24 to 30 minutes, or until the edges are firm and golden. Press extra chocolate chunks on top of the warm bars, if desired.
- Cool in pan for at least 1 hour before cutting. Sprinkle with flaky sea salt before serving, if desired.

- Preheat the oven to 350° F. Prepare your pan. Spray an 8×8 pan with cooking spray or line with parchment paper. I like to do both!
- In a medium bowl, mix together the dry ingredients. Oats, flour, baking soda, cinnamon, slat, and chocolate chips. Set aside.
- In a separate large bowl, mix together the wet ingredients. Eggs, nut butter, maple syrup, and vanilla. Mix with a spoon, rubber spatula, or fork until the ingredients are well blended.
- Slowly add the dry ingredients to the wet ingredient bowl, mixing until combined. Pour dough into the prepared baking dish and spread evenly.
- Bake in the preheated oven for 16-19 minutes. The bars will be set (ie, not jiggly when you shake the pan), and very lightly browned. I like the bars a little gooey in the middle, so bake according to your preference. Enjoy ????

- Preheat the oven to 180C/350F. Line an 8 x 8-inch square pan with parchment paper, reserving 1-2 inches of parchment paper over the sides, for easily removal.
- In a large mixing bowl, add all your ingredients, except for the chocolate chips, and mix well. Using a rubber spatula, fold through the chocolate chips, reserving a few to top the cookie bars with.
- Transfer the batter into the lined pan, adding extra chocolate chips on top. Bake for 15-17 minutes, or until just beginning to go golden around the pan.
- Remove from the oven and let sit for 10 minutes, before transferring to a wire rack to cool completely.

- Preheat oven to 350°. In a small saucepan, combine dates, water and sugar. Bring to a boil. Reduce heat; simmer, uncovered, until thickened and dates are tender, stirring constantly, 7-9 minutes. Remove from heat., In a large bowl, combine flour, oats, brown sugar, vanilla, baking soda, salt and almond extract. Cut in shortening until crumbly. - Preheat oven to 350°F Line an 8×8-inch baking pan with parchment paper (optional, but aids in getting cookies out of pan).
- Whisk together flour, sugar, brown sugar, baking soda, salt and spices in a large bowl.
- Make a well in the center of the flour mixture and stir in vanilla, egg and melted butter until smooth. Stir in oats and raisins until they are evenly distributed.
- Pour dough into prepared pan and spread into a even layer with a spatula or your fingers. Bake for 22-26 minutes, or until bars are set and the center no longer looks wet. Edges will be golden brown. Cool pan on a wire rack before slicing. Cut into rectangular bars to serve.
CRANBERRY OATMEAL BAR COOKIES
I always make this with cranberries but it could be made with almost any dried fruit. I adapted this recipe from a recipe in a mystery book by Joanne Fluke. This recipe can be doubled to make a 9 x 13 inch pan of cookies.

- Preheat oven to 350 degrees, rack in the middle position.
- Melt butter in a large microwave safe bowl.
- Add both sugars and let cool a bit.
- Add eggs, baking powder, baking soda, salt, cinnamon, nutmeg, and vanilla.
- Add flour and mix.
- Add the cranberries and oats and mix everything up. The dough will be quite stiff.
- With a spatula spread dough evenly into a greased 8x8 baking pan.
- Bake at 350 for 25- 30 minutes.
- Cut into bars when cool.
- These freeze well if you roll them in foil and put them in a freezer bag.
