MACARONI CHEESE

Macaroni cheese image

This twist on traditional macaroni cheese is, as it should be, all about the cheese!

Provided by Jamie Oliver

Categories     Mains     Cook with Jamie     Thanksgiving     American     Pasta & risotto

Time 35m

Yield 6

Number Of Ingredients 8

500 g quality macaroni
olive oil
½ a bunch of fresh marjoram or oregano (15g), leaves picked
75 g Parmesan cheese, freshly grated, plus extra for grating
75 g fontina or Taleggio cheese, roughly torn
75 g mascarpone cheese
1 whole nutmeg, for grating
1 small ball buffalo mozzarella cheese

Steps:

  • Preheat your oven to 200ºC/400ºF/gas 6.
  • Cook the macaroni in a pan of salted boiling water 2 minutes short of the timing on the packet instructions, then drain in a colander and reserve a little of the cooking water.
  • Heat the oil in a large heavy-based frying pan, add the marjoram or oregano and fry for a minute until it starts to crisp up, then turn off the heat.
  • Add your cooked pasta to the marjoram or oregano butter, along with a couple of spoonfuls of the reserved cooking water and the Parmesan, fontina or Taleggio and mascarpone.
  • Return to a medium heat and toss and stir around until most of the cheese has melted and you have a lovely gooey sauce - you may need to add a little more of the reserved cooking water.
  • Season to taste with sea salt and black pepper, then tip it all into an earthenware dish. Grate over a quarter of the nutmeg, tear over the mozzarella and sprinkle over the extra Parmesan.
  • Bake the macaroni cheese in the preheated oven for about 10 minutes, finishing up with a quick whack under the grill, until golden brown and crispy on top.

MACARONI AND CHEESE

Try Ree Drummond's creamy Macaroni and Cheese recipe from Food Network.

Provided by Ree Drummond : Food Network

Time 55m

Yield 6 servings

Number Of Ingredients 16

4 cups dried macaroni
1 whole egg
1/2 stick (4 tablespoons) butter
1/4 cup all-purpose flour
2 1/2 cups whole milk
2 heaping teaspoons dry mustard (more if desired)
1 pound sharp Cheddar, grated (not pre-grated cheese), plus more for baking
Salt
Seasoned salt
1/2 teaspoon ground black pepper
Optional spices: cayenne pepper, paprika, thyme
1 pound thick-cut peppered bacon
3 yellow onions, halved and sliced
3 tablespoons butter
8 ounces gorgonzola
Cooked sliders and/or macaroni and cheese, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook the macaroni until still slightly firm. Drain and set aside.
  • In a small bowl, beat the egg. In a large pot, melt the butter and sprinkle in the flour. Whisk together over medium-low heat. Cook for a couple of minutes, whisking constantly. Don't let it burn. Pour in the milk, add the mustard and whisk until smooth. Cook until very thick, about 5 minutes. Reduce the heat to low.
  • Take 1/4 cup of the sauce and slowly pour it into the beaten egg, whisking constantly to avoid cooking the eggs. Whisk together until smooth. Pour the egg into the sauce, whisking constantly. Stir until smooth. Add in the cheese and stir to melt. Add 1/2 teaspoon salt, 1/2 teaspoon seasoned salt and the pepper. Add any additional spices if desired. Taste the sauce and add more salt and seasoned salt as needed! DO NOT UNDERSALT.
  • Pour in the drained, cooked macaroni and stir to combine. Serve immediately (while it's still very creamy) or pour into a buttered baking dish, top with extra cheese and bake until bubbly and golden on top, 20 to 25 minutes.
  • Fry the bacon in a skillet over medium-high heat until slightly crisp, about 8 minutes. Remove from the pan and cut into bite-size pieces.
  • In a separate pan, cook the onions in the butter over a low heat until caramelized, 20 to 30 minutes, stirring occasionally.
  • Use a fork to crumble the gorgonzola.
  • Put the bacon, caramelized onions and crumbled gorgonzola into separate bowls. Serve as delicious toppings for both sliders and macaroni cheese.

HEALTHY MAC AND CHEESE

Healthy Mac and Cheese image

Easy Healthy Mac and Cheese swaps out copious amounts of heavy dairy for lightened up options - for a dish that is still creamy and comforting, but with a portion of the fat and calories! Even better, this stovetop version requires only one pot and 15 minutes to prepare.

Provided by Olena Osipov

Categories     Dinner

Time 14m

Number Of Ingredients 10

3 cups whole wheat elbow macaroni (uncooked)
3 cups vegetable or chicken broth (low sodium)
1 cup whole milk
2 tbsp butter (salted)
1/4 tsp garlic powder
1/4 tsp mustard (condiment)
3/4 tsp salt
Ground black pepper (to taste)
1 cup marble or cheddar cheese (shredded)
1/4 cup Parmesan cheese (shredded)

Steps:

  • In a medium pot, add broth, milk, butter, garlic powder, mustard, salt, ground black pepper and bring to a boil.
  • Add elbow macaroni and cook for 8-10 minutes, stirring every few minutes to prevent sticking. Cook until al dente or desired firmness and adding more milk or broth if you wish.
  • Turn off heat. Add marble cheese and Parmesan cheese in portions and stir between each until melted. That's it.
  • Serve immediately as mac and cheese tastes best fresh. Saucy, creamy and so comforting!
  • Top with your favorite hot sauce, everything bagel, Montreal steak spice, paprika, nutmeg, soy sauce and even honey. Or with leftover chopped bacon. I like to bake mine at 425 degrees F for 20 minutes. Way less mess.

  • Truffle Gnocchi Macaroni and Cheese. Share on Pinterest. Gnocchi are delicate potato dumplings you can douse in any pasta sauce. Here, of course, the sauce is a Swiss-cheddar-Parmesan mix that keeps the color light but the flavor rich.
  • Twice Baked Spaghetti Squash Mac ‘n’ Cheese. We love how the strings of spaghetti squash are so close to the real thing, you can use it to make any Italian dish a little lighter.
  • Quinoa Mac ‘n’ Cheese. This certainly doesn’t look like your traditional dish, but that doesn’t mean you won’t devour it just the same. In addition to using protein-rich quinoa, leeks and tomatoes are mixed in for extra flavor and nutrients.
  • Mac ‘n’ Cheese Zoodles. We’ve had zucchini noodles every other way; it would be a sin not to have them smothered in melted cheddar. Here you get not just cheddar but also cream cheese and goat cheese mixed in for a super silky consistency.
  • Sweet Potato Mac and Cheese. All you need are six ingredients to whip up this sweet yet savory dinner. Sweet potatoes may seem odd as pasta, but cook them quickly in a skillet, and they’ll be soft yet not mushy like baked taters.
  • Cheesy Baked Quinoa. This recipe takes its cheese commitment seriously. Feel free to toss some veggies or protein into the mix, just be sure you actually dive below the heavenly layer of cheese on top to actually eat the rest!
  • Stovetop Avocado Mac and Cheese. Share on Pinterest. Finally, our two favorite food groups come together. (Yes, we consider avocados and macaroni and cheese their own food groups).
  • Roasted Brussels Sprouts, Bacon, and Pepperjack Macaroni and Cheese. Many kids may turn their noses up at Brussels sprouts, but if you’re like us, you’ve grown to love these mini cabbage-like veggies.

  • Three-Cheese Macaroni Stuffed Peppers. Is it just us or does putting food inside a veggie makes it taste better? Well, with gruyère and both sharp and white cheddar, this one certainly tastes amazing.
