2 cups cooked rice (to yield this amount, you'll need approximately 2/3 cup of uncooked rice depending on the variety)
1 tablespoon olive oil
1/2 pound ground turkey
3 cloves garlic (minced)
1.5 tablespoons low sodium soy sauce
1 tablespoon ginger paste (or minced fresh ginger)
1 tablespoon chili paste
1 teaspoon sesame oil
1 teaspoon fish sauce
Sesame seeds
Chopped peanuts
Chili oil
Hot sauce
Sliced green onion
Sliced chili pepper

Steps:

  • Cook rice according to package instructions.
  • Meanwhile, to cook turkey, heat olive oil in a 10-inch or 12-inch cast-iron skillet over medium heat. Add the ground turkey and cook, breaking it into small pieces and stirring occasionally, until it's fully cooked through, about 8 to 10 minutes.
  • To cooked turkey, stir in garlic, soy sauce, ginger, chili paste, sesame oil and fish sauce. Cook for 1 to 2 minutes.
  • Divide the rice between two bowls, then top with the turkey mixture and garnish (if desired) to taste. Serve and enjoy!Note: To make things even more substantial, top with a fried egg and/or your favourite veggies.

I came up with this recipe by simply wanting a yummy, healthy soup with what I had in my fridge... added a little of this and that... and now I make it all the time!

1/2 lb ground turkey
2 cups rice, uncooked
2 carrots, peeled and chopped
2 celery ribs, peeled and chopped
1/2 medium onion, chopped
1 bell pepper, chopped
1 (4 ounce) can green chilies
4 cups chicken stock
4 cups water
3 tablespoons Knorr chicken bouillon
1 teaspoon pepper
1 teaspoon season salt
1 teaspoon cumin
1/2 teaspoon chili powder
1 teaspoon minced garlic clove

Steps:

  • Chop up all vegetables.
  • Saute ground turkey in the pot sprayed with Pam.
  • Spice turkey with season salt, pepper, cumin, garlic, and a little chili powder. Begin to brown.
  • Add vegetables and saute for 2 - 3 minutes.
  • Add can of green chiles and saute another 2 - 3 minutes.
  • Add 4 cups of chicken stock and 4 cups of water, and bouillon, and bring to a boil.
  • Once boiling, add rice.
  • Add a little more seasonings if desired.
  • Bring back to a boil, and then simmer for approximately 20 minutes or until the rice is tender.
  • Remove from heat and enjoy!

1 cup shredded zucchini (liquid squeezed out (measured before squeezing))
2 eggs (large)
4 large garlic cloves (grated)
2 tbsp onion flakes or powder
1 tsp oregano (dried)
1 tsp salt
Ground black pepper (to taste)

Steps:

  • Preheat oven to 375 degrees F and line 2 large baking sheets with unbleached parchment paper and spray with cooking spray. Or I love using silicone baking mats, no oil necessary. In a large bowl, add ground turkey, zucchini, eggs, garlic, onion flakes, oregano, salt and pepper; mix well with your hands.
  • Using small cookie scoop form 47 meatballs (it helps to dip hands in a bowl with cold water occasionally) and lay on baking sheets.
  • Bake for 15 minutes, turn and toss with spatula (mostly to get rid off of that ground turkey residue) and bake for 5 more minutes. Serve hot.
  • Serve hot as an appetizer or main dish.

1 large onion (chopped)
1 lb ground turkey
1 tbsp olive oil (extra virgin)
3 cups any short pasta
3 cups veggie or chicken stock (low sodium)
1 tsp salt
Ground black pepper (to taste)
1 lb broccoli florets
3 tomatoes (diced)
1-2 garlic cloves (grated)
Red pepper flakes (a pinch)
1/2 cup parsley (finely chopped)
1/2 cup Parmesan cheese (grated)

Steps:

  • Preheat large Dutch oven or pot on medium heat and swirl oil to coat. Add onion and saute for 3 minutes, stirring occasionally.
  • Add ground turkey and cook for 5 minutes, breaking into pieces and stirring with spatula.
  • Add pasta, stock, salt and pepper; stir and level with spatula. Then cover and cook on low heat for 10-12 minutes, checking after 10 minutes. Brown rice pasta and any gluten free pasta cooks faster than wheat.
  • When pasta is al dente (not too soft, so it doesn't become a mush), turn off heat and add broccoli, tomato, garlic and red pepper flakes. Stir, cover and let stand for 5 minutes.
  • Add parsley and Parmesan cheese and gently stir. Serve hot.

Steps:

  • Heat a heavy-bottomed pan over medium high heat.
  • Add coconut oil and brown ground turkey, breaking it up as it cooks, about 7 - 8 minutes. When cooked, remove from pot and set aside.
  • Add 1/2 cup water and diced Idaho® potatoes to the pot. Cover and reduce heat to medium. Let potatoes simmer for 8 - 10 minutes, until they have softened.
  • Uncover and add grated carrot, grated zucchini and apple. Stir to combine and cook for 2 - 3 minutes. Remove from heat.
  • Dice hard-boiled egg and add to pot. Add cooked turkey meat back to the pot, stir to combine.
  • Set aside to cool slightly before feeding to your pup.

1 lb lean ground turkey
1 cup diced carrots
1 cup diced celery
1 cup diced yellow onions
2 1/2 cups chicken broth
1 cup brown and wild rice blend
2 tbsp soy sauce
2 tbsp butter
1 tsp chopped chives

Steps:

  • Heat olive oil in a large skillet over medium-high heat.
  • Add the ground turkey to the skillet.
  • Add the diced carrots, celery and onions to the skillet.
  • Stir all of the ingredients together and crumble the ground turkey well as it cooks.
  • Once the turkey is fully cooked, add the chicken broth to the skillet.
  • Add the rice to the skillet.
  • Push the rice around until it is all submerged in the liquid.
  • Bring the liquid to a boil.
  • Once the liquid is boiling, place a lid on the skillet and reduce the heat to medium-low.
  • Leave the rice to cook, stirring occasionally, for 35 minutes.
  • After 35 minutes remove the lid from the skillet and stir well.
  • Add the soy sauce to the skillet and stir it into the rice.
  • Add the butter to the skillet and stir until it is melted.
  • Sprinkle the chives on top.
  • Serve and enjoy!

3 teaspoons of kosher salt, divided
1 1/2 teaspoons of cumin
1 teaspoon of dried oregano

1/2 teaspoon of cayenne
1 pound of ground turkey
2 cups of chicken stock
1 (14-ounce) can on kidney beans, drained and rinsed
1 (14-ounce) can of cannellini beans, drained and rinsed
1 (14-ounce) can of tomato sauce

Steps:

  • Heat the oil in a large dutch oven over medium-high heat. Once it's hot, add the diced onion and sauté for 10 minutes, stirring occasionally.
  • Add the minced garlic and allow it to cook for 30 seconds. Then add half the salt, the cumin, oregano, chili powder, and cayenne. Stir and sauté for 1 minute.
  • Add the ground turkey to the pot and break it up with the back of a spoon. Allow it to cook for 4 to 5 minutes or until browned.
  • Add the chicken stock, kidney beans, cannellini beans, and tomato sauce to the pot. Increase the heat and bring to a low boil.
  • Cover and allow to simmer for 30 minutes. Then remove the lid and stir. Allow the chili to simmer for another 20 minutes until reduced.
  • Serve immediately or save in the refrigerator for up to 4 days.
