Raisin Bran Muffins That Work image

I have always been disappointed when I've baked homemade bran muffins, but not anymore. These are moist and flavourful. I think the trick with the moistness is combining the bran with the wet ingredients, as no other bran muffin recipe I've tried had this step. I often cut this recipe in half and bake just 6 in my toaster oven. These freeze well, too.

Number Of Ingredients 12

2 eggs
1 cup 1% low-fat milk
1/2 cup canola oil
1/4 cup molasses
3/4 cup packed brown sugar
1/2 teaspoon vanilla extract
1 1/2 cups wheat bran
1 1/2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
1 cup raisins (or blueberries, unthawed if frozen)

Steps:

  • Preheat oven to 400F; prepare muffin pans by lining cups with paper muffin liners.
  • In a large bowl, beat together eggs, milk, oil, molasses, sugar and vanilla.
  • Stir in bran; let stand for 5 minutes.
  • In a small mixing bowl, combine flour, baking powder, salt and baking soda; add to egg mixture, stirring just until combined.
  • Carefully stir in raisins, being careful not to overmix.
  • Fresh blueberries, or unthawed frozen ones, can be substituted for raisins, by the way.
  • Spoon into paper-lined muffin cups, filling right to the top.
  • Bake in preheated oven for approximately 20 minutes, or until muffins are firm to the touch; do not overbake or muffins will be dry and tough.
  • As mentioned in the description, I like to cut this recipe in half (half of 3/4 cup brown sugar is 1/4 cup+ 2 tbsp) and bake the 6 in my toaster oven; after 20 minutes they are always done to perfection and I don't heat up my kitchen.
  • Remove muffins from pan and cool on rack.

1 cup flour
1 tsp baking soda
1 tsp salt
2 cups natural bran
1/2 cup raisins
1 cup milk
1/3 cup molasses
1/4 cup sugar
1 egg (lightly beaten)
2 Tbsp oil
2-3 Tbsp unsweetened applesauce (optional, but it helps the muffins stay moist longer!)

Steps:

  • Preheat oven to 350°. Grease or line a 12 cup muffin pan. (Parchment paper liners are my fav!)
  • In a large bowl, combine flour, soda, and salt. Mix well. Add the bran, and fully combine.
  • In a medium bowl, combine milk,, molasses, sugar, egg, oil, and applesauce. Add the raisins, making sure to break up any clumps of raisins.
  • Pour the wet into the dry, and gently mix using a spoon - don't use electric mixer. Stir until the ingredients are barely incorporated, and the batter is still lumpy.
  • Spoon batter into prepared muffin cups, to about 2/3 full. You should get an even dozen.
  • Bake 18-20 minutes, or until a toothpick inserted in a center muffin comes out clean.

⅓ cup vegetable oil

⅔ cup brown sugar

½ cup raisins

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
  • Mix together wheat bran and buttermilk; let stand for 10 minutes.
  • Beat together oil, egg, sugar and vanilla and add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fold in raisins and spoon batter into prepared muffin tins.
  • Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy!

1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 large egg, lightly beaten
1/4 cup packed dark-brown sugar

Steps:

  • Preheat oven to 400. Lightly oil a 6-cup standard muffin tin, or use paper liners. In a medium bowl, combine cereal and milk; let stand until softened, about 5 minutes. In a small bowl, whisk together flours, baking powder, cinnamon, and salt.
  • Stir oil, egg, and sugar into cereal mixture. Fold in flour mixture. Divide batter among cups. Bake until a toothpick inserted in the center of a muffin comes out clean, 20 to 25 minutes. 1 1/2 cups Raisin Bran cereal, plus
extra Raisin Bran cereal
1 1/2 cups whole wheat pastry flour
1 cup wheat bran
1 egg
3/4 cup skim milk
1/2 cup honey
1/4 cup brown sugar
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup raisins
2 teaspoons oil

Steps:

  • Preheat oven to 350. Spray a large six-miffin tin with non-stick cooking spray. In mixer beat egg, slowly adding honey and sugar. Reduce speed, add oil and milk. Add salt, baking powder and soda followed by raisins, flour, bran and cereal. Mix just to combine. Fill tins 3/4 full, and press extra cereal on top. Bake 20-25 minutes, or until knife insterted comes out clean. Cool.

1 c sifted flour
2 1/2 tsp baking powder
1/2 tsp salt
1/4 c sugar
1 egg ; beaten
1/2 c milk
1/4 c melted fat (lard)
1 1/2 c raisin bran flakes
********* or ************
1 1/2 c bran flakes
1/2 c seedless raisins

Steps:

  • 1. Sift together : flour , baking powder , salt and sugar.
  • 2. Combine : beaten egg , milk and slightly cooled melted fat.
  • 3. Add to floured mixture ; stirring only enough to dampen the flour.
  • 4. Fold in raisin bran flakes or bran flakes and raisins ; being careful not to over mix.
  • 5. Fill well greased 2-1/2" muffin cups 2/3 way full.
  • 6. Bake @ 400° for 15-18 minutes.
  • 7. NOTE : To maintain there original freshness , store in an air tight container , and Re-heat them up wrapped in foil.

5 cups all-purpose flour

5 teaspoons baking soda

  • In a large bowl, combine the raisin bran, flour, sugar, baking soda and salt. Combine the eggs, buttermilk and oil. Moist and super yummy Raisin Muffins. I made them from a basic muffin recipe then adding some ingredients of my own and tweaking the cooking time. Very easy to make! Chop the raisins finely--don't mash them! The banana makes the already moist muffins, well, more moist with just a hint of banana flavor. Not to mention that it gives a good look on the muffin top crust. It's important that you use an overripe banana. Enjoy!
