HEALTHY CHOCOLATE CHIP MUFFINS
Healthy chocolate chip muffins are 100% whole grain, low in sugar and can be made dairy-free. They're soft, fluffy and seriously loaded with chocolate chips.

Steps:
- Preheat oven to 350. Line a muffin tin with muffin liners and spray with cooking spray.
- Combine oats and milk and let those soak while you prepare the rest of the recipe, to soften the oats.
- In a large bowl, whisk together the egg and brown sugar until smooth and caramel colored.
- Add vanilla and butter and whisk to combine. You may have small pieces of butter in the mixture, which is totally fine. (See notes.)
- Add flour, oat-milk mixture, baking soda, salt and cinnamon. Stir until well combined but don't over mix.
- Fold in the chocolate chips.
- Distribute the batter between the muffin tins - they will be about 2/3rds full.
- Bake for 15-18 minutes, until a toothpick comes out clean.

- Preheat oven to 400 degrees and line muffin tin with paper liners.
- In a small bowl, sift together whole wheat flour, all purpose flour and baking powder, set aside.
- Mash together banana and brown sugar. Mix well.
- Add melted butter, eggs and milk and vanilla. Beat together until well blended.
- Stir flour into wet ingredients.
- Fold in chocolate chips and almonds.
- Pour batter into muffin cups, about 3/4 full and bake 18-22 minutes, or until done.

KIDS CAN MAKE: HEALTHY SECRET STRAWBERRY CHOCOLATE-CHIP MUFFINS
These muffins have a strawberry surprise baked in the center. It's also a surprise that each one has only 9 grams of sugar! For little and big kids: Let them help with lining the baking pan, measuring and scooping. Big kids can place the strawberries in the batter; little kids can sprinkle the chocolate chips.

- Position an oven rack in the center of the oven, and preheat to 350 degrees F. Line a 12-cup muffin pan with paper liners, and spray the liners lightly with cooking spray.
- Whisk together the flour, 1/3 cup of the chocolate chips, baking powder and salt in a large bowl. Whisk together the milk, sugar, oil, eggs, vanilla and orange zest in a medium bowl until no sugar clumps remain. Fold the milk mixture into the flour mixture until just combined. (Don't worry if there are a few lumps.)
- Spoon a heaping tablespoon of batter into each muffin cup liner. Stand a strawberry in each, point-side down. Evenly divide the remaining batter among the liners. Smooth the batter around and on top of each strawberry with a spoon. (It's OK if a little bit of strawberry pokes out.) Sprinkle the remaining chocolate chips over the tops.
- Bake until the muffins are golden and spring back when pressed in the center, 22 to 25 minutes. Let cool in the pan for a few minutes, then transfer to a cooling rack to cool completely. Store at room temperature in an airtight container for up to 2 days.

- Put the flour, baking powder, baking soda, cocoa, sugar, and 3/4 cup of the chocolate chips into a large bowl. Pour all the liquid ingredients into a measuring jug. - preheat the oven to 200 c / 400 f / gas mark . line 12 muffin cases.
- Mix the flour and baking powder together in a large bowl. Rub in the butter untill the mixture is like breadcrumbs. Stir in the sugar and the chocolate chips.
- In a separate bowl mix the eggs , milk and vanilla extract together , then pour the mixture all at once into the dry ingredients and mix briefly.
- Spoon the batter into the muffin cases and bake for 15-20 minutes or until risen , golden and firm to touch. cool in the tin for 10 minutes.
- after 10 minutes of cooling in the tin , transfer to a cooling rack or serve straight away.

- Grease twelve muffin cups.
- In a large bowl, stir together flour, sugars, baking powder, and salt.
- In another bowl, stir together milk, eggs, butter, and vanilla until blended.

- Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
- In a medium bowl, combine flour, 1/2 cup sugar, baking powder, chocolate chips, and salt; mix well. In a small bowl, combine milk, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
