CHOCOLATE AVOCADO DREAM PIE
When my sister was in town, my daughter, my sister and I went to a Vegan and Raw Food restaurant! I was very much against it because to be truthful I didn't know what to expect & when we reached the restaurant, they weren't equipped to handle my wheelchair and it was a very bad experience! Steps:
- Take a pre made vegan crust and lay washe'd and dried raspberries along bottom of crust.
- In a double boiler melt chocolate chips with soymilk and vanilla.
- Add sweetener to taste.
- Mix well, and take off from heat after fully melted so that it does not burn.
- In a separate bowl mash up the avocado, or pulse in a food processor.
- Add in orange juice,
- Get all lumps out.
- After chocolate cools a bit mix it in with mashed avocado.
- This mixture should be thick and creamy.
- Test the sweetness level.
- Pour over raspberries and place in fridge to set.
- Enjoy!
- Top with a vegan whipped cream topping, if desired.

- Make the crust: Preheat the oven to 350 degrees F. Brush an 8-inch springform pan with some of the melted butter. Mix the remaining butter with the graham cracker crumbs, sugar and salt in a bowl. Press the mixture into the bottom and up the sides of the prepared pan. Bake until golden brown, about 15 minutes. Cool completely on a rack.
- Make the filling: Halve and pit the avocados, then scoop out the flesh and chop. Transfer to a bowl, add the cream cheese and beat with a mixer on medium speed until smooth. Add the condensed milk, lime and lemon juices, and the salt and beat until fluffy, scraping the bowl as needed. Pour the filling into the crust, press a piece of plastic wrap directly on the surface and chill at least 4 hours.
- Remove the springform ring and slice the pie. Garnish with whipped cream or confectioners' sugar, if desired, and serve immediately (the top will start to brown as the pie sits).

- Whisk together sugar, cornstarch, salt, and yolks in a 3-quart heavy saucepan until combined well, then add milk in a stream, whisking.
- Bring to a boil over moderate heat, whisking, then reduce heat and simmer, whisking, 1 minute (filling will be thick).
- Remove from heat, then whisk in chocolates, butter and vanilla.
- Cover and cool.
- Peel and chunk avocados. Beat until smooth.
- Spoon filling into crust and chill pie, loosely covered, at least 4 hours.
- Top with whipped cream or sweetened sour cream.
- Optional: You can add 1/2 teaspoon red chile flakes to give it a southwestern flavor.

- Combine egg whites with cream of tartar in a mixing bowl, beat until foamy. Gradually add Splenda, beating until stiff peaks form. Fold in chopped pecans and vanilla. Spoon into a lightly greased 8" pie pan, building up 1/2" above the edge of the pan. Bake slowly in a 300F oven for 40-45 minute Let cool to room temperature.
- Filling Instructions:
- Place chocolate and water in a double boiler stirring until chocolate has melted. Cool until thickened, add vanilla. Whip the cream, add Splenda. Fold chocolate into whipped cream, pile into meringue shell and chill for 2 hours.

- Place pitted dates and almonds in the bowl of a food processor. Process until almonds, dates and salt until they form a giant thick paste (about 2 minutes). You'll notice bits of almonds in there but they shouldn't be large or chunky. If it's too wet or dry, feel free to add more dates or almonds.
- Press into a 9 inch pie pan working your way up the sides. I like to use a measuring cup to help me press the crust against the sides. Set in the freezer to chill and solidify while you make the filling.
- Rinse out your food processor to remove any dates or almonds. Next add in pitted and peeled avocados, maple syrup, cocoa powder, vanilla and salt. Process until smooth and creamy, scraping down the sides if necessary. If you're getting an avocado flavor, it's mostly because your avocados were too ripe. I would recommend adding in a tablespoon or two of nut butter at this point.
- Pour into crust and smooth the top with a spatula. Cover and refrigerate for 3 hours or overnight. Pie is best when enjoyed within 24 hours.
