- Preheat grill to medium-high heat. Place fish in large resealable plastic bag. Add combined dressing and Parmesan cheese; seal bag. Turn bag over several times to evenly coat fish with the dressing mixture. Marinate in refrigerator until ready to use.
- Thread chorizo and garlic evenly onto skewers. Grill 7 to 8 min. or until chorizo is cooked through, turning occasionally. Remove chorizo and garlic from skewers; cut into thin slices. Place in small saucepan. Add tomatoes and oregano; mix well. Bring to boil on medium-high heat. Reduce heat to low; simmer 10 min., stirring occasionally.
- Meanwhile, remove fish from marinade; discard bag and marinade. Grill fish 4 to 5 min. on each side or until fish flakes easily with fork. Place fish on individual plates or serving platter; top each fillet with 1/2 cup of the tomato mixture and 2 Tbsp. of the mozzarella cheese.

SAUTEED CHILEAN SEA BASS
Steps:
- Preheat oven to 200 degrees F.
- Place flour for dredging in a shallow bowl. Coat each fillet with seasoned flour and shake off excess. Heat a large nonstick skillet over medium heat for 3 to 4 minutes. Add butter/olive oil combination. Add the fillets, without crowding. Increase heat to high and saute, shaking the pan from time to time, until the bottom of the fish is nicely browned, about 3 minutes. Turn and brown the other side. Remove fish to a plate and keep warm in the oven. Repeat with remaining fillets.
- Deglaze the pan with white wine. Cook, stirring over high heat until reduced by about one-third. Stir in remaining butter and drained capers.
- Plate fish and drizzle sauce around each fillet.
SEA BASS ON A BED OF SWISS CHARD AND BROWNED ROSEMARY POTATOES

Steps:
- Preheat oven for 375 degrees.
- Lightly season the fish with salt and pepper, then coat with flour, shaking off the excess.
- Heat two tablespoons oil in a skillet over medium-high heat, add the fish pieces and cook just until lightly browned, about 1 minute on each side.
- Transfer to a casserole dish and place in oven for 10-15 minutes.
- Add the onion and 3 cloves garlic to the skillet and cook, stirring, until beginning to soften, 1 to 2 minutes.
- Slice pre boiled potatoes and add to the onions browning on both sides add rosemary, salt and pepper.
- Meanwhile heat 2 tablespoons rosemary oil and toss in 3 minced cloves of garlic till almost browned add the Swiss chard till wilted about 3 minutes, season with salt and pepper.
- Place wilted chard on platter place cooked fish on top.
- Arrange browned potatoes around the Swiss chard.
- Sprinkle with diced sun dried tomatoes.
- Garnish with fresh rosemary.

POACHED CHILEAN SEA BASS
You will be making this Poached Chilean Sea Bass over, and over again! Poaching the fish creates this light, flaky and super moist texture. The combination of flavors in the poaching liquid will make you want to savor every last drop. Fresh jalapeños give this fish dish just a hint of heat, without being overbearing. Super fresh ingredients make this one superb dish with zero guilt.

- Give the fish filets a gently rinse.
- Pat dry and season with kosher salt and black pepper.
- Reserve in fridge until ready to use.
- Sauté the shallots and garlic in olive oil in a deep pan for about a minute.
- Add the tomatoes and jalapeño slices.
- Season with kosher salt and black pepper.
- Cook for a few minutes.
- Pour in the white wine, chicken stock, orange juice and lemon juice.
- Cover and allow to simmer for about 8 minutes. Breaking down the tomatoes, often.
- Add additional stock or wine to the poaching liquid, if needed.
- Place the fish filets in the poaching liquid. Spoon over some of the liquid.
- Cover and allow the fish to poach until the fish is no longer translucent. About 8 to 10 minutes for 1 1/2″ to 2″ thickness.
- Once a fork can easily pierce through the flesh, the fish is done. Try not to overcook.
- Add in the cannellini beans and spinach. Allow the spinach to wilt just a minute, or so.
- Serve with steamed rice and crusty bread.

- Preheat the oven to 200c/400f
- Mix the oil, chilli, honey, soy sauce, ginger, garlic and lime in a small bowl.
- Place the sea bass fillets, skin-side down, on a baking tray. Sprinkle on the cornflour and rub it into the fish gently.
- Spoon on the honey-soy sauce mix (it will pour off a little, but that's fine). Sprinkle on the sugar and place in the oven to cook for 8 minutes. Half-way through cooking, open the oven and baste the fish with the sauce in the tray (it will be stickier now it's been in the oven).
- Once the fish is cooked, take out of the oven and baste again with sauce, then sprinkle the top with coriander (cilantro), spring onion (scallion) strips and slices of chilli.
- Serve with lime slices and some boiled rice or salad.

- Take a nonstick pan over medium high heat and bring up to temperature with 1 tbsp of light olive oil. Once the oil is hot, add and sauté shallots until they are fragrant and slightly translucent. To the pan, add mined garlic and continue to sauté for about 1 minute.
- By now, some sugars from the shallots will begin to stick to the pan. Deglaze the pan by adding around 1/4 cup of dry white wine. Allow ingredients to cook together until the alcohol cooks off. Afterwards, add 1/3 cup of chicken broth. Allow these to come to a simmer.
- Once ingredients begin to simmer, lower heat and add sliced olives, chopped roasted red peppers, capers, and tomatoes. Cover pan with a lid and allow veggies to simmer on low for 10-15 minutes. Now is the perfect time to start on your fish.
- Season both sides of room temperature Chilean Sea Bass with salt and pepper to taste. In a separate non-stick pan, heat up light olive oil and place Sea Bass filets inside of pan. If your filets have skin, be sure to place the filets skin side down first. Continue to watch fish to ensure it does not overcook. Once your fish is almost done, flip to the opposite side to allow it to finish cooking. I recommend sautéing your fish until it reaches an internal temperature between 135 - 145 degrees Fahrenheit (57 - 63 degrees Celsius).
