With so much chocolate flavor in the brownies and in the frosting, you'd never guess this version is actually healthier than the average brownie!

¼ cup butter
½ cup white sugar
2 eggs
⅓ cup applesauce
1 teaspoon vanilla extract
⅓ cup unsweetened cocoa powder
⅓ cup white whole wheat flour
¼ teaspoon salt
¼ teaspoon baking powder
3 tablespoons butter, softened
3 tablespoons unsweetened cocoa powder
1 tablespoon honey
1 teaspoon vanilla extract
½ cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch square pan.
  • Melt 1/4 cup butter in a large saucepan over low heat. Remove from heat and stir in white sugar, eggs, applesauce, and 1 teaspoon vanilla extract. Beat in 1/3 cup cocoa powder, flour, salt, and baking powder. Spread into prepared pan.
  • Bake in preheated oven until brownies are just set in the center, 20 to 25 minutes.
  • Combine 3 tablespoons butter, 2 tablespoons cocoa powder, honey, 1 teaspoon vanilla extract, and confectioner's sugar in a bowl; beat until smooth. Frost brownies while they are still warm.

200 g dark dairy free chocolate
130 g raw medjool dates, pitted
180 g organic cold-pressed coconut oil
30 g coconut flour
4 eggs
1/2 teaspoon vanilla extract
1/4 teaspoon sea salt

Steps:

  • Preheat oven to 190°C Line a 22cm square baking dish with baking paper. I use 'If You Care' baking paper, which is non-toxic.
  • Place the chocolate (broken into pieces) into the mixing bowl and mill for 10 sec/speed 9.
  • Add the dates to the bowl and chop 15 sec/speed 10.
  • Add the coconut oil and cook 5 mins/60C/speed 2.
  • Add remaining ingredients and mix 20 sec/speed 8. Scrape down lid and sides of bowl and mix another 10 sec/speed 6.
  • Scrape mixture into a lined, square baking dish. Bake in preheated 190C oven for 18-20 minutes Be careful not to overcook or they won't be gooey! Just until a skewer inserted in the centre comes out clean.
  • Cool, cut into small squares, and refrigerate until cold.
