These bars are great for breakfast on the run or a healthy snack. Try your own combinations of dried fruit and nuts to suit your taste.

3 large eggs
1 teaspoon vanilla extract
2 tablespoons honey
2 tablespoons coconut oil
1 banana
2 carrots
2 apples
1 1/2 cups Weet-Bix
1 cup oats
1/2 cup shredded coconut
1/2 cup black currants
1/2 cup macadamias
1/2 cup almond meal

Steps:

  • Preheat fan forced oven to 180 degrees Celcius.
  • Line a 20 x 30 cm tray with baking paper.
  • Beat eggs, add honey, vanilla and coconut oil.
  • Mash bananas and add to mixture.
  • Grate carrots and apples and add to mixture.
  • Crush Weet-Bix and add to mixture.
  • Add rest of dry ingredients.
  • Combine with your hands and press into prepared tray.
  • Bake for 20-25 minutes.
  • Allow to cool slightly in tin.
  • Slice into 12 breakfast portions or 18 snack portions.

I found this for a response to healthy breakfast on the run with natural ingredients. I intend to make these for my DH and I too. I found it on Iowa State University's whole grains food recipes site.

2 eggs, beaten
1 cup unsweetened applesauce
1/4 cup honey
1 teaspoon vanilla
1 teaspoon baking soda
1/2 cup flour
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup wheat germ
1/4 cup oat bran
3 cups old fashioned oats
1/4 cup raisins
1/2 cup walnuts

Steps:

  • Blend together eggs, applesauce, honey and vanilla.
  • Add baking soda and stir.
  • Add remaining ingredients and stir until moist and blended.
  • Spoon into either a 12 cup cupcake pan or into a 9x13" baking pan. When spooning into pan, keep loose. Do not pack down.
  • Bake at 375 degrees from approximately 15 to 20 minutes.
  • Cool.
  • Makes 12 servings.

  • Preheat oven to 350°F. Line an 8-inch square baking pan with parchment paper or greased foil. Set aside.
  • In a large bowl, add peeled banana. Using a fork or dough blender (recommended), mash until smooth. Add the remaining wet ingredients: peanut butter, maple syrup, coconut oil, flax egg and vanilla. Whisk until well incorporated.
  • Add the dry ingredients: oats, baking soda, baking powder and salt. Using a rubber spatula, fold until well mixed. Fold in seeds, dried fruit and walnuts.
  • Pour this mixture into the prepared baking pan. Using the rubber spatula, smooth into an even layer.
