2 tablespoons olive oil
1 onion, diced
2 stalks celery, chopped
1 carrot, chopped
1 red bell pepper, diced
4 cloves garlic, minced
1 jalapeño pepper, seeded, diced
1 teaspoon salt
1 teaspoon pepper
2 tablespoons cumin
60 oz black beans, 4 cans, drained, rinsed
4 cups vegetable stock
1 bay leaf
avocado, chopped, to serve
queso fresco, crumbled, to serve
fresh cilantro, chopped, to serve
tortilla chip, crumbled, to serve

Steps:

  • Heat olive oil in a large stock-pot or dutch oven over medium-high heat until the oil begins to shimmer.
  • Add onions, celery, carrot, and bell pepper. Cook for 4-5 minutes, stirring occasionally, until vegetables begin to soften.
  • Add garlic, salt, and pepper, and continue to cook for an additional 10 minutes until vegetables are soft and the onions are translucent.
  • Add cumin, black beans, vegetable stock, and the bay leaf. Bring to a boil then reduce to a simmer.
  • Cover the pot and cook over low heat for 30 minutes until the beans are very tender.
  • Remove the bay leaf. Transfer about 4 cups (900 g) of the soup to a blender and puree until smooth, being careful not to splatter hot soup all over yourself and kitchen.
  • Pour blended soup back into the pot and mix to incorporate.
  • Keep over low heat until ready to serve. Garnish with fresh avocado, queso fresco, chopped cilantro, and tortilla chips.
  • Enjoy!

1 tablespoon vegetable oil
4 carrots, chopped
1 onion, chopped
4 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon ground cumin
4 cups chicken broth
3 (15 ounce) cans black beans, rinsed and drained, divided
1 (8.75 ounce) can whole kernel corn
¼ teaspoon ground black pepper
1 (14.5 ounce) can stewed tomatoes

Steps:

  • Heat oil in a large saucepan over medium heat; cook and stir carrots, onion, and garlic until onion is softened, about 5 minutes. Stir chili powder and cumin into onion mixture; cook and stir until evenly coated, about 2 minutes.
  • Pour broth over onion mixture and add 1/2 of the black beans, corn, and black pepper. Bring broth mixture to a boil.
  • Blend tomatoes and remaining 1 1/2 cans black beans together in a food processor or blender until smooth; pour into broth mixture. Reduce heat to low, cover pot, and simmer until carrots are tender, 10 to 15 minutes.

2 cups dried black beans
32 fluid ounces vegetable broth or 32 fluid ounces chicken broth, divided
1 large onion, chopped small
4 cloves garlic, chopped small
2 cups water
1 large potato, peeled and cubed 1/2 inch
14 1/2 fluid ounces canned plum tomatoes, crushed and include liquid (no salt)
1/2 teaspoon dried thyme
3/4 teaspoon ground cumin
1 cup fresh green beans, cut into 3/4 inch lengths
1 large carrot, scrubbed and coarsley shredded
1 large green pepper, seeded and chopped
1 large sweet red pepper, seeded and chopped
2 large celery ribs, chopped small
1/4 teaspoon Tabasco sauce or 1/4 teaspoon red hot sauce
4 large green onions, chopped small

Steps:

  • Soak black beans in water overnight.
  • The next day, drain and rinse before using.
  • In a large saucepan or heavy bottom cooking pot, add 1/2 cup of broth, chopped onion and chopped garlic and bring to boil.
  • Reduce heat; cover and simmer for 6 to 8 minutes.
  • or until onions are jnst tender.
  • Stir in black beans; add 2 cups water, diced potato, crushed plum tomatoes including liquid, thyme, cumin, green beans, and remaining broth; return to boil.
  • Reduce heat, cover and simmer for 15 to 20 minutes or until potatoes are tender, stirring occasionally.
  • Add shredded carrots, green and red peppers, chopped celery, Tabasco sauce and cook for an additional 5 minutes.
  • Adjust seasonings to taste.
  • Garnish each serving with chopped green onions.
  • Refrigerate any unused portion.
  • You may wish to add some low-sodium soy sauce to the soup, use about 2 tablespoons, however it will increase the sodium count.
  • You can also use canned black beans to speed up the process.
  • Use 2- 15 fluid ounce cans, drained and rinsed.
  • Cauliflower florets would also enhance the soup, use about 1 cup of florets.

Back in college, a great local cafe stayed opened into the wee hours ladling up their version of this stuff. The first time I slurped some of it down after midnight, I decided to make black bean soup my own tradition. Mine is hearty and smoky, and if it's lying around, I'll also throw in a can of beer for good taste and in keeping with the spirit of a good night on the town. Like the onion soup, you'll want to make this ahead of time so you're not faced with the prep-work when you and your friends just want to kick back and chow down after a long night. Using smoked bacon makes all the difference in the world because those beans are just begging for that rich, smoky flavor.

10 slices bacon, finely chopped
2 medium onions, chopped (about 2 1/2 cups)
6 garlic cloves, pressed
1 (14 1/2-ounce) can reduced-sodium chicken broth
1 1/2 cups canned chopped tomatoes
2 tablespoons ketchup
2 teaspoons Worcestershire sauce
1 tablespoon chili powder
4 (15 1/2-ounce) cans black beans, drained but not rinsed
Kosher salt and freshly ground black pepper
1 bunch cilantro
juice of 1/2 lime
Thinly sliced scallions, for garnish
Sour cream, for garnish
Grated cheddar, for garnish

Steps:

  • Put the bacon into a large heavy pot and place it over medium heat. Cook until it starts to give up its fat, about 4 minutes. Stir in the onions and cook, stirring, until they start to turn translucent, about 4 minutes. Stir in the garlic and cook until you can smell it, about 1 minute. Add the broth, tomatoes, ketchup, Worcestershire, and chili powder. Stir in the beans, turn the heat to high and bring to a boil. Adjust the heat so the soup is bubbling gently and cook 10 minutes. Season with salt and pepper.
  • Meanwhile, pick off all the thick stems from the cilantro. Wash it and shake dry. Chop the cilantro coarsely and stir it into the soup when it has been simmering 10 minutes. cook until the soup is thickened, about 5 minutes. Stir in the lime juice. Serve with the garnishes.

2 cups diced onions (or 1 medium yellow onion, peeled and chopped)
1 minced garlic clove
2 tablespoons extra virgin olive oil
1 teaspoon ground cumin
2 (15 ounce) cans black beans (do not drain)
1 cup chunky salsa
2 tablespoons lime juice
2/3 cup plain yogurt or 2/3 cup sour cream

Steps:

  • In a medium pot, sauté onions in olive oil until they are soft and translucent.
  • Sprinkle in cumin and garlic and sauté for a minute; pour in black beans (including juices), salsa, and lime. Stir to combine and bring to a simmer. Simmer covered for 20 minutes.
  • Ladle soup into individual bowls and top with a dollop of yogurt. Chili and Lime Tortilla Chips or other white corn tortilla chips go nicely on the side.

With most of the food in the house being saved for christmas eve/day, I was hard-pressed to find anything to eat. I decided to make soup out of canned goods i had in the house. Couldn't find a recipei liked, so i made up my own. It was really good and my parents couldn't eat enough of it. The tomato puree adds a thick body to the soup which makes it hearty and thick. I made this about a week ago and I may not have remembered all the ingredients or steps. If i left anything out I'll be sure to add it. However, this soup is really versatile so don't be afraid to make it your own! Any leftover vegetables would be a welcome participant. Enjoy!

2 tablespoons desired cooking oil (I used vegetable)
2 -3 garlic cloves, minced
1 small onion, chopped
1 carrot, peeled and chopped
4 (8 ounce) cans black beans, undrained
1 (8 ounce) can seasoned chili beans, undrained
1 (8 ounce) can sweet corn, drained
1 (14 ounce) can tomato puree
2 teaspoons cumin
1 teaspoon chili powder (optional)
3 -4 cups chicken broth (depends how thick you want it, you can always add more later. veggie stock can be substitued for a v)
salt and pepper
1 pinch cilantro leaf

Steps:

  • heat oil in the bottom of the soup pot. Add onion, garlic and carrot until the onion becomes clear.
  • Add chicken broth and bring to a boil.
  • Add the beans, corn, cumin, cilantro, and chili powder if using, and bring to a boil (not a rapid boil because the soup is pretty thick).
  • Add tomato puree and heat again until hot and steamy.
  • salt and pepper to taste. i personally didn't use salt because canned veggies are pretty salty on their own, but for people who like a lot of salt, i would add some.
  • The longer you leave the soup cooking on low, the better the flavors meld together. However it can be served immediately if you're in a rush.
  • Serve with crackers, because this soup is perfect for them! Also good with a little cheese sprinkled on top (whatever kind you enjoy).

1/2 cup water
1 medium carrot, sliced thin
1/8 cup onion, diced
1/2 medium red bell pepper, diced
2 garlic cloves, chopped
2 cups spinach, raw
1/4 teaspoon ginger
1/2 cup black beans, homecooked, frozen
1/8 teaspoon turmeric
1/8 teaspoon cumin
1/2 cup milk

Steps:

  • Put carrots in pot and cover with water (no oil or butter needed). Cover and cook on medium heat until carrots just start turning soft.
  • Add onion and red bell pepper. Cook, uncovered, on low heat for a couple minutes, stirring occasionally.
  • Throw in garlic and spinach. Continue stirring occasionally on low heat until spinach is mostly cooked down. Add ginger.
  • Remove from heat once spinach is cooked. Strain vegetable mixture into bowl; reserve juice. Place vegetable mixture in microwave to keep warm.
  • Place black beans and reserved vegetable juice in pot on stove. Cook, covered, on medium heat until black beans are no longer frozen. Add turmeric and cumin; stir and simmer briefly. Add milk, reduce heat, and stir. Mash some of the beans using fork or spoon, if desired. Cover and cook 1 minute.
  • Return vegetable mixture to bean soup base in pot. Cook uncovered 1 minute longer, stirring occasionally.
  • Serve. Try with hunk of whole wheat bread or some plain nonfat yogurt.
