1 tablespoon olive oil
1/2 yellow onion, diced
2 pounds ground beef
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon crushed red pepper
20 fajita-sized flour tortillas
18 hard taco shells
1 pound Cheddar-Jack cheese, grated
15 Roma tomatoes, diced
1 head green leaf lettuce, shredded

Steps:

  • Preheat the oven to 325 degrees F.
  • For the beef: In a skillet over medium-high heat, add the olive oil and onions. Cook until starting to soften, then add the ground beef. Cook the meat until it's totally browned, then drain the fat. Add the chili powder, cumin, paprika, salt, black pepper and crushed red pepper and stir to combine. Add 1/2 cup hot water and stir. Reduce the heat to low and simmer for 15 minutes.
  • For the fixins: Meanwhile, wrap the flour tortillas in foil and warm in the oven for 20 to 25 minutes. Right before serving, crisp the taco shells in the oven according to package instructions.
  • Serve with the grated cheese, diced tomatoes and shredded lettuce.

1 teaspoon vegetable oil, such as safflower
1 large onion, chopped
2 bell peppers (ribs and seeds removed), chopped
3 garlic cloves, minced
2 tablespoons tomato paste
2 teaspoons chili powder
1 1/2 teaspoons ground cumin
Coarse salt and ground pepper
3/4 pound ground beef sirloin
12 soft corn tortillas (6-inch)
Store-bought salsa and shredded iceberg lettuce, for serving

Steps:

  • In a large nonstick skillet, heat oil over medium. Add onion and bell peppers; cook until crisp-tender, 3 to 5 minutes. Add 1 cup water; cook until water has evaporated and vegetables are softened, 3 to 5 minutes.
  • Add garlic, tomato paste, chili powder, and cumin; season with salt and pepper. Cook, stirring, 1 minute. Add beef. Cook, breaking up meat with a wooden spoon, until no longer pink, about 5 minutes. Season taco filling with salt and pepper. To serve, spoon filling onto tortillas, top with salsa and lettuce, and fold to enclose.

Next level minced beef tacos image

Elevate a pack of beef mince into vibrant tacos. Go to the extra effort of making your own spice mix for even more flavour, and use soft tortillas

1 tbsp sunflower oil
500g beef mince
300ml beef stock
2 tbsp cumin seeds
1 tbsp coriander seeds
1 tsp black peppercorns
1 tsp chipotle chilli flakes
1 tbsp paprika
1 tbsp dried oregano
1 tsp garlic granules
1 tsp onion granules
2 tsp cornflour
1 large red onion, finely sliced
1 lime, juiced, plus wedges to serve
6-8 small soft wheat or corn tortillas
1 avocado, stoned, peeled and chopped into small chunks
1 tomato, chopped into small chunks
handful of feta, crumbled, or use grated mild cheddar (optional)
2 handfuls of tortilla chips, crushed (optional)

Steps:

  • First, make the spice mix. Toast the cumin seeds, coriander seeds and peppercorns in a small, dry frying pan, then tip into a spice grinder or use a pestle and mortar to crush to a rough powder. Add the remaining spice mix ingredients, except the cornflour, then grind again. Stir through the cornflour and a pinch of salt. The spice mix will keep in an airtight jar for up to one month.
  • For the pickled onions, toss the onions with the lime juice and a pinch of salt in a medium glass bowl, then set aside to soften.
  • Heat the oil in a frying pan over a medium-low heat, and crumble in the mince. Cook for 15-20 mins. At first, it will release some liquid, but once that has bubbled away, the mince will sizzle in its own fat and start to brown and crisp. At this point, stir or toss the mince with a wooden spoon so it browns and caramelises all over. When the mince is well toasted, sprinkle over half the spice mix and continue to cook for 2 mins. Pour over the beef stock and reduce the heat to a simmer. Cook gently for 10 mins until the beef has absorbed most of the stock, and is in a rich, thick gravy. Taste for seasoning.
  • To assemble the tacos, toast the tortillas in a hot, dry frying pan, or over a flame until lightly blistered. Transfer to a serving plate and spoon the mince into a bowl, then serve the other ingredients in separate bowls, so everyone can assemble their own. Alternatively, spoon the mince into the tortillas, then top with the avocado, tomato, cheese (if using), pickled onions and crushed tortilla chips, if using. Serve the lime wedges on the side for squeezing over.

1 lb extra lean ground beef
1 yellow onion
1 small green pepper
2 garlic cloves
1/2 tablespoon onion powder
1 tablespoon garlic powder
2 teaspoons cayenne pepper
2 teaspoons chili powder
3/4 tablespoon sea salt
1 pinch black pepper
2 tablespoons water
6 whole grain tortillas
1/4 cup plain yogurt
1/4 cup salsa
1 avocado
1/2 cup light mozzarella cheese
cilantro (optional)

Steps:

  • Cook ground beef on med low in cast iron pan, add chopped onions and garlic and stir.
  • Stir in sea salt and black pepper and let cook through.
  • Add green pepper sliced thinly.
  • Stir in the rest of the seasoning, then add 1 tbsp of broth or water and simmer for 10 minutes on low.
  • Use a non stick frying pan turn on to medium heat. place tortilla (I use frozen brown rice wraps) and let warm up for about 30-60 seconds, flip over and quickly sprinkle about a tbsp shredded cheese and then spoon ground beef mixture on top. Fold wrap in half and press down with spatula for a second, then remove from pan. Top with 1 tbsp plain yogurt(I use greek), salsa (I use organic), two small slices of avocado, and cilantro.
  • You can also substitute beef for ground chicken or turkey.

1 tablespoon canola oil
1 large onion, finely chopped
1 jalapeno chile, minced
Coarse salt and ground pepper
2 cloves garlic, minced
1 tablespoon chili powder
1/2 teaspoon ground cumin
1 pound ground beef
1 can (14 1/2 ounces) diced tomatoes, with juice
8 (6-inch) corn tortillas
Optional Toppings: cilantro, iceberg lettuce, diced jalapenos, pickled jalapenos, Monterey Jack cheese, sour cream
Pico de Gallo, optional
Guacamole, optional

Steps:

  • Heat oil in a large skillet over medium-high heat. Add onion and jalapeno; season with salt and pepper. Cook, stirring occasionally, until softened, 4 to 5 minutes.
  • Add garlic, chili powder, and cumin to skillet; stir until fragrant, about 1 minute. Add beef; cook, breaking up meat with a spoon, until no longer pink, about 5 minutes. Add tomatoes; simmer over medium-low heat, stirring occasionally, until thickened, 10 to 12 minutes. Season with salt and pepper, as desired.
  • Meanwhile, warm tortillas in a dry skillet over medium heat or directly over a gas burner, about 30 seconds on each side. At the table, fill tortillas with beef mixture and desired garnishes.

  • Heat the olive oil in a large, ovenproof skillet or Dutch oven with a tight-fitting lid over medium-high heat. Once hot and shimmering, swirl to coat the pan, then add the beef, onion, and bell pepper. Cook for 3 to 5 minutes, until the beef is browned and cooked through and the onion is beginning to soften.
  • Add the chili powder, garlic powder, cumin, oregano, salt, and pepper. Stir to coat the beef and cook 30 seconds. Add the black beans and rice. Stir to coat once more.
  • Add the salsa and 1 1/2 cups water. Stir to combine the ingredients. Bring to a gentle boil, cover, then reduce the heat and let simmer 30 minutes. Remove the lid and stir, scraping up any rice that has started to stick to the bottom of the pot. Recover and continue to let simmer with the lid on until the rice is tender, 10 to 20 additional minutes, stirring the pot every 10 minutes or so to prevent sticking. If the rice begins to dry out, splash in the remaining 1/2 cup water as needed.
  • Towards the end of the cooking time, place a rack in the upper third of the oven (about 6 inches from the top) and turn the oven to broil. Once the skillet is finished cooking on the stove, sprinkle the cheese on top, then transfer to the oven. Broil just until the cheese is melted, about 2 minutes (watch it carefully so it doesn’t burn). Serve hot with any desired toppings or spoon inside tortillas to make tacos, burritos, or quesadillas.
