Healthy Oatmeal Banana Cookies image

Try these totally guilt-free, healthy cookies with only 5 ingredients... bananas, oatmeal, chocolate chips, and vanilla. This is a softer cookie, so it would make a great breakfast with an ice cold glass of milk!

Provided by Simply Fresh Cooking

Categories     Drop Cookies

Time 25m

Yield 24 Cookies, 6 serving(s)

Number Of Ingredients 6

3 bananas, ripe
1/3 cup canola oil
2 cups quick-cooking oats
1/2 cup chocolate chips
1 teaspoon vanilla extract
cooking spray

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, mash bananas with a fork until no longer lumpy. If bananas aren't very ripe, a hand mixer may be used. Stir in oil, oats, chocolate chips, and vanilla.
  • Lightly grease a cookie sheet.
  • For each cookie, spoon about 2 tablespoons of cookie mixture (or more depending on how big you want the cookie) onto the cookie sheet. Bake for 15-20 minutes.
  • **IF batter seems a little dry, add a little milk to moisten.
  • Variations: Instead of chocolate chips add raisins or craisins. Chopped walnuts are great in these cookies. Or, try coconut oil instead of canola oil.

BANANA COOKIES

Banana cookies image

Soft in the centre, crunchy at the edges, these banana cookies are an easy-bake treat that can be whipped up in half an hour.

Provided by Annie Rigg

Categories     Cakes and baking

Yield Makes 20

Number Of Ingredients 10

150g/5½oz unsalted butter, at room temperature
175g/6oz golden caster sugar
1 medium egg, lightly beaten
175g/6oz plain flour
½ teaspoon bicarbonate of soda
½ teaspoon ground cinnamon
pinch salt
75g/2½oz pecans (or walnuts), roughly chopped
75g/2½oz dark chocolate chips
2 ripe bananas (200g/7oz peeled weight), mashed

Steps:

  • Cream the butter with the sugar in a free-standing mixer until pale and light - this will take about 3 minutes. Scrape down the insides of the bowl from time to time to ensure that all of the ingredients are thoroughly incorporated. (Alternatively use a hand mixer and a large bowl.)
  • Add the egg and beat until thoroughly incorporated. Sift the flour, bicarbonate of soda, cinnamon and salt into the bowl and mix until barely combined. Add the pecans (or walnuts), chocolate chips and mashed banana and mix again until all of the ingredients are thoroughly incorporated. Cover the bowl and chill for 1 hour.
  • Preheat the oven to 180C/160C Fan/Gas 4 and line 2 baking sheets with baking paper.
  • Shape level tablespoons of dough into balls and place on the prepared baking sheets leaving plenty of space between each one to allow for spreading during cooking. Slightly flatten each cookie with your hands and bake in batches on the middle shelf of the preheated oven for 11-12 minutes until crisp on top and golden brown. The cookies will still be slightly soft but will crisp further on cooling.
  • Remove from the oven and leave on the baking sheets. These cookies will be slightly soft due to the banana and should be stored in an airtight container.

  • In a medium bowl, add banana and mash thoroughly with a spoon until it turns into a puree consistency with no chunks of banana left. Stir in almond flour until thoroughly combined and a dough forms. The dough should feel wet but not too sticky. If you touch it with your finger, the dough should not stick to it. If your dough is too sticky, you can add a little more almond flour.
  • Using a 1.5 tbsp cookie scoop, scoop cookie dough and place onto prepared baking sheet, spacing the dough balls 2 inches apart. Use the back of a spoon or the palm of your hand to press down gently on the dough balls until they form round disks about 3/8 inch thick.
  • Place cookies into oven and bake about 15-25 minutes or until the edges are golden brown. The surface of the cookies should also be slightly firm. Let cookies cool on baking sheet before removing. Cookies will be initially crispy on the outside and soft on the inside if eaten within a few hours after they are baked. After that, they will be soft and cakey all over. The cookies will be sweeter and have a stronger banana flavor the next day, similar to banana bread.

  • Line a large baking sheet with parchment paper or a silicone baking mat. In a medium mixing bowl, stir together the oats, whole wheat pastry flour, baking powder, cinnamon, and salt until combined. Set aside.
  • In a large mixing bowl or the bowl of a standing mixer fitted with the paddle attachment, mash the banana (I use the mixer to do this), checking to make sure you have 1/2 cup. Add the coconut oil (or butter), egg, brown sugar, and vanilla extract and beat on medium high until very well combined, at least 3 minutes, stopping to scrape down the bowl as needed. The batter will be a little bit chunky and wet.
  • Add the dry ingredients to the wet ingredients. Mix on low speed, just until the flour disappears, about 1 minute. Mix in the chocolate chips. The batter will be wet, somewhat loose, and sticky.
  • With a large cookie scoop or a measuring cup, portion the dough in 1/4-cup amounts and drop in round mounds onto the prepared baking sheet. Refrigerate for at least 2 hours to allow the dough to firm up (the cookies will spread and not set properly if baked immediately), or cover the cookie sheet with plastic wrap and refrigerate for up to 2 days.
