HEALTHY APPLE CINNAMON OATMEAL BARS

Healthy Apple Cinnamon Oatmeal Bars image

My version of a very healthy high protein, low sugar, high fiber snack/energy bar. Only good carbs and a low glycemic index. This bar is very tasty and filling! I also want to stress that this is a LOW sugar item. If you are looking for something that is very sweet, like my first reviewer, you may want to add more sugar or splenda. This is personal preference as I do not like things too sweet.

OATMEAL APPLE BREAKFAST BARS

Oatmeal Apple Breakfast Bars image

This easy recipe for soft-baked oatmeal apple breakfast bars is naturally sweetened & healthy for you! Vegan, gluten-free and dairy-free options too.

Provided by Tiffany

Categories     Breakfast

Time 45m

Number Of Ingredients 11

2 large apples, diced for 2 cups (keep the cores and any leftover apple pieces)
1 ½ cups whole grain flour (I used whole grain einkorn)
½ tsp baking soda
½ tsp baking powder
¼ tsp salt
1 ½ tsp ground cinnamon
8 Tbsp butter
1 cup rolled oats
¼ cup honey
1 tsp lemon juice
1 tsp vanilla extract

Steps:

  • Preheat the oven to 350F. Line a 9" x 9" glass baking dish with parchment paper.
  • In a large bowl or the bowl of a stand mixer, combine the flour, salt, baking powder, baking soda, and cinnamon. Cut in the butter using two knives, your fingers, or the paddle blade. The mixture should resemble coarse breadcrumbs. Scoop out 1 cup and set aside.
  • Add the oats and honey to the mixture in the bowl and use your fingers to mix together without creating a paste.
  • Pour this mixture into the prepared pan and press down firmly and evenly to create a crust.
  • Add apple cores and leftover apple pieces (if any) plus lemon juice and vanilla extract to a food processor blender and process until the mixture looks like thick applesauce. You will need about ¼ cup of this mixture, so add additional apple pieces if necessary.
  • In a medium bowl, combine the pureed apple mixture with the diced apples and stir well. Pour evenly over the crust.
  • Sprinkle the reserved crumb topping over the apples, pressing down lightly.
  • Bake for 25-30 minutes, or until the topping is golden brown. Remove the bars from the oven and let them cool completely at room temperature, about 2 hours.
  • For best results, place in the refrigerator for 2 hours before cutting.
  • Makes 16 bars.

Provided by Chew Out Loud

Categories     Breakfast

Number Of Ingredients 11

1 1/3 cup pure applesauce (no sugar added)
6 TB pure maple syrup
1/3 cup melted coconut oil
1 large egg (room temp)
2 tsp pure vanilla extract
1/2 cup grated apple (loosely packed (I like honeycrisp))
2 1/2 cup GF old fashioned oats (divided)
2 tsp ground cinnamon
1 tsp baking powder
1/4 tsp table salt
Optional add-ins: 1/2-1 cup nuts (seeds, shredded coconut, dried fruit, chocolate chips)

Steps:

  • Preheat oven to 350F, with rack on lower middle position. Grease an 8x8 baking pan and set aside.
  • In a large bowl, combine applesauce, maple syrup, melted coconut oil, egg, vanilla, and grated apple. Use hand whisk to combine well; set aside.
  • Using a strong blender or food processor, blend 1 cup oats until you have oat flour. In a bowl, combine your oat flour with remaining rolled oats, cinnamon, baking powder, and table salt. Use hand whisk to combine well.
  • Gradually pour oat mixture into applesauce mixture, using rubber spatula to fold dry ingredients into wet ingredients just until no more dry flour streaks remain (do not over mix)
  • Use rubber spatula to fully transfer batter into greased 8x8 pan, evening out the corners. Bake 30-35 minutes or just until edges are golden and toothpick inserted into center comes out clean. Do not over bake. Let baked oatmeal cool at room temp before cutting into bars. Can be stored at room temp, airtight, for 2-3 days.

  • Adjust the oven rack to the lower third position and preheat the oven to 350°F. Spray a 9×9 inch or 11×7 inch baking pan with nonstick spray. Any similar size or shape pan works, though 8×8 inch would be too small.
  • Whisk all of the ingredients together in 1 large bowl. Pour into prepared baking pan. Top with nuts, if desired. (Or stir into the oatmeal.) Bake for 35 minutes or until the center appears *almost* set, which gives us a soft oatmeal. For drier and more solid baked oatmeal, bake until center has set. Cool for 5 minutes before serving. Spoon or slice and serve with yogurt, almond butter or maple syrup if desired. Cover leftovers tightly and refrigerate for up to 1 week.
