HEALTHY APPLE CINNAMON OATMEAL BARS
My version of a very healthy high protein, low sugar, high fiber snack/energy bar. Only good carbs and a low glycemic index. This bar is very tasty and filling! I also want to stress that this is a LOW sugar item. If you are looking for something that is very sweet, like my first reviewer, you may want to add more sugar or splenda. This is personal preference as I do not like things too sweet.

Steps:
- Preheat oven to 335 degrees F.
- In a large bowl combine oatmeal, cinnamon, nutmeg, other spices, baking powder, sugar, baking soda, salt .
- Mix eggs, milk, apple sauce, vanilla, and protein powder together until well mixed.
- Combine wet and dry ingredients together and mix well.
- Pour into greased casserole dish.
- Bake at 325 for 60 minutes.
- Serve hot or cooled in bars.

Steps:
- Remove the core and thinly slice apples.
- Place apple slices in a large bowl and gently mix in sugar, cornstarch, and cinnamon. Set aside.
- Preheat oven to 350˚F (180˚C).
- In another bowl, combine flour, oats, brown sugar, baking soda, salt, and butter. Mix until crumbly.
- Line a 9x13-inch (23x33 cm) baking dish with parchment paper and pour ⅔ of the oats mixture in the bottom of the pan, pressing firmly to pack it down to make a crust.
- Pour apples over the crust and spread in an even layer. Pour the remaining oat mixture over the top and spread evenly.
- Bake for 30 minutes, or until golden brown.
- Cool completely before cutting.
- Enjoy!

APPLE CINNAMON OAT BARS
Steps:
- Pre-heat oven to 350 degrees. Line 13 x 9 baking dish with foil and lightly coat with cooking spray
- Combine flour, oats, brown sugar, salt, baking soda, cinnamon, and nutmeg in a large bowl
- Cut in 1 cup of butter (2 sticks, softened) and mix until nice and crumbly
- Spread 1/2 of the crumb mixture onto the bottom of your foil-lined baking dish, press lightly to cover the entire bottom
- Add apple slices as the middle layer, spreading them out nice and even. Top the apples with the remaining crumb mixture, spreading this layer evenly over the top of the apples. DO NOT press it down.
- Pour your 1/2 cup of melted butter evenly over the top of the dish and bake at 350 degrees for 30 minutes
- Allow apple oat bars to cool for about an hour. Remove the foil from the baking dish and cut into 12 squares.
- Enjoy warm, and try them topped with vanilla ice cream!

- Preheat the oven to 350°F (177°C). Spray a 12-count muffin pan very well with non-stick cooking spray and set aside.
- Add the oats, baking powder, cinnamon, and salt to a large mixing bowl and mix until well combined.
- In a separate mixing bowl, whisk together the milk, eggs, maple syrup, and vanilla extract until fully combined. Add the dry ingredients into the wet ingredients and mix until well combined. Add the chopped apple and gently mix it in.
- Evenly distribute the mixture between all 12 cavities in the prepared muffin pan. Bake at 350°F for 25 to 27 minutes, or until the tops of the oatmeal cups are lightly golden brown and firm.
- Remove from the oven and allow to cool in the pan for about 5 to 10 minutes, then remove the oatmeal cups and transfer to a wire rack to finish cooling.

- Preheat oven to 350 degrees F, line 8" x 11" baking dish with unbleached parchment paper and spray with cooking spray. Set aside. Cut apples in half, core and slice thinly, using a mandoline or sharp knife.
- In a large mixing bowl, add oats, flour, baking powder, cinnamon and salt; mix well with spatula. Add 1/2 cup honey, egg (quickly whisked in a small bowl), coconut oil and applesauce. Mix with spatula until wet dough forms.
- To make the topping, in a medium bowl add pecans, oats, salt, cinnamon, vanilla extract, and stir well.
- Place dough in prepared baking dish and level with spatula. On top lay apple slices overlapping and sprinkle with topping. Bake for 45 minutes.

- In a small sauce pan on medium heat, add in the coconut oil. Once hot, add in the apples and sauté for about 5 minutes, until the apple soften and are fragrant.
- Add in the oats and sauté for about 2 minutes to gently toast them.
- Add in the water, and turn up the heat to bring to a boil. Mix in the cinnamon. Once the oatmeal is at a gentle boil, turn down the heat and simmer for about 5 minutes, stirring frequently (use a porridge spurtle for best the best stir) and cooking until the oats are done and the apples are tender.

- Preheat the oven to 350F. Line a 9" x 9" glass baking dish with parchment paper.
- In a large bowl or the bowl of a stand mixer, combine the flour, salt, baking powder, baking soda, and cinnamon. Cut in the butter using two knives, your fingers, or the paddle blade. The mixture should resemble coarse breadcrumbs. Scoop out 1 cup and set aside.
- Add the oats and honey to the mixture in the bowl and use your fingers to mix together without creating a paste.
- Pour this mixture into the prepared pan and press down firmly and evenly to create a crust.
- Add apple cores and leftover apple pieces (if any) plus lemon juice and vanilla extract to a food processor blender and process until the mixture looks like thick applesauce. You will need about ¼ cup of this mixture, so add additional apple pieces if necessary.
- In a medium bowl, combine the pureed apple mixture with the diced apples and stir well. Pour evenly over the crust.
- Sprinkle the reserved crumb topping over the apples, pressing down lightly.
- Bake for 25-30 minutes, or until the topping is golden brown. Remove the bars from the oven and let them cool completely at room temperature, about 2 hours.
- For best results, place in the refrigerator for 2 hours before cutting.
