1 cup wheat bran
1 - 1/2 cups whole wheat flour
1/2 cup raisins
1 teaspoon baking powder
1 teaspoon baking soda
3/4 cup milk
1/2 cup molasses ( or honey or equivalent non-sugar sweetener )
2 tablespoons oil
1 egg (beaten)
1/4 cup walnuts (chopped)

Steps:

  • Preheat oven to 400ºF.
  • Stir together the bran, flour, soda and baking powder. Stir in raisins and set aside.
  • Blend the milk, molasses, oil and egg. Add to the dry ingredients and mix just until moistened.
  • Spoon into 12 greased muffin tins. Bake for 15 minutes at 400ºF or until muffins pull away from sides of cups.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Sift together the salt, sugar, flour, and baking powder in a large bowl. In a separate bowl, combine the bran cereal and soy milk; allow to rest for 5 minutes before whisking in the olive oil and egg whites. Fold the dry ingredients into the wet. Spoon batter into muffin cups.

1 teaspoon cinnamon

1 Tablespoon flax egg (or 1 egg)
2 Tablespoons melted coconut oil
1/4 cup pure maple syrup or honey
1 teaspoon vanilla extract
1/2 cup grated carrot
1/4 cup raisins
1/4 cup chopped walnuts (optional)

Steps:

  • Preheat oven to 375°F.
  • Line muffin tin with paper or silicone liners or coat well with cooking spray.
  • Make flaxseed egg by whisking flaxseed with 3 Tablespoons in a small bowl. Set aside.
  • Combine flour, oat bran, cinnamon, baking soda and salt in a large bowl.
  • Mash bananas in a bowl and add flaxseed egg, coconut oil, maple syrup, vanilla, carrots and raisins.
  • Pour wet ingredients into the bowl with the dry ingredients and mix until just combined. Be careful not to over mix.
  • Fill each muffin cup 3/4 of the way full, sprinkle chopped walnuts on top of each muffin (if using) and bake for 20-25 minutes or until a toothpick comes out clean when inserted into the middle of a muffin.
  • Remove from oven and let cool completely before enjoying.

Steps:

  • Preheat oven 375 degrees F. Line a standard muffin tin with paper liners or grease with cooking spray.
  • Add raisins to a small bowl and soak them in hot water for 10 minutes, to allow them to plump. Meanwhile mix together bran and buttermilk, let stand 5 minutes.

It became the basis for this recipe, but I've added a number of very healthy additions. Customize this as you wish: choose different nuts, add raisins, dates, dried apricots... make them your own!

1/2 cup wheat germ
1/2 cup flax seed meal
1 cup whole wheat flour
1 tablespoon vital gluten
2 teaspoons baking soda

1 cup brown sugar
1/4 cup hemp seeds (aka hemp hearts)
2 tablespoons chia seeds

You can add more sugar if you like but I have just found out I am diabetic so I was trying to keep the sugar down I suppose you could add splenda to them but my apple sauce was made with sweet apples so I didn't need too much sugar.I use a silicone muffin mould and don't use paper cases.

Steps:

  • Preheat oven to 350 degrees F. Fill muffin tins with paper muffin liners (these work the best in this recipe - I do not recommend making these muffins without using paper liners)
  • Add 1 tsp vinegar to milk and set aside
  • In a large bowl, cream butter with sugar, then stir in oil. Add molasses.
  • in a separate medium bowl, mix flours, bran, wheat germ, baking powder and chia seeds together. Add to butter mixture and mix well. You can use an electric mixer for this part.
  • Add baking soda to milk and stir. Add to mixture.
  • Stir in walnuts.
  • Fold in beaten eggs. Stir only until combined
  • Fill paper filled muffin liners to top.
  • Bake in preheated oven for 20 minutes or until tester or toothpick comes out clean.

The original recipe is from Bob's Red Mill, however I have tweaked it to be slightly healthier so I am posting here despite the original recipe already being posted a few times on Food.com. My version is higher fiber, lower fat, and lower sugar as well. I actually will eat 3 or 4 of these muffins as a meal replacement and I find that they completely fill me up. And... the best part is that the taste is amazing... just like carrot cake. If you don't mind the calories, try it with a little butter on top.

  • Preheat oven to 180°C. Line a muffin tray with liners.
  • Mix the oil, eggs and brown sugar together, until the sugar dissolves.
  • Add the bran, flour, milk and baking soda and baking powder, vanilla essence and mix together.

  • 1. Sift together the bread flour, baking soda, baking powder and milk powder.
  • 2. Add the rest of the dry ingredients to the above and blend well by hand.
  • 3. In a separate bowl; whisk together the eggs and oil until blended.
  • 4. Add the water to the egg mixture and whisk together.
  • 5. Make a well in the centre of the dry ingredients and add the wet ingredients. Fold together just until blended. DO NOT OVERMIX!!!!!
  • 6. Let the mix rest for approx. 10 to 20 min. so the bran has time to soak up the liquid.
  • 7. Grease top of 3 muffin pans. Paper line the muffin cups.
  • 8. Once mix has rested, deposit batter with piping bag evenly over 3 doz. Muffins.
  • 9. Bake muffins at 400F for approx. 20 min.; until the muffin springs back when touched.
  • 10. Remove muffins from tins directly after baking to prevent “sweating”.

1/2 cup pumpkin seeds ((pepitas), chopped nuts, bittersweet chocolate chips, dried fruit or 1/3 the fat cream cheese)

Steps:

  • Preheat oven to 425 degrees. Lightly spray or line one muffin tin, set aside.
  • In a small glass measuring cup or bowl, whisk together the pumpkin puree, yogurt, egg, oil, brown sugar, and vanilla.
  • In a separate mixing bowl whisk together the bran, flour, flaxseed meal, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Gradually pour in the wet ingredients into the bowl of dry ingredients along with any "mix-ins" (or reserve for the top), folding/mixing just until you see just a bit of dry ingredients (about 17-20 strokes).
  • Scoop the batter into the prepared pan, dividing evenly between the wells. If you are using pepitas, sprinkle on the tops or if you are using cream cheese, place an teaspoon on top of each muffin and use a knife to gently fold in. Place in the oven and bake for 12-14 minutes or until the tops are golden brown and spring back when touched. Remove from the oven and allow to cool in the pans for 5 minutes before transferring to a wire rack to cool completely.

  • Preheat oven to 400 degrees F. Line a 12 cup muffin tin with only 10 liners and spray the inside of them with nonstick cooking spray -- DO NOT SKIP THIS.
  • In a large bowl mix together brown sugar, molasses, applesauce, eggs, almond milk, apple cider vinegar until well combined, smooth and creamy.
  • In a separate large bowl mix together dry ingredients: wheat bran, whole wheat pastry flour, baking powder, baking soda, salt and cinnamon. Add dry ingredients to the wet ingredients and mix with a spatula until just combined. Stir in melted and cooled coconut oil, mixing again until just combined.
  • Divide batter evenly into 10 muffin liners and bake for 15-20 minutes or until toothpick comes out clean or with just a few crumbs attached. Cool muffins for 5 minutes then remove and transfer to a wire rack to finish cooling. Muffins are best served warm with a little butter on top.
