2 eggs, beaten until fluffy
1/4 cup Ricotta Cheese
4-6 drops stevia
1/2 tsp. Baking Powder
1/4 tsp. Cinnamon
1/8 tsp. Nutmeg

Steps:

  • Add all ingredients to beaten eggs and mix until well blended. Spray waffle maker with MCT or other cooking spray. Pour into waffle maker and cook as usual. I have also done this like pancakes. Just as yummy! Top with toppings of choice: butter, strawberries, blueberries, no-sugar added syrup. 1/4 cup coconut flour
1/2 t baking powder
1/2 t salt
5 drops Stevia
4 eggs beaten
4 T melted butter
4 T heavy cream
2 TBS vanilla extract

Steps:

  • In one bowl, mix the flour and baking powder. In another bowl mix the remaining ingredients. Add the dry to the wet and mix up. If it is too thick, add a bit of almond milk. Let batter sit for 5-10 minutes. This is key to using coconut flour correctly. Put batter in waffle maker.

3 eggs, room temperature (important!)
1/3 cup coconut flour
1/4 cup melted butter
1/2 teaspoon vanilla
1/4 teaspoon salt
1/4 cup splenda
1/2 teaspoon baking powder
2-5 tablespoons water (see below)
1/2 cup raspberries or blueberries

Steps:

  • Heat oven to 375° F. Prepare pan with a generous amount of butter. This recipe makes six "regular"-sized muffins. Whisk or beat the eggs until whites and yolks are well-mixed. Stream in the butter while continuing to whisk. Add salt and vanilla and mix until combined. If using liquid sweetener (preferred, as it is zero carb), add at this point. Mix the remaining dry ingredients, coconut flour, baking soda, and sweetener if using powder. Mix the dry and wet ingredients together. Now you will whisk in water, one tablespoon at a time. The coconut flour will absorb the liquid from the wet ingredients like crazy. You want to get it to a consistency that will hold up the berries, but not be too thick. I usually end up using about 4 Tablespoons of water. Gently mix in the berries and divide among 6 muffin cups. Bake for about 15 to 18 minutes, or until just turning golden on top.

2 tablespoons coconut milk or heavy cream
1 teaspoon splenda
1/4 teaspoon salt
2 tablespoons sifted organic coconut flour
1/4 teaspoon baking powder

Steps:

  • Blend together eggs, oil, coconut milk, sugar and salt. Combine coconut flour with baking powder and thoroughly mix into batter. Heat 1 tablespoon (I found this to be a bit much - I would use 1/2 tablespoon) of coconut oil in a skillet. Spoon batter onto hot skillet making pancakes about 2½ to 3 inches in diameter. Batter will be thick, but will flatten out when cooking.
