Before marinating, score the fat to allow the flavors to better infuse the meat, and let the loin soak from two to 24 hours, turning two or three times. Chinese five-spice powder is a blend of spices that usually combines cinnamon, star anise, nutmeg, all-spice, and Szechuan peppercorns in equal measure. It imparts a distinctive, pungent flavor and can be found in Asian specialty stores and some supermarkets.

1/2 cup fresh orange juice
2 tablespoons frozen orange-juice concentrate
2 tablespoons honey
1 tablespoon soy sauce
1 tablespoon olive oil
1 teaspoon minced garlic
1 teaspoon minced fresh ginger
1/2 teaspoon Chinese five-spice powder
1 teaspoon Asian chile paste
2 to 3 drops hot chile oil
1 boneless pork-loin roast (4 to 4 1/2 pounds), trimmed
Vegetable-oil cooking spray

Steps:

  • Combine orange juice, juice concentrate, honey, soy sauce, olive oil, garlic, ginger, five-spice powder, chile paste, and chile oil in a bowl, stirring well.
  • Put the roast in a shallow glass or ceramic dish, and pour the marinade over it. Turn to coat. Cover, and refrigerate for at least 2 hours and as long as 24 hours.
  • Prepare a charcoal or gas grill, arranging the coals for indirect cooking. Lightly spray the grill rack with vegetable-oil cooking spray. The coals should be moderately hot.
  • Lift the roast from the marinade, reserving the marinade and brushing it on the roast 2 or 3 times during the first 30 minutes of cooking. Grill over indirect heat with the grill covered for about 1 hour 10 minutes, or until a meat thermometer inserted in the center of the roast registers 150 degrees to 155 degrees. Remove the roast from the grill, and let it rest for about 10 minutes before slicing.

Steps:

  • Place onions in a 5-qt. slow cooker. Mix garlic, salt and pepper. Cut roast in half; rub with garlic mixture. In a large nonstick skillet coated with cooking spray, brown pork in oil on all sides. Transfer to slow cooker; add bay leaves., In a small bowl, mix hot water and honey; stir in soy sauce, vinegar and spices. Pour over pork. Cook, covered, on low for 4-5 hours or until meat is tender., Remove pork from slow cooker; keep warm. Discard bay leaves. Mix cornstarch and cold water until smooth; gradually stir into slow cooker. Cover and cook on high for 30 minutes or until thickened, stirring twice., Coarsely shred pork into bite-sized pieces; serve with sauce over rice. Sprinkle with sesame seeds and, if desired, green onions.

ASIAN MARINATED GRILLED PORK TENDERLOIN

3/4 cup soy sauce
1/2 cup rice wine vinegar
1 tablespoon hot chili sauce (recommended: sambal oelek)
1 (1-inch) piece ginger, finely chopped
3 garlic cloves, smashed and finely chopped
1 scallion, both green and white parts, thinly sliced
1 orange, zested
4 pork tenderloins
2 tablespoons coriander seeds, toasted and ground

Steps:

  • In a medium bowl, combine the soy, rice wine vinegar, chili sauce, ginger, garlic, scallions and orange zest. Place the pork in a large container or bowl and pour the marinade over the pork. Cover with plastic wrap, and let sit for 2 hours at room temperature, or overnight in the refrigerator.
  • Remove the pork from the container, put the marinade in a small saucepan and bring it to a boil over medium heat. Remove from the heat and reserve it for drizzling over the pork when serving. *WARNING: This liquid MUST be brought to a boil to kill any bacteria from raw meat juices.
  • Preheat the grill to medium-high heat.
  • Dust the pork liberally with the ground coriander seed and place on the preheated grill. Brown it on all sides then move it to a cooler part of the grill to cook it to desired doneness, about 10 to 12 minutes.
  • Remove the pork from the grill to a cutting board and let rest for 10 minutes before slicing. Slice the pork on the bias and place on a serving platter. Serve drizzled with the reserved boiled soy marinade.

SPICY CHINESE PORK TENDERLOIN

This easy recipe is one of my favorite dinners for company. Leaving out the red pepper flakes, makes it a dish for anyone. Presented on a platter over rice, it looks very appealing. It is equally as good made on the grill, or in the oven. It originally came from a syndicated column in our local newspaper. Prep time includes marinading.

1/3 cup soy sauce
1/3 cup hoisin sauce
2 tablespoons vegetable oil
3 tablespoons sugar
3 crushed garlic cloves
1 dash red pepper flakes, to taste
2 (3/4 lb) pork tenderloin, about (not pork loin)
1/2 cup water
1/4 cup butter
6 green onions, green tops included, sliced into rings
hot cooked rice

Steps:

  • In heavy duty freezer Ziploc bag, mix soy sauce, hoisin sauce, oil, garlic, sugar and red pepper flakes.
  • Add tenderloins and stir to coat all over.
  • Seal and refrigerate at least 1 to 3 hours, turning bag over occasionally.
  • Preheat oven to 500°F.
  • Line small roasting pan with foil.
  • Spray a cooling or cooking rack with nonstick spray, and place on top of pan.
  • Place tenderloins on rack.
  • SAVE MARINADE.
  • Place meat in preheated oven.
  • Roast 9 to 10 minutes.
  • Turn and roast 9 to 10 minutes more.
  • Check temperature in thickest part of meat.
  • It should read approx 160°F.
  • Remove from oven, and allow meat to stand 8 minutes.
  • Meanwhile pour marinade from bag into saucepan.
  • Rinse the bag with the 1/2 cup of water.
  • Add to saucepan.
  • Bring to low boil.
  • Boil slowly for 5 to 6 minutes.
  • Right before ready to serve, add butter to sauce; stir.
  • Slice meat into 1/4 inch slices.
  • Place on hot rice.
  • Spoon marinade sauce over meat and rice.
  • Top with green onions.
  • Note: This can be cooked on the grill also.
  • Cook until temperature reaches 150 to 160°F.
  • You can also cook in oven for 6 minutes each side, and then toss on a gas grill for a few minutes for a outdoor flavor.

2 teaspoons salt
1 teaspoon powdered ginger
1/2 teaspoon cinnamon
1 teaspoon garlic powder

2 pounds pork tenderloin
½ cup brown sugar
1 tablespoon cornstarch
¼ cup rice vinegar (or white)
½ cup cold water

Steps:

  • In a small bowl, combine the brown sugar, salt, powdered ginger, cinnamon, garlic, cloves, black pepper, and crushed red pepper.
  • Place the tenderloins in the slow cooker. Rub the seasonings over the pork, including the bottom.
  • Pour ½ cup water in the slow cooker, on the edge or in the middle so that you don't wash off all the spices you just rubbed on.
  • Cook on low for 6-8 hours, then preheat your broiler.
  • While the pork is finishing up in the slow cooker and your broiler heats up, combine 1/2 cup brown sugar, cornstarch, rice vinegar, COLD water, and soy sauce in a small saucepan.
  • Set over medium heat and stir until mixture thickens, about 4 minutes.
  • Remove from heat and stir in minced ginger.
  • Line a baking sheet with aluminum foil and spray with nonstick spray.
  • Remove the pork from the crock pot (discard the liquid) and place on the lined baking sheet. Brush a generous amount of the glaze on the pork.
  • Put your oven rack as high as it will go, and broil the pork for 1 or 2 minutes, until bubbly and caramelized. Don't walk away! Repeat 2 to 3 more times until it is as crusty as you want it. I wouldn't go many more times than this though, or your pork will dry out.
  • Serve with remaining glaze on the side, and garnish with lime and cilantro. I love to serve this pork with Asian Cauliflower "Rice."

4 chipotle chiles in adobo (canned)
1 tablespoon adobo sauce, from canned chilis
1/2 teaspoon ground cumin
1/4 teaspoon ground black pepper

1/2 cup diced tomato, canned (or 1 fresh, diced)
2 garlic cloves, peeled
1 teaspoon orange peel, grated
1/4 cup fresh orange juice

Steps:

  • Place all marinade ingredients in a blender and blend until smooth.
  • If pork loin needs to be tied, do so now.
  • Place pork in a large zipper-type plastic bag. Pour marinade over roast and seal bag. Turn it several times to get meat covered.
  • Refrigerate for at least 4 hours, turning occasionally.
  • Prepare grill or indoor rotisserie.
  • Remove roast from marinade (reserve marinade) and put on spit.

1 stalk celery, sliced
sliced mushrooms (optional)
2 garlic cloves, minced
3 tablespoons brown sugar
1/2 cup tamari or 1/2 cup low sodium soy sauce

2 tablespoons apple cider vinegar
3 tablespoons mirin
1 teaspoon grated fresh ginger
2 tablespoons hot red chili peppers, sauce (or more depends on your preference)
cooked soba noodles or rice

Steps:

  • In jar with lid, combine all the sauce ingredients; shake to blend and refrigerate at least 2 hours.
  • Cook rice or noodles, drain and set aside,covered.
  • Heat oil in wok or large skillet over Med-Hi heat.
  • Add pork and cook for about 3 minutes; add onion, celery, and green pepper (and mushrooms, if using).
  • Saute all for another 2-3 minutes. (The pork will brown nicely.).
  • Add sauce and lower heat to medium.
  • Cook until sauce thickens slightly; stirring to coat veggies and meat with sauce. Do not overcook the veggies; need to be crispy.
  • Place rice or noodles in bowls or on plates and pour on the pork mixture.
  • Sprinkle with green onions to serve.

Spicy Asian Grilled Pork Loin Roast with soy sauce, sesame oil, orange juice, honey, thai chilies, ginger, garlic and honey

1 pork loin roast ((about 3-4 pounds))
1 cup orange juice
1/4 cup soy sauce
3 tbsp sesame oil
1/3 cup honey
3 thai chilies (, minced)
3 garlic cloves minced
3 tbsp fresh grated ginger
2 tbsp sesame seeds

Steps:

  • Trim any excess fat off the pork loin.
  • Mix the remaining ingredients (except the sesame seeds) together.
  • Place roast in a bowl or ceramic baking dish. Pour over the marinade and turn the roast to ensure that all the meat is covered. Cover the dish with plastic wrap and place in the fridge for 2-4 hours. Turn the meat a couple extra times during the marinating process.
  • Turn on one side of the grill to medium high heat. Once the temperature of the grill is about 400F it is ready. Place the roast on the side of the grill with the heat on to seal the outside of the meat. Cover the lid of the grill and cook for 5 minutes. Turn the meat and cook the other side for 5 minutes.
  • After the meat has developed a nice seal and has some grill marks, move the meat over to the side of the grill where the flames are turned off. Cover the lid and continue to cook under indirect heat until the roast is cooked through, about 45 minutes or so. The internal temperature should be 145F.
  • Remove the roast from the grill and let it rest for 5-10 minutes before slicing.
  • Slice the roast into 1/4-1/2 inch slices and sprinkle with sesame seeds.

EASY GARLIC GINGER GLAZED STICKY PORK

1 1/2 pounds boneless (center cut pork loin cut into 1/4-inch thick slabs, then 1/4-inch thick strips, about 3 inches long)
1 teaspoon Kosher salt
1/2 teaspoon black pepper
1 tablespoon canola or peanut oil (plus extra if necessary)
5 cloves garlic (peeled and minced or pressed through a garlic press)
2- inch knob of fresh ginger (grated)
1/2 cup mild honey
2 tablespoons to 1/4 cup sriracha or chili garlic sauce
1 tablespoon rice wine vinegar or white wine vinegar

Steps:

  • In a liquid measuring cup or a small mixing bowl, whisk together the mild honey, sriracha, and rice wine vinegar. Set aside.
  • Pour the oil into a heavy-bottomed skillet over medium high heat and swirl to coat. Let it heat until it is shimmering. While the oil heats, sprinkle the pork strips with kosher salt and black pepper then toss with your hands to distribute it evenly. Carefully add the pork to the pan, working in batches to avoid overcrowding the pan. Let the first side brown, flip the pieces with tongs or a spatula, and brown the second side. Transfer the pork to a plate.
  • Return the pan to the heat and add in the garlic and ginger. Stir until fragrant, about 30 seconds.
  • Raise the heat to high and pour in the sauce mixture and bring to a boil, stirring frequently. When the sauce is very bubbly and thickened like warm honey, toss the pork back in and toss constantly to coat everything and reduce the sauce to a thick, sticky glaze on the pork. This can be served immediately over rice, noodles, or as finger food, or can be allowed to cool and be eaten cold.

1 Egg
3 tbsp Cornstarch
3/4 cup Water

2 tbsp White/Yellow Onion (very finely chopped)
3 tbsp Soy Sauce (I used low sodium)
3 tbsp Brown Sugar

2 tbsp Canola Oil

Steps:

  • In a small bowl, mix vinegar, sesame oil, ginger, garlic, onion, brown sugar, soy sauce, sriracha, red pepper flakes and water.
  • Heat your skillet to medium heat and pour in the sauce. Bring sauce to a light simmer and let simmer for about 10 minutes until sauce darkens. Then, carefully pour sauce back into the bowl and set aside for later.
  • In a large mixing bowl, add pork and cornstarch and toss until pork is fully coated. You may need to add an additional tablespoon or two of cornstarch.
  • In a small bowl, whisk egg. Pour egg over the pork and gently mix pork to coat.
  • In the same skillet you cooked the sauce in, add oil and heat to medium-high heat. Once hot, carefully add pork to the skillet. Gently spread pork out into an even layer and let cook until bottom is golden. Don't panic, the pork will look weird at this point but it will all come together.
  • Once the bottom of the pork is golden, flip over, gently breaking pieces apart. Cook for another 5-7 minutes on the other side until golden. Then, turn heat to low and let cook for another 5 minutes, stirring occasionally. Pork should be cooked through to at least 150 degrees.
  • Drain excess oil from pan (if any) and turn heat up to high. Pour sauce over the pork and begin stirring frequently for a few minutes.
  • Serve with a sprinkle with fresh chopped green onions and additional red pepper flakes(optional). Enjoy!

1 tablespoon soy sauce

2 -3 drops hot chili oil
4 lbs pork loin

Steps:

  • combine orange juice, concentrate, and other marinade ingredients, stir well.
  • reserve 1/3 of the marinade, refrigerate place pork roast in a baking dish, cover with marinade, refrigerate 2-12 hours heat grill, remove roast from marinade and discard.
  • cook over indirect heat marinating often about 1 1/2 hrs, until meat thermometer registers 150-155.

2 pieces (about 2 pounds) pork tenderloin, trimmed of silver skin
Kosher salt
1/2 teaspoon sweet paprika
2 tablespoons canola oil
3 tablespoons white vinegar
3 tablespoons dark soy sauce
3 tablespoons honey
3 tablespoons fish sauce
3 tablespoons freshly grated ginger, skin on
6 scallions, minced, green and white parts both
36 to 40 medium to large Bibb lettuce leaves
1 small Fresno chili, thinly sliced
12 stems cilantro (about 1/2 cup leaves), stemmed

Steps:

  • Cook the pork: Season the pork all over with the salt, then sift the paprika through a fine mesh sieve over the pork. Heat a cast iron skillet large enough to hold the pork. Add the oil and when it begins to smoke lightly, use a pair of metal tongs to place the pork into the hot oil. Cook over high heat, turning the pork often, browning on all sides, until it reaches an internal temperature of 145 degrees F in the thickest part of the tenderloin, about 15 minutes total (if you like a little more "done", cook a few minutes longer on each side). Remove the pork and allow it to "rest" on a flat surface. If you like a little more "done", cook a few minutes longer on each side.
  • Make the sauce: In a medium bowl, combine the vinegar, soy sauce, honey, fish sauce, and ginger. Add the scallions. Taste for seasoning. Set aside.
  • Assemble the wraps: On a large serving platter, arrange "cups" of lettuce leaves, 2 to 3 layers of lettuce per cup. Form the cups with one leaf inside another with the lettuce spines stacked on top of the other.
  • Slice the pork into 1/4-inch thick rounds. Top each lettuce cup with 3 or 4 slices of pork. Season the pork with a little more salt, then top with the chiles. Drizzle the meat with some of the sauce. Top with the cilantro leaves. Top with more sauce if you like.
