CINNAMON CHOCOLATE MERINGUES
Steps:
- Preheat the oven to 275 degrees.
- With an electric beater on low speed, whip the egg whites and vanilla until frothy. On a medium speed, add the cream of tartar and whip until they turn white and begin to stiffen. Slowly add the sugar, whipping constantly, until the whites are stiff and glossy.
- Sift the cocoa powder and cinnamon over the whites. Gently fold the cocoa and pecans into the egg whites.
- Drop heaping tablespoons of the batter, several inches apart, on parchment lined cookie sheets.
- Bake for 45 minutes. Turn the oven off and leave the cookies in the oven for 20 to 25 minutes with the door closed.
- Store the cooled meringues in an airtight container.

- Sift together sugar and cocoa powder.
- In a large bowl, beat the egg whites, cinnamon, and cream of tartar with an electric mixer on medium speed until it forms soft peaks.
- Beat in the sugar mixture one tablespoon at a time.
- Beat the entire mixture on high until it's glossy and stiff.
- Line two baking sheets with parchment paper.
- Drop by rounded teaspoonfuls of batter onto the sheets, leaving 1-inch between.
- Bake at 250 degrees F for 40 to 45 minutes, or until the tops feel dry to the touch.
- Cool 5 minutes, then remove from parchment paper.

CHOCOLATE DELIGHT - HCG - P2/P3/P4
For those on the HCG diet who crave chocolate!! =) Some find that they can eat this in Phase 2, others cannot. If you're curious, about whether or not you can, try making a tiny amount (1 Tbs. coconut oil, 1 Tbsp. cocoa powder & sugar-free sweetener to taste... The more cocoa powder, the more of a 'dark chocolate' taste). Then check your weight the next morning. =) It's not as good as milk chocolate but it's not too bad of a substitute, imo. But I've heard that most people either love it or hate it. =) In P3 and P4 you can add other ingredients... nuts, coconut flakes, etc. Be creative!!

Steps:
- Melt coconut oil (in microwave) for 15-45 seconds, just long enough for it to turn to liquid.
- Add cocoa powder (the more cocoa powder, the more the flavor will taste like 'dark chocolate', so if you don't like dark chocolate, use the lesser amount of cocoa powder) and add sweetener (8 packets or to taste). Mix thoroughly.
- Pour small amounts into an ice cube tray (or similar) and freeze for at least 15 minutes, to harden. Then enjoy! =).

- Separate one egg at a time into a small bowl, letting the white fall into the bowl and discarding the yolk. If there's any trace of yolk in the white, discard the white and start over. If it's yolk-free, transfer to a clean medium mixing bowl. Repeat with the remaining 2 eggs. Add cream of tartar to the whites and beat with an electric mixer on medium-high speed until soft peaks form. Slowly add sugar (stevia), a little at a time, until incorporated. Continue beating until the whites are stiff and glossy. Add vanilla and beat for 30 seconds more. Sift 3 tablespoons cocoa powder and cinnamon over the meringue. Use a rubber spatula to gently fold them in along with the chocolate chips until combined; do not over-mix. Position racks in the upper and lower thirds of the oven; preheat to 200°F. Line 2 large baking sheets with parchment paper. Place a small amount of the meringue under each corner of the paper to secure it to the pan. Fill a 1-quart sealable plastic bag (or pastry bag fitted with a 1/2-inch plain tip) with the meringue. Seal the bag almost completely, leaving a small opening for air to escape from the top as you squeeze. Snip off one corner of the bag with scissors, making a 3/4-inch-wide opening. Fold the top of the bag over a few times, then gently push the meringue down to the snipped corner. Working with the bag perpendicular to the baking sheet, pipe the meringue into 1 1/2-inch-diameter cookies, spacing them about 1/2 inch apart. Bake the cookies until dry and crisp throughout, about 1 1/2 hours. Transfer the pans to wire racks and let the cookies cool to room temperature, about 15 minutes. Sift 1 tablespoon unsweetened cocoa powder over the baked meringues for garnish, if desired.
