This recipe adapted from the Great British Bake Off is for a simple and classic dacquoise but can also serve as a base for other variations. The dacquoise is made with a combination of hazelnut meringue and custard folded with whipped cream. Once assembled, it is decorated with swirls of chocolate ganache and praline.

250 g roasted and peeled hazelnuts, finely chopped
250 g white sugar
25 g cornstarch
6 large egg whites
pinch of salt
CHOCOLATE GANACHE
150g dark chocolate (about 36% cocoa solids)
110ml double cream
CUSTARD FILLING
600ml full-fat milk
3 large egg yolks, at room temperature
125g caster sugar
2 tbsp chicory and coffee essence
50g cornflour
300ml whipping cream
PRALINE
50g caster sugar
36 blanched (skinned) whole hazelnuts
1/2 tsp lemon juice
100g toasted hazelnuts, chopped, for the sides of the cake

Steps:

  • Position the oven racks in the upper, middle, and bottom part of the oven, then set the oven to preheat to 150 °C. Line three 21 cm round baking pans or trays with parchment paper or, if you are using trays, draw a 21 cm diameter circle on each. Set aside.
  • In a small bowl combine hazelnuts, 100 grams of caster sugar, and cornflour. Whisk egg whites with a pinch of salt at medium speed for 2 minutes. Increase the speed to high, and with the mixer running, gradually add 200 grams of sugar until stiff glossy peaks. Fold the hazelnut mixture into the meringue.
  • Spoon the meringue into a piping bag fitted with a 1.5 cm plain tube. Pipe a spiral of meringue starting from the center of each drawn circle and working outwards. Bake for an hour, rotating the upper and bottom baking tray after 30 minutes, so they cook evenly. Turn off, and leave the meringues to cool down in the oven with the door slightly open.
  • To make chocolate ganache, place the chopped chocolate in a heatproof bowl. Heat the cream until hot, just simmering, but not boiling and pour over the chocolate. Let sit for a minute and then stir until smooth. Cool to room temperature, then refrigerate until it thickens. Fill the piping bag fitted with a medium star nozzle with ganache and set aside.
  • To make the custard, bring the milk to a boil over low heat. Whisk the egg yolks, sugar, and coffee and chicory essence, then whisk in the cornflour, a tablespoon at a time. Pour the hot milk over the egg mixture, whisking continuously, then pour the mixture back into the pan. While constantly whisking, bring to a boil, then decrease the heat, and let it simmer for 2-3 minutes until thick and smooth. Remove from the stovetop and wait an hour for it to cool. Once the custard is chilled, fold in softly whipped cream.
  • Whip the cream until soft peaks. Whisk half of the whipped cream into the cold coffee mixture, then gently fold in the rest. Cover and chill until needed.
  • Melt sugar in a small frying pan (without stirring). Cook until golden caramel color, or until a thermometer registers 300°C. At that point add the whole hazelnuts and lemon juice, and stir with a wooden spoon until well blended. Pour the mixture onto a baking tray lined either with baking paper or silicone. Using two teaspoons form 12 pieces of hazelnut praline. Wait for it to cool completely before use.
  • Position one meringue layer on a large serving plate, then in an even layer, coat it with one-third of the coffee cream. Place a second meringue layer on the cream to cover, then spread the top part with half of the coffee cream. Top with the third meringue layer, coat the sides of the cake with the coffee cream. Press roasted and chopped nuts into the sides of the cake. Pipe 12 swirls of the ganache onto the top outer edge of the cake, taking care they are evenly spaced, then place a piece of praline on each.

50g whole blanched hazelnuts
2 tsp Dijon mustard
1 tsp red wine vinegar
2 tbsp dry sherry
50ml vegetable oil
500g carrots , thinly sliced

Steps:

  • Toast the hazelnuts in a dry, non-stick pan until golden. Leave to cool a little, then roughly chop or crush using a pestle and mortar. Whisk the mustard with the vinegar and sherry, then slowly pour in the oil, whisking all the time. Season and set aside.
  • Boil the carrots for 3-4 mins or until just tender, drain and tip back into the pan. Pour over the dressing, stir to coat, cook over a low heat for 1-2 mins, then tip into a serving dish. Scatter over the hazelnuts and serve.

1 cup chocolate-hazelnut spread, such as Nutella
3 ounces dark or semisweet chocolate (70 percent and over), chopped
1 1/2 cups whole milk
1 cup heavy cream
1/4 cup granulated sugar
3/4 teaspoon kosher salt
6 large egg yolks
1 1/2 to 2 teaspoons Sriracha sauce
1/2 teaspoon instant espresso powder, optional
1/2 teaspoon vanilla extract
Whipped cream or creme fraiche, for topping
Cocoa or grated chocolate, for dusting
Minced hazelnuts, for garnishing
Sea salt, for garnishing

Steps:

  • Spoon the chocolate-hazelnut spread into your blender. Add the chopped chocolate. Set your ramekins/cocottes/teacups/glasses on a baking sheet.
  • In a medium saucepan, whisk together the milk, heavy cream, sugar, salt and egg yolks over medium heat. Cook, stirring constantly, 8 to 10 minutes; I like to use a flat-bottomed wooden spatula so that I can make sure the eggs aren't catching on the bottom and cooking. Cook until the custard thickens, resembling something like very thick paint. It should register between 175 and 180 degrees F on an instant-read thermometer. Another test: the custard should coat the back of the spatula, and when you draw a line across the back of the spatula with your (clean!) finger, the line should hold and maintain its edges without running. Remove from the heat immediately.
  • Now, pour the warm custard through a strainer into the blender. Let it sit 5 minutes to melt the chocolate. Add the Sriracha, espresso powder if using and vanilla extract. Then, put the lid on the blender, hold down with a thick kitchen towel, and blend on low, then high, until smooth and combined, scraping down the sides if necessary. Taste for seasoning.
  • Pour the custard into your containers, tapping them against the rim of the baking sheet to remove air bubbles. Pop them in the fridge and chill until the custards are set, 2 to 3 hours.
  • Top with whipped cream or creme fraiche, some grated chocolate and minced hazelnuts. A little sea salt would be nice too.

I recently prepared a beautiful hazelnut cake from a great Italian Cookbook I own. I adored the cake and was reminded how distinctive and delicious hazelnuts can be. I have read other recipes that call for a nut infused cream, particularly ice creams. I have always loved custard as a very satisfying dessert....so.....I came up with this recipe. Custards are a very simple dish that do require that you prepare them in a water bath. Do not skip that part....it is crucial to success. Serve this pudding at your next dinner party. It is a perfect ending.

1/3 cup(s) hazelnuts, roasted, unsalted, chopped
1 pinch(es) salt
1/3 cup(s) heavy cream
1 2/3 cup(s) milk
2 tablespoon(s) honey
2 large eggs
1 large egg yolk
1/4 cup(s) sugar

Steps:

  • Chop roasted hazelnuts in a mini processor until a coarse grind is achieved.
  • Place ground nuts in a saucepan with salt, cream, milk, and honey. Stir well. Bring to a boil over medium/low heat stirring occasionally. Remove from heat and let steep for 20 minutes.
  • Preheat oven to 350 degrees. Place a kettle of water on the stove to come to a boil.
  • Prepare an oblong baker for a water bath by lining the bottom with a white or natural colored tea towel. Place 6 (4 oz) ramekins on top of the towel.
  • Whisk the eggs and yolk with the sugar until smooth. Do not overbeat.
  • Strain the nuts from the cream trough a fine mesh strainer, adding them to the beaten eggs. Discard the nuts.
  • Pour/distribute the custard in to the ramekins. Place the oblong pan with the ramekins in the pre-heated oven. Pour boiling water from the kettle to come half way up the ramekins. Close oven door and bake for around 40 minutes. Custard will test with a sharp knife that will come out clean.
  • Cool ramekins a few minutes on counter and then carefully remove them from the water bath with a slotted spatula to rest on a clean, dry tea towel until thoroughly cooled.
  • Store covered in the fridge. Serve cold with whipped cream and fresh blueberries, blackberries, or huckleberries.

PEAR AND HAZELNUT FRANGIPANE TART

1 cup hazelnuts, toasted, loose skins rubbed off in a kitchen towel, and cooled
1/2 cup sugar
1/4 cup all-purpose flour
3/4 stick (6 tablespoons) cold unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 tart shell
3 firm-ripe Bosc or Anjou pears
1/4 cup apricot preserves, heated and strained

Steps:

  • Preheat oven to 350°F.
  • Pulse hazelnuts with 1/4 cup sugar in a food processor until finely ground, then add flour and pulse to combine.
  • Beat together butter and remaining 1/4 cup sugar with an electric mixer at moderately high speed until pale and fluffy. Add eggs 1 at a time, beating well after each addition, then beat in extracts. Reduce speed to low and mix in nut mixture until just combined.
  • Spread frangipane filling evenly in tart shell. Peel, halve, and core pears, then cut lengthwise into 1/4-inch-thick slices, holding slices together to keep pear shape intact. Arrange pears decoratively on filling, fanning slices slightly. Bake until pears are golden and frangipane is puffed and golden brown, 30 to 40 minutes. Brush pears (not filling) with preserves and cool tart completely in pan on rack, then remove side of pan.

  • For hazelnut custard, bring milk, cream and hazelnuts to the simmer in a saucepan over medium-high heat. Set aside to cool (1 hour), then refrigerate until chilled and infused (4 hours or overnight). Strain hazelnut milk into a clean saucepan and bring to the simmer over medium-high heat. (Discard hazelnuts, or dry them in a low oven and reserve for another use.) Meanwhile, whisk sugar and yolks in a bowl until pale, then add flours and vanilla seeds, and whisk to combine. Gradually pour hot milk mixture into yolk mixture while whisking, then return to pan and whisk over medium-high heat, ensuring you reach the corners of the pan, until thick and bubbling (5-7 minutes). Set aside to cool briefly (5-7 minutes), then whisk in butter and set aside.
  • Preheat oven to 200C. Roll puff pastry to a rectangle about 40cm x 28cm and 3mm thick. Cut into 2 equal rectangles of about 20cm x 14cm. Prick all over with a fork, then place each piece of pastry between 2 sheets of baking paper then 2 oven trays and bake, turning trays halfway through cooking, until pastry is golden and crisp (25-35 minutes). If pastry cooks unevenly, remove top tray and continue baking and turning pastry until dry and crisp. (If you don't have enough trays, cook pastry sheets one at a time.)
  • Place a piece of pastry on a tray lined with baking paper. Spread with hazelnut spread, top with custard and spread to just short of the edges, then sandwich with remaining piece of pastry and refrigerate until custard is set and firm (4 hours or overnight).
  • For coffee-chocolate icing, stir 30gm icing sugar, cocoa and coffee in a bowl, adding more icing sugar or coffee as necessary until mixture is a thick spreading consistency. Set aside. Stir cream mixture with remaining icing sugar in another bowl, adding water if necessary until it's a thick spreading consistency. Spread white icing evenly over slice, then dot dark icing all over. Swirl a skewer through dark icing to create a pattern, then refrigerate until icing sets (1½-2 hours). Trim edges with a serrated knife and cut into slices. Slice will keep refrigerated in an airtight container for 1-2 days.
