THE INCREDIBLE, EDIBLE AMISH HAYSTACK DINNER
I just returned from a trip to an Amish community where this incredible dish was served as a fundraiser. Each woman is in charge of topping your haystack with whatever ingredients you choose as you move down the line. By the time you're done, your haystack is mile high! Easily adapted for family use. Sure to be a kid's favorite...

Steps:
- 1. Brown your ground beef and drain. Add spaghetti sauce and taco seasoning. Prepare noodles or rice as per package instructions. Keep beef and rice or noodles warm as you prepare veggies.
- 2. To serve: Each person gets a large bowl. Start with a base of tortilla chips, broken Ritz crackers or Fritos corn chips. Start your haystack with a pile of hot rice or hot noodles. Top with meat sauce. Then move on down the line forming a large mound or haystack with your chosen optional ingredients. Top with either warm, creamy cheese sauce or salsa, guacamole, additional shredded cheddar and sour cream. The height of your haystack is up to you! Enjoy!
HASHBROWN AND HAMBURGER HAYSTACK CASSEROLE #5FIX
5-Ingredient Fix Contest Entry. The first night I made this I was struggling with what to make for dinner knowing I had hamburger to work with. I was first going to use elbow macaroni and then remembered my package of Simply Potatoes Hashbrowns...I mixed it altogether and threw it in a baking dish. We had company that night and EVERYONE raved about it! TIP: It is even better if you toss in a bit of shredded cheddar cheese and diced onion before baking.

- In a large saute pan cook chorizo on medium heat for 5 minutes and add diced peppers and onions until translucent. Add hash browns and cook for 15 minutes on medium heat while turning occasionally to keep from sticking. Once potatoes have browned add cheese and cover with a lid. Remove from heat and let cheese melt.
LOADED POTATO SKIN SLIDERS
These mini burger sliders skip the bun in favor of something even better: loaded potato skins stuffed with Cheddar and bacon! Just bake the skins until hot and crispy, then flip them inside out to sandwich grilled beef patties. Topped with shredded lettuce, sliced tomato and a homemade special sauce, this take on the bacon cheeseburger is a hands-down winner.

- Prepare the loaded potato skins according to the package directions for the oven.
- Stir together the mayonnaise, mustard, ketchup, garlic powder, onion powder, smoked paprika, a pinch of salt and several grinds of black pepper in a small bowl until combined. Cover and refrigerate until ready to serve.
- Season the beef with 1 teaspoon salt and several grinds of black pepper, then divide into 12 equal-sized portions (about 1 1/2 ounces each). Shape each portion into a thin, oval-shaped patty about 3 1/2 inches long; the patties will shrink as they cook.
- Preheat a grill pan over medium-high heat and brush lightly with canola oil. Grill the patties until nicely charred and slightly pink on the inside for medium doneness, about 2 minutes per side.
- Put the patties on the cheesy side of 12 loaded potato skins, then top with 2 slices of tomato and some shredded lettuce. Spread the sauce on the stuffed side of the remaining 12 loaded potato skins, then sandwich together to create sliders.
