1/2 cup butter
2 slices ham, 1 inch thick
1 pineapple, skinned, sliced and diced
3 bananas, skinned and quartered
4 tablespoons honey or 1/3 cup brown sugar
6 eggs, beaten

Steps:

  • Chop ham slices into three pieces each. Melt the butter in large skillet. Add ham.
  • Fry until brown on both sides and remove from skillet. Keep warm on platter.
  • Put pineapple and bananas in skillet with the honey or brown sugar. Fry until they are barely soft, not mushy.
  • Remove fruit to the warm platter. Scramble the eggs in the skillet. Serve platter along with eggs so each guest gets a little of each item.

This amazing Hawaiian comfort food classic is made by topping rice with a fried burger, which is then smothered with a rich, brown gravy and finished with a fried egg. Seriously, how did it take until 1949 for someone to think of this combination? We all get hangry sometimes, so whether you're a broke student or an older professional who just wishes you were, this cheap, filling bowl of goodness is the perfect solution. Garnish with green onions.

2 (4 ounce) patties ground beef
1 pinch salt and freshly ground black pepper to taste
1 pinch cayenne pepper
1 ½ cups beef stock
4 teaspoons soy sauce
1 teaspoon Worcestershire sauce
2 drops sesame oil, or to taste
2 teaspoons ketchup
2 teaspoons white sugar
4 teaspoons cornstarch
2 teaspoons unsalted butter, divided
2 tablespoons minced green onions, white and light green parts only
2 eggs
2 cups hot cooked white rice

Steps:

  • Season patties with salt, pepper, and cayenne.
  • Whisk beef stock, soy sauce, Worcestershire sauce, sesame oil, ketchup, sugar, and cornstarch together in a bowl.
  • Melt butter in a skillet over medium-high heat. Cook patty in the hot skillet until a browned crust forms on the bottom, about 5 minutes. Flip; toss in green onions and cook the other side until both beef and onions are browned, 4 to 5 minutes more. Remove patty and most of the green onions to a plate.
  • Pour beef stock mixture into the skillet. Stir, scraping up browned bits from the bottom, until thickened, about 2 minutes. Reduce heat to low and reserve gravy until needed.
  • Melt remaining butter in another skillet over medium heat. Add eggs to the skillet and fry side-by-side until whites are set and yolks are still runny.
  • Divide rice between 2 serving bowls. Place patties over the rice, spoon gravy on top, and add the fried eggs.

3 cups uncooked long grain rice
10 tablespoons margarine or butter, divided
8 large eggs
1 can (12 ounces) lite SPAM, cut into 1/4-inch cubes
1/3 cup chopped onion
4 cups frozen mixed vegetables (about 16 ounces), thawed and drained
2 garlic cloves, minced
1/2 teaspoon pepper
1/3 cup soy sauce
Sliced green onions, optional

Steps:

  • Cook rice according to package directions. Meanwhile, in a Dutch oven, heat 1 tablespoon margarine over medium-high heat. Whisk eggs until blended; pour into pan. Mixture should set immediately at edge. As eggs set, push cooked portions toward center, letting uncooked portions flow underneath. When eggs are thickened and no liquid egg remains, remove to a cutting board and chop., In same pan, heat 1 tablespoon margarine over medium-high heat. Add Spam and onion; cook and stir until Spam is lightly browned, 6-8 minutes. Add mixed vegetables, garlic and pepper; cook until heated through. Stir in cooked rice, soy sauce and remaining 1/2 cup margarine; cook and stir until margarine is melted. Gently stir in eggs. If desired, top with sliced green onion.

10 fresh spinach leaves, julienned
1/2 teaspoon ground ginger
2 tablespoons olive oil
1/2 pound fully cooked ham, coarsely ground (about 2 cups)
4 water chestnuts, chopped
1/4 cup crushed pineapple, undrained
2 tablespoons chopped green onion
1 tablespoon soy sauce
7 egg roll wrappers
Canola oil for frying
Sweet-and-sour sauce

Steps:

  • In a large saucepan, saute spinach and ginger in olive oil for 1-2 minutes. In a large bowl, combine the ham, water chestnuts, pineapple, green onion and soy sauce. Stir in the spinach mixture. , Place 3 tablespoons ham mixture in the center of each egg roll wrapper. Fold bottom corner over filling; fold sides over filling toward center. Moisten remaining corner with water; roll up tightly to seal. , In an electric skillet, heat 1 in. of canola oil to 375°. Fry egg rolls until golden brown, about 2 minutes on each side. Drain on paper towels. Serve with sweet-sour sauce.

  • Prepare the beef patty first. Mix together the ground beef, minced onion, panko, and soy sauce. Divide into four portions and form 4 patties (make them flatter or more round, up to you!)
  • Pan fry the patties over medium heat until browned and cooked through, about 4-5 minutes. Remove the patties to a plate and set aside.
  • Next, make the gravy. Leave the leftover beef drippings/fat in the pan. Turn the heat down to medium and add the butter, minced onions, and saute for 2-3 minutes until onions start to brown.
  • Pour in the can of beef broth and add in the Worcestershire sauce. Pour in cornstarch slurry, mix and bring to a boil. The gravy is ready! Set aside.
