SLOW COOKER DINNERS: HAWAIIAN LUAU PULLED PORK TACOS

Slow Cooker Dinners: Hawaiian Luau Pulled Pork Tacos image

Provided by Chris Cockren

Time 8h15m

Number Of Ingredients 14

1 (2-3 pound) boneless pork shoulder
1 (13 ounce) package Campbell's Hawaiian Luau Slow Cooker Sauce
[Pineapple Habanero Salsa|https://sharedappetite.com/pineapple-habanero-salsa-2/]
Tangy Cabbage Slaw (recipe below)
Tortillas
Cilantro, chopped, for garnish
Queso Fresco, crumbled, for garnish
3 cups pre-packaged coleslaw mix (usually it's a combination of shredded cabbage and carrots)
1 bunch scallions, chopped
1/3 cup apple cider vinegar
1/4 cup extra virgin olive oil
2 tablespoons sugar
Kosher salt
Freshly ground pepper

Steps:

  • Place pork shoulder in slow cooker. Pour sauce over pork (no need to add water), cover, and cook on low for 7-8 hours. Remove pork to a medium bowl and shred using two forks. Return pulled pork to slow cooker and continue to cook on low for another 30 minutes to allow pork to soak up sauce.
  • Heat tortillas a bit so they are warm and pliable. You can do this in the oven wrapped in foil or in microwave (wrapped in a damp paper towel), or here's my favorite method: heat a cast iron skillet or other heavy-bottom nonstick skillet over medium-high heat. Cook tortilla on each side for about 30 seconds until tortillas puff and char a bit.
  • Top each tortilla with pulled pork, pineapple habanero salsa, tangy cabbage slaw, and a sprinkle of cilantro and queso fresco. Eat immediately.

Categories     Main Dish

Time 55m

Number Of Ingredients 13

3 Pounds boneless pork shoulder, sliced
¾ Cup chicken stock
1 ¼ Cup pineapple juice
⅓ Cup soy sauce
⅓ Cup ketchup
3 Tbsp tomato paste
4 Tbsp brown sugar
2 Garlic cloves, minced
1 Ginger knob, minced
1 Tsp paprika
1 ½ Cups pineapple, sliced
2 Tbsp cornstarch
1 Tbsp water

Steps:

  • Set the Instant Pot in the sauté setting and add 1 tablespoon of avocado oil. Add the pork. sauté for 4 minutes or until golden brown on the outside. This may be done in batches.
  • Add the chicken stock, the pineapple juice, soy sauce, ketchup, tomato paste, brown sugar, garlic, ginger and paprika.

  • Serve with the remaining sauce.

HAWAIIAN STYLE SLOW COOKER KALUA PORK

Hawaiian Style Slow Cooker Kalua Pork image

Hawaiian Style Slow Cooker Kalua Pork. Easy to prepare and no hands on cooking make this pork recipe a breeze to make and turns out perfect every time. Serve with sticky rice and sautéed baby bok choy or cabbage.

Provided by Shanna

Time 12h40m

Number Of Ingredients 4

1 4-6 pound pork shoulder or Boston butt roast*
1 Tablespoon liquid smoke, Hickory or Mesquite flavor
2-3 teaspoons red Hawaiian Sea salt ( 2-3 Tablespoons for a larger roast- over 6 pounds)***see notes
Banana leaves - optional (I personally don't use them in the slow cooker, but I do when we cook it in our smoker - see notes for smoking instructions)

Steps:

  • Rinse and pat the pork shoulder dry with paper towel, do not trim off excess fat and place in the slow cooker.
  • Pierce all over with a fork, pour the liquid smoke evenly over the roast and sprinkle liberally with the sea salt.
  • Place the lid of the slow cooker on and set the time for eight to twelve hours on LOW.
  • Check at about eight hours for doneness. If not done let go the full 12 hours, checking every hour.
  • If you have used banana leaves you can remove them before shredding the pork.
  • Remove around 2 cups of liquid (500ml) and set aside. This should be most of the cooking liquid removed. Shred the pork with forks and then add some of the liquid back in to keep the pork from drying out. You might not add all the liquid back in, save it for storing the pork if there are leftovers.
  • The pork should be kept warm-hot in the liquid before serving. You can place the banana leaves on a platter then serve the pork on top of them or use fresh banana leaves for serving. Do not eat the banana leaves.
  • The pork saves well kept in an airtight container in the refrigerator or freezer, keep some of the cooking liquid with it. Thaw in refrigerator if frozen. It can be reheated on low in the slow cooker.

Categories     Main Dishes

Time 3h30m

Number Of Ingredients 7

2.5-3 pounds boneless pork shoulder, cut into 3-4 large pieces
8-10 cloves garlic, sliced in half lengthwise
2 tablespoons olive oil
1 large banana leaf, thawed if frozen & cut into 3 smaller pieces (see Recipe Notes)
2 tablespoons Hawaiian sea salt (see Recipe Notes)
1 1/2 tablespoons liquid smoke, divided
2 cups water or chicken stock

Steps:

  • to 325 degrees F, ensuring a rack is positioned in the center of the oven.
  • Place the seared pork in the center of one of the pieces of banana leaf. Season with the Hawaiian sea salt & 1 tablespoon of the liquid smoke, using your hands to rub the salt & liquid smoke all over the surface of the pork. Arranged the seasoned pork in a small pile at the center of the banana leaf, folding the corners & edges of the banana leaf into the center to encase the pork. Carefully flip & set the wrapped pork seam side down on the second section of banana leaf. Repeat folding with the remaining pieces of banana leaf. Note: The banana leaf may split a little bit as you work, which is okay. Just work quickly & do your best to completely encase the pork in the banana leaf.

Hawaiian Pulled Pork Slow Cooker Recipe image

This Hawaiian Pulled Pork recipe is full of amazing flavor, thanks to a dry rub, a sweet and spicy marinade, and then long, slow cooking. It is a dish that is a labor of love - but the end results are so worth it!

Provided by Michelle Ordever

Categories     Recipes

Time P1DT30m

Number Of Ingredients 14

1.5kg/3.3lb pork shoulder
1 tbsp smoked paprika
1 tsp salt
1 tsp freshly ground black pepper
142g/5oz can tomato purée/paste
1-2 tbsp chilli sauce
435g/15oz can crushed pineapple in juice
4 tbsp light soy sauce
4 tbsp teriyaki marinade sauce
100g/3.5oz soft light brown sugar
2 garlic cloves, minced
1 tsp grated fresh ginger (approx 1" piece)
2 medium onions, peeled and slicked thickly
2 medium carrots, peeled and halved

Steps:

  • Carefully remove the layer of skin and fat that is on top of the pork shoulder using a sharp knife.
  • Sprinkle the pork with the paprika, salt, and black pepper, and rub in on all sides.
  • Place the pork into a bowl and add the tomato paste, chilli sauce, crushed pineapple and juice, light soy sauce, teriyaki sauce, sugar, garlic and ginger. Mix everything together well with your hands and leave to marinade for a minimum 2 hours. 12 hours, or overnight would be best!
  • When you are ready to cook the pork, (bearing in mind this takes a minimum of 8 hours in the slow cooker!), turn your slow cooker onto high and add the onion and carrot to support the pork. Add the pork and all the marinade. After 1 hour, turn the slow cooker down to low and leave for at least 8 hours. Up to 12-18 hours isn't going to hurt it!
  • When ready to serve, gently pull the pork into strips with a couple of forks.
  • Serve piled into soft bread rolls.

SLOW COOKER HAWAIIAN PULLED PORK

Slow Cooker Hawaiian Pulled Pork image

Slow Cooker Hawaiian Pulled Pork - Pork is slow cooked to perfection and has Hawaiian-inspired flavors from pineapple and teriyaki sauce! Sweet, tangy, tender, and juicy! It makes the best pulled pork sandwiches that everyone loves!

Provided by Averie Sunshine

Categories     Slow Cooker

Time 7h50m

Number Of Ingredients 7

16 ounces teriyaki sauce or marinade
1/2 cup brown sugar, packed (I use light)
20-ounce can canned pineapple rings in juice
1 medium red onion, diced
3 1/2 pounds boneless pork shoulder
10 brioche hamburger rolls, for serving (or your favorite rolls)
red cabbage, shredded; optional for garnishing

Steps:

  • To a large bowl, add the teriyaki, brown sugar, pineapple juice, onion, and stir to combine. Reserve the pineapple rings in the ridge.
  • To a 8-quart slow cooker, add the pork shoulder, and evenly drizzle the teriyaki mixture over the pork.
  • Cover the slow cooker with the lid, and slow cook on low for 7 to 8 hours, or until pork is done.* (See Notes)
  • Remove the pork, and using two forks, carefully pull the meat into shreds.
  • Optionally, at this point, you can place the pork under the broiler briefly in order to get some crispy bits.
  • Whether you're broiling it or not, then discard half the liquid from the slow cooker, and place the shredded pork back in the slow cooker, and toss it around so it absorbs the remaining juice; set aside.
  • To a dry skillet, add the reserved pineapple slices, and brown all of them on both sides, normally a couple minutes on each side is all it takes.
  • Slice your buns, place the pulled pork inside, top with a browned pineapple slice, optional red cabbage, and serve. Extra pulled pork will keep airtight in the fridge for up to 5 days or in the freezer for up to 3 months.

  • Place pork into the bottom of a large crock pot (I used a 6-quart) then season generously with garlic salt on all sides. Add can of chopped pineapple including the juices, 1/2 cup BBQ sauce, and sliced onion. Mix slightly then cover and cook on low for 7-9 hours, or until meat shreds easily. Shred then mix 2 cups pork with remaining 1/2 cup BBQ sauce (there will be extra pork - it freezes well!) Discard cooking liquid.
  • Meanwhile, preheat oven to 400 degrees then stack tortillas and cut them into quarters with a sharp knife. Place wedges onto two baking sheets leaving at least 1/4" between each wedge. Spray tops with nonstick spray or mist with extra virgin oil then season with salt. Bake, rotating pans halfway through, for 8-10 minutes or until golden brown around the edges. Chips will crisp as they cool. (Can be made ahead of time - cool completely then store in an airtight container.)
  • Layer half the chips into the bottom of a 12" oven-proof skillet then top with half the pork, cheese, pineapple, and chopped red onion. Repeat layers one more time then bake for 7-10 minutes, or until cheese is melted. Alternatively you could use a baking sheet instead of a skillet.
  • While nachos are baking, combine avocados, garlic, lime juice, and salt in a bowl. Smash with a potato smasher or fork until desired consistency is reached. Fold in cilantro and pineapple tidbits. Serve Pineapple Guacamole with nachos, along with extra BBQ sauce for dipping.
