HAWAIIAN LUAU RICE

Hawaiian Luau Rice image

Hawaiian Luau Rice is a little sweet, a little savory and little bit tropical and the perfect cure for the dog days of summer.

Provided by HWC Magazine

Categories     Sides

Time 25m

Number Of Ingredients 13

1 cups basmati rice (or 2 cups cooked leftover rice of choice)
1.5 cups water (skip this ingredient if you already have cooked rice.)
2 tbsp coconut oil ((your rice will really soak up the coconut oil quickly so use a non-stick pan))
1/2 cup onion (chopped)
1 tsp ginger (freshly grated ginger (or can substitute with 1/4 teaspoon dried ground))
2 cloves garlic (minced)
1/2 cup ham (sliced thinly ( I used deli ham but you can exchange with spam or fresh ham))
1/2 cup desiccated coconut (shredded (Can use fresh coconut shredded))
1 teaspoon chicken powder
1/4 tsp white pepper (or to taste)
1 cup pineapple (chopped fresh (can exchange with canned))
macadamia nuts - (toasted crushed garnish - optional)
2 tbsp green onions - 2 tablespoons (chopped for garnish - optional)

Steps:

  • The day or two before, wash your rice thoroughly. Add 1 cup of basmati rice and 1.5 cups of water to your pan and cover and simmer for 12 minutes. Remove from heat and allow to sit for 10 minutes. Fluff rice with fork. One cup of basmati rice when cooked will yield about 2 and 3/4 cup rice. Allow rice to completely cool and place in the refrigerator over night. (You can use other leftover rice as well like Jasmine or short grain rice.)
  • Toast your coconut in a non-stick skillet until in is toasty brown. Set aside.
  • Toast the macadamia nuts in a dry pan until toasty. Chop coarsely. Set aside. (optional)
  • Place your coconut oil, onions, garlic, ginger in the pan until aromatic. Add the ham and cook quickly until lightly golden.
  • Add your cooked basmati rice, chicken powder and white pepper and mix quickly in your pan until all of the rice is covered evenly with the coconut oil and seasoning. Add the pineapple, green onions and toasted coconut back into the pan and continue stirring quickly, just until warmed. Reserve a little toasted coconut and green onions on the side for garnishing.
  • Serve on plate and garnish with toasted crushed macademia nuts, toasted coconut and green onions. Enjoy!

CHICKEN LUAU BY KUANA TORRES

Chicken Luau by Kuana Torres image

We were very excited to kick off season 14 of Cooking Hawaiian Style with the multi-talented singer songwriter Kuana Torres. We had Kuana in our kitchen 7 seasons ago and thought it was about time to bring him back. His mana'o on Hawaiian culture and cuisine makes for an extra special episode. In addition to singing, Kuana spends much of his time online these days conducting hula work shops and lei making classes, this pandemic has not slowed him down one bit. Kuanaʻs Chicken Lūʻau recipe is definitely worth a try.

HAWAIIAN BARBECUE CHICKEN

Hawaiian Barbecue Chicken image

The sweet and spicy Hawaiian Barbeuce Chicken is packed with so many delicious flavors, and the homemade seasoning and sauce can be used on any cut of chicken (wings would be great for a party!)

Provided by Michelle Ordever

Categories     Chicken

Time 1h20m

Number Of Ingredients 18

½ cup brown sugar
¼ cup sweet paprika
2 Tbsp smoked paprika
1 Tbsp black pepper
1 Tbsp chili powder
1 Tbsp granulated garlic
1 Tbsp onion powder
1 Tbsp kosher salt
2 tsp ground cumin
1 cup pineapple juice, divided
½ cup brown sugar, packed
¼ cup ketchup
¼ cup soy sauce
¼ cup chicken broth
1 tsp ginger paste
1 tsp minced garlic
½ cup King's Hawaiian Big Island Lava Sauce
3-4 lbs (1.3-1.8 kg) boneless, skinless chicken breast

Steps:

  • To make the dry seasoning place all of the ingredients into a bowl and stir until well combined. Transfer to an airtight container and store in a cool, dry place.
  • Place your chicken in a large casserole dish and sprinkle with some of the dry seasoning - you can use as much or as little as you like. Make sure to flip the chicken over to coat both sides.
  • Pour a half-cup of pineapple juice over the chicken then cover and refrigerate for 30 minutes or in the fridge overnight if possible.
  • To make the sauce place the other half-cup of pineapple juice, brown sugar, ketchup, soy sauce, chicken broth, ginger, and garlic. and whisk together. Stir in the Lava BBQ Sauce. Divide into two lidded containers and keep in the refrigerator until needed. Use one of the sauces to baste during cooking, and the other to coat after cooking. This is to avoid cross-contamination.
  • When ready to cook, drain the chicken and discard the marinade.
  • Grill the chicken over medium heat for 12-14 minutes on each side or until cooked through, the juices run clear, and there is no pink in the middle. Cook for longer if required.
  • Baste the chicken occasionally with the sauce every 4 minutes.
  • Baste the chicken once removed from the heat before serving.

LUAU CHICKEN

Luau chicken image

This recipe was originally called "Chicken Delight" and came from my mother. I don't know where she got it from. I re-named it "Luau Chicken" for use at a Hawaiian themed party.

Provided by Stephanie Kraft

Categories     Chicken

Time 1h25m

Yield 4-6 serving(s)

Number Of Ingredients 4

3 -6 lbs chicken drummettes or 3 -6 lbs chicken wings (I prefer the drummetes -- You can also use a whole chicken cut up, with the skin removed)
1 (8 ounce) bottle milani 1890 French dressing
1 envelope onion soup mix
1 (16 ounce) can whole berry cranberry sauce

Steps:

  • Depending on how many people you have, you can increase or decrease this recipe very easily.
  • Put the drummettes or wings or chicken pieces in a baking dish.
  • Mix the dressing with packaged dry onion soup mix and can (s) of whole berry cranberries.
  • If you are making this for a few people, just use one bottle of dressing, one can of cranberries, and one envelope of onion soup mix.
  • Increase portions for more drummetes or wings.
  • Pour mix of dressing, cranberries and soup over the drummettes or wings, and bake at 350 for an hour and 15 minutes.

CHICKEN LUAU

Chicken Luau image

This modern version of a Hawaiian recipe combines chicken with spinach and coconut milk. A more traditional recipe for this dish would use taro leaves instead of spinach, and additional cooking time. You may also try making this recipe with two teaspoons fresh ginger, sliced, in place of the garlic, or in addition to the garlic. Taken from a Hawaiian tourist web site.

  • Grilled Pineapple Meatball Skewers. These delicious skewers take less than 20 minutes to prepare and cook. They’re so simple to make that even your kids can help if they enjoy cooking.
  • Fruit Kabobs. When I make finger foods for a party, I always try to find the ones that look the prettiest and take the least amount of effort to make.
  • Pineapple Upside Down Cupcakes. Making these tiny, beautiful cupcakes is so easy! Put a bit of brown sugar, some crushed pineapples, melted butter, and a cherry in a muffin tin.
  • Hawaiian Hot Dogs with Grilled Pineapple and Teriyaki Mayo. Even hot dogs taste better when they’re Hawaiian-style hot dogs. I’m not sure whose idea it was to pile pineapples, teriyaki mayo, peppers, and onions on top of hot dogs, but that person is a genius.
  • Aloha Burgers. It’s unbelievable how effortless it is to turn some foods from “regular” foods into “Hawaiian” recipes. Sometimes, it’s as simple as adding some teriyaki sauce and a slice of pineapple.
  • Spam Musubi. These tasty treats combine two unlikely things: Japanese rice balls (musubi) and Spam. Somehow, though, it works. The presentation is really what sells me on these.
  • Grilled Ham and Pineapple Kabobs. The secret to this recipe, too, is in the marinade. First, marinate your ham slices overnight in the ginger, brown sugar, fruit juice, and soy sauce mixture.
  • Hawaiian Salsa. I love colorful salsa! The more colors I can work into a salsa recipe, the happier with that recipe I’ll ultimately be. This one is one of my favorites, and I always serve it in the pineapple bowl as described.
  • Pineapple Cream Popsicles. Anything with the phrase “two-ingredient” in the title is something that I’m going to enjoy. These two-ingredient pineapple cream popsicles are no exception.
  • Bacon-Wrapped Pineapple Bites. If the thought of bacon-wrapped pineapple bites doesn’t make your mouth water a little, then I’m not sure what to think about you.

TRADITIONAL HAWAIIAN FOOD TO TRY - HAWAII TRAVEL WITH KIDS

  • Kalua Pork. When you think of traditional Hawaiian food, you are probably picturing a roasted pig. In Hawaii, whole pigs are wrapped in leaves and roasted in an underground oven called an imu.
  • Lomi Lomi Salmon. Another Hawaiian luau food item is Lomi Lomi Salmon. It’s basically finely chopped onion and tomato with bits of raw salmon and it’s a Hawaiian side dish.
  • Chicken Luau. Chicken Luau is a sweet and savory traditional Hawaiian dish that is usually made with beef, taro leaves, and coconut milk. It can also be made with squid instead of chicken.
  • Huli Huli Chicken. I’m pretty obsessed with Hawaiian barbecue. The flavors are a bit sweeter than traditional barbecue and I love it! It’s one of the most popular food in Hawaii.
  • Chicken Long Rice. Chicken Long Rice is one of my favorite Hawaiian comfort foods. It’s kind of like Chicken Noodle Soup, but with a focus on the noodles.
  • Manapua (aka Char Siu Bao) If you’ve ever had Chinese Dim Sum, you’ve probably seen those fluffy white buns filled with barbecue pork. Those are called Char Siu Bao and they are delicious.
  • Lau Lau. Another popular traditional Hawaiian food is Lau Lau. It’s pork and/or fish wrapped in taro leaves and ti leaves and then steamed for several hours.
  • Tripe Stew. This tomato-based stew is pretty popular in Hawaii. It’s made with tripe, which is the stomach lining of cows. It also has standard stew vegetables like carrots and potatoes but also has a bit of ginger.
  • Beef Stew. This is very similar to any beef stew you might find, except for subtle differences like soy sauce. The meat and veggies also are much larger chunks than you’d find in other places.
  • Poi. Poi is a traditional Hawaiian food that is basically cooked taro root that has been pounded into a paste and then fermented. It kind of has a sour taste if you just eat a spoonful of it.
