BBQ BACON HAWAIIAN PIZZA
A delicious twist on Hawaiian Pizza!

Steps:
- Preheat oven to 500 degrees (F).
- Lightly coat a round pizza pan with oil; set aside.
- Roll out the pizza dough to desired shape and size; place in prepared pizza pan. Brush the dough lightly with a little olive oil.
- Spread the BBQ sauce evenly in the center of the pizza dough, then top with cheese, pineapple, bacon, jalapenos, and red onion.
- Bake the pizza in the preheated oven for 16-18 minutes, or until the crust is golden and the cheese is bubbling. Let rest for 5 minutes, then slice and serve!
THE MAURO FAMILY BACON AND PINEAPPLE PAN PIZZA

- For the dough: Combine the water, yeast and sugar in a stand mixer fitted with the dough hook and let it bloom until bubbly, about 5 minutes. Add the flour, salt and 1 tablespoon corn oil and mix on medium-low for 5 minutes. Add the remaining tablespoon oil to a 12-inch cast-iron or heavy oven-safe skillet and paint it with a brush all over and up the sides. Place the dough in the center of the skillet and cover in plastic wrap. Let rise until doubled in size, for up to 2 hours.
- For the pizza: Preheat the oven to 400 degrees F. Line a sheet tray with parchment paper.
- Arrange the bacon slices on the lined sheet tray and bake until slightly crisp but still soft in the middle, 5 to 8 minutes. Let cool, then cut into 1-inch strips. Set aside until ready to use.
- Turn the oven up to 500 degrees F.
- Press the dough down lightly in the skillet until it reaches the edge. (If the dough is being temperamental and not stretching, cover with plastic wrap and let it chill out for 10 minutes to let the dough relax, then press it to the edge.) Ladle a layer of sauce on the dough and evenly spread to the edge. Now it's cheese-shingling time! Start around the edge, letting the cheese go up the inside wall of the skillet and then covering the middle so there is one even layer of cheese on the pizza. Top with an even sprinkling of pineapple and bacon.
- Bake the pizza until both the cheese crust around the edge is golden brown and the toppings are nicely charred and bubbling, 20 to 30 minutes. I like using a fish spatula to gently and carefully lift a portion of the crust to peek underneath and see if it is getting super golden brown. You may need to move the skillet to the top rack or bottom rack depending on whether the top or bottom crust chars first. Let the pizza cool for 10 minutes. Slice and serve!

You might have opinions as to whether pineapple and ham belong on a pizza, but you can't deny that they belong in this dip, which is filled with cheese and bacon. Serve it up with pizza scoops.

- Preheat oven to broil. Scoop the flesh from the pineapple halves, getting as close to the edge as possible. Discard the tough center and chop the fruit. You should have about 1 1/2 cups chopped pineapple.
- In a medium skillet, heat olive oil over medium heat. Cook onions until soft and translucent, about 3-5 minutes. Stir in diced canadian bacon and cook for another 2 minutes. Add chilis, cream cheese, sour cream, 1/2 cup shredded mozzarella and shredded cheddar cheese to the pan. Stir to melt completely. Stir in half of the bacon, 2 tablespoons chopped scallions and 1/2 cup chopped pineapple. Spoon into prepared pineapple halves and top with remaining 1/2 cup mozzarella cheese.
- Place pineapples on a baking sheet and broil until dip is bubbling and top is golden, about 5-8 minutes. Garnish with 2 tablespoons scallions, remaining chopped pineapple, remaining bacon and jalapeno slices.
- To make pizza chips, heat canola oil in a skillet to 350 degrees on a deep fry thermometer. Unroll pizza dough and cut into 2-inch pieces or triangles. Working in batches, fry dough until golden and crisp, about 2 minutes per side. Drain on a towel-lined plate. Serve on the side of dip.

SPICY HAWAIIAN BACON PIZZA

- Use a stand mixer with paddle attachment to combine the pizza crust mix, yeast, water, and oil. Blend on medium speed for 30 seconds or until well combined. Scrape the dough down into a ball. Drizzle a little olive oil over the top of the dough and roll the dough around until the ball is lightly coated with oil. Cover the bowl with plastic wrap and let rise for 1-2 hours or until doubled in size.
- Heat the oven to 475°F. Place a cast-iron pizza pan on a rack in the top third of the oven.
- Dust a piece of parchment paper or pizza peel with a generous amount of flour and/or cornmeal. Place 1/2 of the pizza dough on top. Use floured hands to gently pat the dough out into a 10-inch circle, taking care that the dough is not sticking to the pizza peel underneath (this is not as important with parchment). If the dough starts to stick, gently lift the dough with a bench scraper and add a little more flour underneath. Use the pizza peel handle to jiggle the dough in a circular motion to ensure that it is not sticking and able to slide around.
- Slide the pizza into the oven and par-bake for 7 minutes. If using a pizza peel, slide it directly onto the hot cast-iron pan. If using parchment, place the dough with the parchment on the pan, then remove the parchment paper after 3-4 minutes for a crisper crust, if desired.
- Remove the crust from the oven and top with pizza sauce, cheese, bacon, pineapple, red onion, and jalapeño. Bake for 7-8 more minutes.
- Remove and sprinkle with chopped cilantro if desired. Slice and serve immediately.
- Repeat steps to make second pizza.
