TRADITIONAL PISCO SOUR (PERUVIAN COCKTAIL)
My first taste of this wonder (and potent) National Drink of Peru was at meeting of the Peruvian Congress of Cardiology. At the banquet that terminated the convention, I was introduced to the Peruvian National Drink - the "Pisco Sour." This drink was so delicious, I had to have the recipe and was given the original recipe by my friend, Waldo Fernandez who had obtained it from the vineyard at Tabernero.

Steps:
- Beat the egg white and sugar in a blender.
- Add the Pisco, lime juice, ice and angostura bitters.
- Mix well and pour into whiskey sour glasses.

CORNMEAL HOT "CEREAL "(FUNCHE)
I ate this as a treat with my best friend After School. It is called Funche, a Puerto Rican polenta mush. It is Sooo Good,it's warm,creamy and a bit sweet.I Use Harina de maiz mas fina(A very fine cornmeal, Goya makes it)) so its smooth not grainy.I have been searching for quite sometime but in wrong places, not thinking it was like mush but sweet :o(. I found a similar version of this on elboriqua.com.I hope you enjoy it as much as I have. I also add sugar with the cornmeal so it dissolves, but that is a personal taste as to the amount of sweetness.

Steps:
- Bring milk, water ,salt(if using)and butter to a boil.
- Remove from heat and gradually add cornmeal,sugar to taste if using, continually stirring.
- Return pot to stovetop over medium- heat stirring until it thickens up.
- Serve in a bowl warm with added sugar or milk if desired as breakfast cereal or treat. You can add some fruit to make it een healthier.

- Combine the coconut and water in a medium pot. Bring to a boil.
- Add the brown sugar and stir. Cook on low heat until the sugar melts and the texture is thick and very sticky.
- Drop by tablespoons on a greased cookie sheet or on a cookie sheet covered with wax paper or parchment.
- Let the cookies cool down.

LEMON PASTEL / PASTEL DE LIMON
I have wonderful past-memories of living on Spain's Balearic Islands. Food-wise, this Ibiza custard is one of them ... (Cunejo Aioli is another if anyone cares to pass on the recipe?) NOTE: This wonderful desert separates into two distinct layers as it bakes. Mmmmm ! Fantastico!

Steps:
- Preheat oven to 325*F.
- Whisk sugar, lemon juice, eggs and eggs yolks in a large bowl until well-blended.
- Gradually whisk in the whipping cream.
- Strain through a sieve into 4x3/4 cup custard cups.
- Arrange cups in a baking pan and add enough hot water to come half-way up the sides of the custard cups.
- Bake, about 30 minutes, until custards are barely set in the centre.
- Remove cups from water and cool slightly.
- Cover, then refrigerate overnight.
- (This can be prepared 2 days ahead and kept refrigerated).
