Steps:
- Preheat the oven to 400 degrees F. Pierce the potatoes in a few places with a fork and microwave until almost tender, about 10 minutes, turning halfway through. Let cool slightly, then peel and cut into 1/2-inch dice.
- Heat the butter in a large cast-iron skillet over medium-high heat. Add the kielbasa and cook, stirring, until it starts to brown, about 3 minutes. Add the onion and caraway seeds and cook until the onion is soft, about 3 minutes.
- Stir in the potatoes, then flatten the hash into an even layer, pressing gently with a spatula. Cook undisturbed until crunchy and browned on the bottom, about 5 minutes. Flip the hash in sections and cook until browned on the other side, about 5 more minutes. Remove from the heat.
- Using a spoon, make 4 shallow indentations in the hash and crack 2 eggs into each. Transfer to the oven and bake until the egg whites set, about 10 minutes. Season with salt and pepper and top with the parsley and scallions.
HASH-BROWN EGGS

- Fry 1 cup each chopped onion and grated potato in a cast-iron skillet with butter until crisp. Add 1/2 cup grated cheddar and crack in 2 eggs. Bake at 425 degrees F until set; top with salsa.
ROAST BEEF HASH AND EGGS
Steps:
- Place the diced potatoes in a medium saucepan, add water to cover by 2 inches, plus the vinegar and 2 teaspoons salt. Bring to a boil, lower the heat, and simmer for 5 minutes. Drain and set aside.
- Meanwhile, heat a large (12-inch) saute pan over medium heat, add the bacon, and saute for 6 to 8 minutes, until lightly browned. Transfer the bacon to a plate using a slotted spoon. Put the potatoes in the saute pan and cook over medium to medium-high heat, tossing occasionally with a spatula, for 6 to 8 minutes, until the potatoes are lightly browned. If the pan is dry, add a few tablespoons olive oil. Add the bacon, onion, 2 teaspoons salt, and 1 teaspoon pepper, toss well, and cook over medium heat for 8 minutes, tossing occasionally. Add the beef, Brussels sprouts, and Sriracha, and cook for 3 to 4 minutes, tossing occasionally, until heated through and the sprouts are crisp-tender.
- Meanwhile, melt the butter in a medium (10-inch) saute pan. Carefully crack the eggs into the corners of the pan, sprinkle with salt and pepper, and cook over medium heat for 3 to 4 minutes, until the whites are almost cooked. Cover the pan and cook over low heat for one minute, until the whites are cooked but the yolks are still runny.
- Spoon a serving of hash and place a piece of toast on each of 4 dinner plates. Place an egg on top of each piece of toast. Sprinkle with chives and salt and serve hot.

- In a deep 12-in. cast-iron or other heavy skillet, melt butter. Add the potatoes, sausage, onion and green pepper. Cook, uncovered, over medium heat until potatoes are lightly browned, 15-20 minutes, turning once., Push potato mixture to the sides of pan. Pour eggs into center of pan. Cook and stir over medium heat until eggs are completely set. Season with salt and pepper. Reduce heat; stir eggs into potato mixture. Top with cheese; cover and cook until cheese is melted, 1-2 minutes.

- Place 1 Tbs. butter in a medium skillet and melt over med. heat.
- Add chopped green onion and garlic powder to butter and cook until onion is tender. Stir often to keep onion from burning.
- Once onion is softened, add the tater-tot crowns and cook until brown and crispy; turning occasionally. Crowns will start to break apart.
- While tater crowns are browning, add eggs to a large glass mixing bowl.
- Add the 2 Tbs. water to the eggs and scramble with a fork.
- In a large skillet, melt 1 Tbs. butter on medium heat.
- Pour the eggs into the large skillet and allow the bottom to start to set.
- Add salt and pepper to the egg and scramble.
- Cook eggs until they are nice and fluffy and set.
- Place a scoop of the tater-tot crown mixture on a plate and sprinkle with a little cheese, top the mixture with some of the fluffy eggs and another sprinkling of cheese.
- Top with sour cream, salsa or both if you so desire and enjoy!
- Note: When making scrambled eggs, you should never mix them with milk (unless your making French toast). Milk causes the eggs to weep and be less fluffy.

- In a medium sized bowl,scramble eggs until pale yellow in color and fluffy.
- Set eggs aside.
- In a medium sized skillet over medium heat add oil.
- When oil is hot but not smoking add onions.
- Saute' onions for 3 to 5 minutes,add potatoes,and sprinkle with salt and pepper.
- Cook potatoes until lightly browned.
- Add SPAM© and cook until meat has a slightly browned color.

HASH & SCRAMBLED EGGS
This recipe has evolved through several "pig out" camping trips. Three years ago my daughter, grandson and I were camping in Wisconsin. We cook a lot with cast iron dutch ovens over campfire. This stuff will provide 2 or 3 meals for a large family! Corned beef hash the first night, brunch the second day with the eggs, and sandwiches the 3third day. However, be mindful there may be some tummy or rear end inicidents after devouring the entire contents....LOL.

- Day 1-Cook beef according to instructiions on the package. Use the spice packet but cook at slightly lower heat but 1 1/2 to 2 times longer in a heavy dutch oven. About 5 to 6 hours.
- Brisket beef meat is done when the meat shreads easily from the fatty areas. Serve hot, as is with potatoes and/or a vegetable.
- Day 2-Potatoes into the same dutch oven with oil and vinegar. Cover potatoes with water and slow boil 5 minutes.
- Add Corned Beeef leftovers and all other ingredients. Slowly simmer at a "9 bubble simmer". (that's 8-10 bubbles on the surface).
- Once the potatoes are cooked, scoop a big circle in the center of hash to scramble eggs. Cook the eggs in the center gradually adding a little hash mixture in the eggs as they start to finish. Keep warm as you serve everyone a spoonfull of scrambled eggs and spoonful of hash. Or more if you want!
- Day 3-Fry up leftover hash and eggs for a really crispy patty, slap some mustard on bread and HAVE A DANDY SANDWICH.

- Heat the butter and olive oil in a large skillet over medium to medium-high heat. When the butter is melted, add the potatoes. Season well with salt, pepper, granulated garlic, and paprika. As you combine the seasonings with the potatoes, break them up into small pieces (if you used sliced potatoes). Let cook for 3-5 minutes.
- Add the peppers and onions. Combine with the potatoes and season lightly with all the same seasonings. Cook until the peppers and onions are soft and the potatoes are crispy, about 5 minutes. If at any time during the cooking time you feel that the pan is dry, add a little more olive oil and/or butter. The pan needs to be slick to avoid burning and it’s also needed for the eggs.
- While the potatoes are cooking, combine the eggs, milk, salt, and pepper, in a mixing bowl. Break the cheese up into the eggs and swirl around. Set aside.
- When the potatoes are crispy and the onions and peppers are soft, add the eggs and let it sit in the pan untouched for 1 minute. Keep the heat higher for the eggs. After a minute, immediately mix up the eggs and potatoes and continue to scramble them until cooked. The cheese should be melting right into the eggs. After another 2-3 minutes, when then eggs look cooked through, remove from the heat and serve with toast, if desired.
